Steps:
- In a small bowl, beat cream cheese and mayonnaise until smooth. Beat in cheeses and onions. Stir in pecans. Spread into a plastic wrap-lined 9-in. round dish. Refrigerate until set, about 1 hour., Invert onto a serving plate; spread with preserves. Serve with crackers.

JALAPENO CHEESE SPREAD
Good game day spread to serve with crackers or chips. Heat is easily adjusted by using more or less jalapenos.

Steps:
- Finely chop the onion and jalapeƱos in a food processor; add the cream cheese, lemon juice, and Worcestershire, process until well blended.
- In a medium bowl, combine the cheeses, pecans and paprika; stir until thoroughly blended; add the jalapeƱo mixture, mix well.
- Shape mixture on a serving plate, garnish with parsley.
- Serve with crackers or chips.

RASPBERRY JALAPENO JELLY
This has some serious heat, but we thoroughly enjoyed every bite. We served it with cream cheese and crackers, but can't wait to try it on grilled chicken!

- 1. In a large pan bring sugar and vinegar to a boil. Stir in diced peppers and red pepper flakes. Boil and stir for 5 minutes. Remove from heat. Stir in pectin and raspberries. place back on heat and bring back to a rolling boil. Boil and stir for 5 minutes.
- 2. Remove from heat and fill hot jars 1/4 inch from top. put on hot lid Hot water bath for 10 minutes.
RASPBERRY CHEESE BALL
A fruity cheese spread that goes well with crackers. Haven't tried it yet, but it sounds really interesting!

- Grate cheeses and mix in pecan pieces, green onions and enough mayonnaise to hold together and shape into a ball. Refrigerate until ready to use - then unmold on a tray and cover with raspberry preserves. Serve with crackers.

RASPBERRY CHEESE SPREAD
This is my easy appetizer that I make often during the holidays. Everyone loves it and requests the recipe. For over 30 years I only used raspberry preserves, then I recently tried it with the raspberry chipoltle sauce that I bought at Costco and it is now the only way I make it!

- 1. Mix the 1st 3 ingredients in a large bowl and stir until well blended.
- 2. Line an 8 inch springform pan or a bowl or a mold with plastic wrap with a long overhang for easy removal
- 3. Pat the mixture into your prepared pan. Cover the top with the overhang of plastic wrap and refrigerate for 24 hours for the best flavor.
- 4. Prior to serving, unmold the cheese spread onto a serving plate and pour the raspberry chipotle sauce on top. Serve with assorted crackers-my favorite is Triscuits.
RASPBERRY JALAPENO JAM
This is yummy poured over cream cheese and served with crackers.

- 1. Combine peppers, raspberries, sugar and vinegar in pot and bring to a boil, stirring occasionally.
- 2. Simmer 10 minutes
- 3. Wisk in pectin, bring to hard boil until thickens slightly (when spoon dipped in and is pulled out jam should drip in sheet rather than drops)
- 4. Remove from heat and sit for 10 minutes
- 5. Ladle into the 8 oz mason type jars (sterilized) and process in boiling water bath for 10 minutes to seal. If you do not like chunks, strain before putting in jars.

- Sterilize jelly jars and lids according to manufacturer's instructions.
- Remove seeds from green pepper and chilies Be very careful with chiles -- don't touch your eyes.
- Fit the steel knife blade into the bowl.
- Chop green pepper into 1/4-inch pieces.
- Measure 1/2 cup.
- Reserve rest for another purpose.
- Chop jalapenos into 1/4 inch pieces.
- Measure 1/4 cup for jelly.
- Place the Raspberries, 1/2 cup green pepper and 1/4 cup jalapenos, sugar and vinegar in a large saucepan.
- Bring to a boil.
- Continue to boil 1 minute.
- Remove from heat; let cool 5 minutes.
- Stir in pectin.
- Strain mixture through a fine strainer to remove pieces of peppers.
- Pour strained liquid into sterilized jars.
- Cover tightly and store in a cool place up to 6 months.
- Enjoy!
