6 cloves garlic, coarsely chopped
1 ancho chile, coarsely chopped
1 New Mexican chile, coarsely chopped
1 lime, zested and coarsely chopped
1 pound flank steak
Salt and freshly ground pepper
12 (6-inch) flour tortillas
1 pound white cheddar, coarsely grated
Grilled Onions, recipe follows
8 ounces blue cheese, crumbled
Ancho chile powder
Wild Mushroom Relish, recipe follows
Chopped cilantro
Roasted Red Pepper Sauce, recipe follows
Olive oil
2 red onions, peeled and thinly sliced
Salt and pepper
3 tablespoons olive oil
1 1/2 pounds mushrooms (cremini, shiitake, oyster) coarsely chopped
2 cloves garlic, finely chopped
1/2 cup dry white wine
2 tablespoons balsamic vinegar
1 tablespoon finely chopped fresh thyme
3 tablespoons finely chopped parsley
Salt and freshly ground pepper, to taste
2 red bell peppers, roasted, peeled, seeded and coarsely chopped
3 tablespoons chopped red onion
2 teaspoons chipotle puree
2 tablespoons fresh lime juice
2 tablespoons honey
3/4 cup olive oil
Salt and freshly ground pepper, to taste

Steps:

  • Combine oil, garlic, chiles, and lime zest in a large shallow baking dish. Add steak and turn to coat. Cover and refrigerate for at least 4 hours or overnight. Preheat grill or grill pan over high heat. Remove steak from marinade, season with salt and pepper and grill for 2 to 3 minutes on either side until golden brown and cooked to medium-rare doneness. Let rest 5 minutes and slice on the bias into 1/2 inch thick slices. Preheat oven to 425 degrees F.
  • Place 8 tortillas on a flat work surface. Top each tortilla with 2 ounces of the cheddar. Divide the onions and steak over the cheese. Crumble 1 ounce of the blue cheese on top of the steak. Stack the tortillas to make 4 (2-layer) quesadillas and top each with the remaining tortillas. Brush the tops with olive oil and sprinkle with about 1/2 teaspoon of ancho chile powder. Carefully transfer the quesadillas to a baking sheet and bake in the oven until golden brown and the cheese has melted, about 5 to 7 minutes. Serve each with a large dollop of the Mushroom Relish on top and garnish with chopped cilantro and Roasted Red Pepper Sauce.
  • For the grilled onions: Heat oil in a large saute pan over medium heat. Add the onions, season with salt and pepper and cook until soft and caramelized, about 25 to 30 minutes. For the wild mushroom relish: Heat oil in a large saute pan over high heat. Add the mushrooms and cook until golden brown. Add the garlic and cook for 1 minute. Add the wine and cook until completely reduced. Stir in the vinegar, thyme and parsley and season with salt and pepper, to taste.
  • Place peppers, onion, chipotle, lime juice and honey in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified. Season with salt and pepper, to taste.

Goat Cheese-Stuffed Turkey Burgers with Roasted Red Pepper Relish image

1 1/2 pounds lean ground turkey
6 tablespoons fresh breadcrumbs
3 tablespoons fresh lemon juice
2 teaspoons grated lemon peel
2 teaspoons dried thyme
1 1/8 teaspoon salt
1/2 teaspoon ground black pepper
6 tablespoons soft fresh goat cheese (such as Montrachet)
6 whole wheat, hamburger buns
3 tablespoons olive oil
4 7-ounce jars roasted sweet red peppers, rinsed, drained, patted dry, chopped
1 1/2 cups chopped onions
3 teaspoons finely chopped garlic
4 1/2 tablespoons cider vinegar
3 tablespoons sugar
1/4 teaspoon dry mustard
1/4 teaspoon cayenne pepper

Steps:

  • For Burgers:
  • Combine turkey, breadcrumbs, lemon juice, lemon peel, thyme, salt and pepper in large bowl. Mix well. Divide turkey mixture into 6 equal portions. Form 1 portion into two 4-inch diameter patties. Place 1 tablespoon goat cheese atop 1 turkey patty; place second patty atop cheese. Seal patties at edges to enclose cheese. Repeat with remaining 5 portions. (Can be prepared 4 hours ahead. Cover and refrigerate.)
  • Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Grill hamburger buns, cut side down, until lightly toasted, about 1 minute. Place turkey burgers on bottom half of buns. Top burgers with Roasted Red Pepper Relish, then bun tops and serve.
  • For Relish:
  • Heat oil in heavy large skillet over medium-high heat. Add red peppers and sauté 2 minutes. Add onions and garlic. Cook until onions are tender, stirring frequently, about 5 minutes.
  • Mix vinegar and sugar in small bowl until sugar dissolves. Stir vinegar mixture into red peppers. Mix in mustard and cayenne pepper. Season with salt. Continue cooking relish until all liquid has evaporated, stirring frequently, about 6 minutes. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.) Makes about 2 cups.

1 cup sugar
2 scallions, finely chopped
1 teaspoon finely grated orange zest

1 teaspoon finely grated lime zest
Kosher salt
2 tablespoons finely chopped fresh cilantro
Crackers or toasted bread, for serving

Steps:

  • For the cranberry relish: Pulse the jalapeno in a food processor until finely chopped. Add the cranberries; pulse until finely chopped (but not ground). Transfer to a bowl and stir in the sugar, scallions, orange zest and 1/4 teaspoon salt. Cover and refrigerate for at least 2 hours or overnight.
  • For the cream cheese log: In a large bowl, beat the cream cheese, shredded cheese, lime zest and 1/4 teaspoon salt with a wooden spoon or spatula until well blended. Mix in the cilantro. Spoon onto a large piece of plastic wrap and form into an even 1-inch-diameter log. Refrigerate until firm, at least 2 hours or overnight.
  • Right before serving, unwrap the log and transfer it to a serving plate. Drain the cranberry mixture well, then carefully spoon a thick layer of it onto the cheese log, pressing all over to cover. Clean any spills from the serving plate and serve immediately with crackers or toasted bread.

6 blue corn tortillas, cut into strips
6 flour tortillas, cut into quarters
1 tablespoon kosher salt
3 tablespoons ancho chili powder
2 tablespoons light brown sugar
1 tablespoon pasilla chili powder
1 tablespoon kosher salt
2 teaspoons allspice
2 teaspoons chile de arbol
2 teaspoons ground cinnamon
Freshly ground black pepper
2 tablespoons canola oil
1 1/2 pounds pork tenderloin, split in half
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 to 2 1/2 cups whole milk, heated
12 ounces Monterey Jack cheese, grated
1/2 cup grated Parmigiano-Reggiano
Kosher salt and freshly ground black pepper
Pinch chile de arbol
2 ripe Hass avocados, diced
2 ears corn, roasted in husks and grilled, kernels removed
1 Charred Jalapeno, seeded and finely diced, recipe follows
Juice of 1 lime
1/2 small red onion, finely diced
Splash olive oil
Salt and freshly ground black pepper
1/4 cup chopped fresh cilantro, for garnish
6 jalapenos
2 teaspoons canola oil
Kosher salt and freshly ground black pepper
Pickled red onions, for garnish
4 ounces soft goat cheese, cut into small pieces
Fresh cilantro leaves, for garnish

Steps:

  • For the tortilla chips: Heat oil in a deep fryer to 340 to 350 degrees F. Fry the tortillas, in batches, until firm. Drain on paper towels and season immediately with salt. For the new mexican rubbed pork tenderloin: Combine the ancho chili powder, sugar, pasilla chili powder, salt, allspice, chile de arbol, cinnamon and some black pepper in a small bowl. Heat the oil in a medium saute pan over high heat. Sprinkle the pork with salt on both sides, and then dredge in the spice rub, tapping off any excess. Sear the pork on all sides until golden brown, and then continue cooking to medium doneness or when an instant-read thermometer inserted into the center registers 135 to 140 degrees F, 8 to 10 minutes. Transfer to a cutting board and let rest 10 minutes before thinly slicing. For the mornay sauce: Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook 1 minute. Slowly whisk in 2 cups of the warm milk, bring to a boil and continue whisking until the sauce thickens and the flour taste has been cooked out, about 5 minutes. Remove from the heat and slowly whisk in the Monterey Jack a handful at a time. Continue whisking until smooth, adding more milk if too thick. Whisk in the Parmigiano-Reggiano and season with salt, black pepper and chile de arbol. Set aside. For the avocado-corn relish: Combine the avocado, corn, jalapeno, lime juice, onions and olive oil in a bowl. Season with salt and black pepper, and fold in the cilantro. For the charred jalapenos: Toss the jalapenos with the oil and sprinkle with salt and black pepper. Char in a cast-iron pan over high heat or on a baking sheet in a 400 degrees F oven until the skin is charred on both sides. Let cool before slicing. For assembly: Arrange the tortilla chips on a large platter in a single layer. Top each chip with a heaping teaspoon of the avocado-corn relish, a slice of pork and some of the Mornay sauce. Garnish with the sliced charred jalapenos, pickled red onions, a dollop of the goat cheese and cilantro leaves.

BLACKENED SNAPPER, RED PEPPER SAUCE, CHEESE GRITS AND CORN RELISH



Blackened Snapper, Red Pepper Sauce, Cheese Grits and Corn Relish image

1/2 cup kernels corn, roasted fresh
2 tablespoons thinly sliced green onion
2 tablespoons small dice yellow onion
2 tablespoons red wine vinegar
1 ounce vegetable juice, such as V8
Salt and pepper
2 cups chicken stock
1 tablespoon kosher salt
1 teaspoon white pepper
3/4 cup grits
1/2 cup cheese, blended, such as Cheddar and Gruyere
2 tablespoons diced yellow onion
1 tablespoon grapeseed oil
1/4 cup apple juice
1 cup roasted red pepper puree
Four 6-ounce red snapper fillets, skin on
1 tablespoon blackening seasoning
1 tablespoon grapeseed oil

Steps:

  • For the relish: In a bowl, blend the corn, green onions, yellow onions, vinegar, vegetable juice and some salt and pepper, mixing well. Hold in the refrigerator for 30 minutes to 1 hour to marinate.
  • For the grits: Warm the chicken stock in a deep saucepan over medium-high heat. Bring stock to a simmer, then add the salt and pepper. Reduce the heat to medium. Next slowly add the grits. Whisking continuously, cook until thickened, 10 to 12 minutes. Once cooked, taste and season with salt and pepper. Then hold warm for serving.
  • For the sauce: Heat a pan with the grapseed oil. Then add the onions and cook until caramelized, 3 minutes. After cooking the onions, reduce the heat to medium-low and add the apple juice. Allow the juice to reduce for 1 minute, then add the pepper puree. Stir to incorporate the flavors and simmer for 5 minutes, then remove from the heat.
  • For the fish: Heat a heavy-bottom pan over high heat. Add the grapeseed oil and warm for 2 minutes. Then sprinkle the skin-side of the fish with the blackening seasoning and sear on the skin side for 3 minutes. After "blackening" the skin side, flip, reduce the heat and cook for another 3 minutes on the fleshy side. When fully cooked, scoop 2 ounces of the sauce on a plate followed by some grits. Top with the cooked fish. Finally top a corner of the fish with some relish.

FRIED GREEN TOMATO SLIDERS WITH GOAT CHEESE MAYO AND TOMATILLO-BACON RELISH



Fried Green Tomato Sliders with Goat Cheese Mayo and Tomatillo-Bacon Relish image

6 tomatillos, scrubbed and finely diced
1/4 cup finely diced red onion
Juice of 1 lime
2 tablespoons finely chopped fresh cilantro or parsley
2 tablespoons canola oil
4 strips bacon, cooked until crisp, finely diced
1/2 cup mayonnaise
1/4 cup soft goat cheese
Freshly ground black pepper
4 medium green tomatoes, sliced 1/2-inch thick
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
3 large eggs, whisked
2 cups yellow cornmeal
Few dashes hot sauce
Canola oil, for frying
12 soft mini buns, such as Martin's, split and lightly toasted

Steps:

  • For the relish: Combine the tomatillos, onions, lime juice, cilantro and oil in a bowl. Let sit at room temperature for 30 minutes. Stir in the bacon just before serving.
  • For the mayo: Whisk the mayonnaise and goat cheese together in a bowl until well combined. Season with pepper.
  • For the fried green tomatoes: Set a cooling rack over a baking sheet. Season the green tomatoes on both sides with salt and pepper. Put the flour, eggs and cornmeal in separate shallow dishes. Season all three with salt and pepper, and the eggs with the hot sauce.
  • Heat a few inches of oil in a cast-iron skillet over medium heat until beginning to shimmer (drop in a few grains of cornmeal -- they should sizzle) or a deep-frying thermometer registers 350 degrees F. Dredge the green tomatoes in the flour, tap off the excess, then dip in the egg wash. Let the excess drip off, then dredge in the cornmeal.
  • Fry the green tomatoes in batches until golden brown on both sides, 1 to 2 minutes per side. Drain on the prepared rack and season with a bit more salt.
  • Spread a teaspoon of goat cheese mayo on the top and bottom buns. Place a fried green tomato on the bottom buns, top with relish and serve.

  • For fish:
  • Sprinkle fish on both sides with salt and freshly ground pepper. Heat oil in heavy large skillet over medium-high heat. Place fish, skin side down, in skillet. Cook until skin is brown, occasionally flattening with spatula to prevent curling, about 4 minutes. Turn fish over. Cook until just opaque in center, about 1 minute.
  • Using slotted spoon, mound relish on plates. Top with fish, skin side up. Arrange hush puppies alongside and serve.

Goat Cheese and Red Onion Frittata Sandwich Crunchified with Pepper Relish image

Eight 1/4-inch slices pancetta
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 medium red onion, halved and thinly sliced
1 clove garlic, finely chopped
8 large eggs
4 ounces goat cheese, cut into small pieces
2 tablespoons chopped fresh herbs, such as parsley or basil
2 tablespoons hot pepper relish, such as B&G
4 ciabatta rolls, halved horizontally and lightly toasted
4 ounces baby arugula or watercress

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the pancetta on a baking sheet, leaving a few inches of space between slices, and sprinkle with pepper. Bake until crispy, 10 to 15 minutes. Let cool.
  • Preheat the broiler. Heat the oil in an 8-inch nonstick pan over medium-high heat. Add the onions and cook until soft, about 5 minutes. Add the garlic and cook 30 seconds longer. Season with salt and pepper.
  • Whisk the eggs in a large bowl until light and fluffy. Whisk in the goat cheese and herbs. Add the egg mixture to the pan with the onions and garlic, and stir just until soft curds begin to form. Sprinkle with some salt. Transfer the pan to the broiler. Broil until the frittata is lightly golden brown and just set, 3 to 5 minutes. Invert onto a platter and let cool slightly or to room temperature, then cut into 4 pieces to fit the rolls.
  • Spread some hot pepper relish on the bottoms of the rolls. Top with a piece of frittata, 2 slices of pancetta, some arugula, and the roll tops.

Juice of 2 limes
2 tablespoons canola oil
2 teaspoons honey

1/4 cup finely chopped fresh cilantro
8 jalapeno chiles
Canola oil, for brushing

Steps:

  • For the chicken and marinade: Place the chicken thighs in a bowl. Whisk together the lime juice, olive oil, ancho chili powder, Worcestershire sauce, cumin, garlic and black pepper in a small bowl and pour over the chicken. Cover the chicken and refrigerate overnight.
  • For the chipotle honey sauce: Whisk together the honey, canola oil, ancho chile powder, chipotles, mustard, ground coriander, ground cumin and Spanish paprika. Season with salt and pepper and set aside.
  • Preheat the grill to medium-high heat. Sprinkle the chicken well with salt and pepper and place the chicken thighs on the grill at a 45-degree angle to establish good grill marks. Once the chicken easily releases from the grill, turn it over to continue cooking. Start brushing the thighs with the chipotle honey sauce every few minutes. Once the internal temperature reaches 165 degrees F, or its juices run clear, about 8 minutes. Remove the chicken from the grill. Let the chicken rest for 5 to 10 minutes before serving. Slice the chicken.
  • Layer the tortilla chips, top with sauce, chicken, relish and jalapenos.
  • Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in 2 cups of the warm milk, increase the heat, bring to a boil and continue whisking until the sauce thickens and the flour taste has been cooked out, about 5 minutes.
  • Remove the sauce from the heat and slowly whisk in the cheese a handful at a time. Continue whisking until smooth. Season with salt and pepper and nutmeg. Set aside.
  • Combine the avocados, serrano, onions, lime juice, oil, honey and salt and pepper to taste in a medium bowl. Fold in the cilantro until combined.
  • Brush the jalapenos with oil and season with salt and pepper. Grill until charred all over, about 6 minutes.

4 3/4-inch-thick slices pain rustique or ciabatta, cut into 3/4-inch cubes (about 4 generous cups)
Salad:
1 tablespoon extra-virgin olive oil
1 tablespoon Sherry wine vinegar
1/4 cup finely chopped shallots
4 cups (lightly packed) arugula leaves
4 cups (lightly packed) torn baby frisée
Fleur de sel or coarse kosher salt
Eggs:
1 tablespoon extra-virgin olive oil
4 large eggs
4 ounces very thinly sliced Manchego cheese*
4 very thin slices Serrano ham or prosciutto

Steps:

  • For relish:
  • Combine all ingredients in small bowl. DO AHEAD: Relish can be made 1 day ahead. Cover and refrigerate.
  • For migas:
  • Preheat oven to 375°F. Stir olive oil and garlic in large bowl. Add bread cubes and toss to coat well. Transfer bread to heavy large baking sheet and bake until lightly toasted yet still chewy, about 10 minutes. Cool.
  • For salad:
  • Whisk olive oil, vinegar, and shallots in large bowl. Add arugula, frisée, and migas; toss well. Season lightly with fleur de sel. Divide salad among 4 plates.
  • For eggs:
  • Heat olive oil in large nonstick skillet over medium heat. Add eggs; immediately cover top of each egg with cheese, dividing evenly. Cover and cook until egg whites are just set and cheese softens, about 2 minutes. Carefully transfer 1 egg to each plate; top with ham and season with pepper. Top each egg with relish, dividing evenly.

4 kaiser rolls, split (or hamburger buns)
2 -3 tablespoons soft fresh goat cheese (or chevre)

Steps:

  • To make the burgers:.
  • Combine the ground lamb, shallot, capers, basil and pepper in a large bowl and mix well. Divide mixture into four burgers. Spread cornmeal(or flour) over a plate and press burgers into the mixture to coat. Preheata barbeque(or broiler) and brush with oil. Cook the burgers over a medium high heat for 6-7 minutes each side or until cooked as desired.
  • To make the relish:.
  • Place the tomatoes and onion into a preheated saute pan with the olive oil. Cook for 5 minutes. Add sugar, vinegar, salt and pepper. Remove from the heat and let cool. Grill the buns(or broil), cut side down, until lightly toasted. Spread with goat cheese and top with the burgers. Serve with the tomato relish. Enjoy!

1 cauliflower - you need 350g/12oz
100 g/ 4 oz plain flour
4 eggs , beaten
100 g/ 4 oz feta cheese , roughly crumbled into small chunks
125g ball mozzarella , torn into small pieces
zest 1 lemon , plus wedges to serve
small bunch flat-leaf parsley , roughly chopped
olive oil , for frying
1 onion , chopped
2 red peppers , chopped
small chunk ginger , finely grated
2 garlic cloves , crushed
1 red chilli , chopped (leave the seeds in)
1 tbsp olive oil
2 tsp yellow mustard seed
250 g/ 9 oz tomatoes , roughly chopped if large, left whole if cherry
50 g/ 2 oz soft light brown sugar
50 ml/ 2 fl oz red wine vinegar
2 tbsp sultana

Steps:

  • For the relish, soften the onion, peppers, ginger, garlic and chilli in the oil in a large saucepan. Once softened, add the mustard seeds, tomatoes, sugar and vinegar. Cover and simmer for 30 mins, then uncover and simmer for 10 mins more until soft and sticky rather than too saucy. Turn off the heat and stir in the sultanas. This relish will keep in the fridge for up to 3 days, or freeze for up to a month.
  • Boil a large saucepan of water. Quarter the cauliflower and cut away most of the central large stalk. Weigh 350g cauliflower for the recipe and put the rest in the fridge to use another time. Very roughly chop the cauliflower - you should end up with a mix of small florets and some finer bits. Once the water is boiling, add all the cauliflower, cover and cook for 3 mins exactly. Immediately drain, then tip everything back into the saucepan and put back over a low heat, to dry out for a few mins.
  • Put the flour into a large bowl with plenty of seasoning and gradually whisk in the eggs to make a smooth batter. Stir in the cheeses, lemon zest and most of the parsley, then gently stir in all of the cauliflower.
  • Pop your oven on low so you can keep the fritters warm while you cook in batches. Place an old sturdy oven tray (anything flimsy might buckle) or a sturdy frying pan or griddle straight onto the barbecue. Wipe with some olive oil, then spoon on some mixture to make roughly 10-12cm round fritters. Fry for 3-5 mins until golden underneath and the batter just looks set on the top, then use a fish slice to flip the fritters over and press down with the back of the slice to squash any big cauliflower bits and flatten the bottoms a bit. Cook again for 3-5 mins until golden, then transfer to a parchment-lined tray and keep warm in the oven while you cook the rest.
  • To serve, warm up the relish slightly, scatter the fritters with remaining parsley and add some lemon wedges.

Cheese-and-Broccoli-Stuffed Pork Roulade with Grilled Tomato Relish image

2 tablespoons olive oil, plus more for brushing
1 1/2 cups broccoli florets, cut into 1-inch chunks (about 7 ounces)
2 cloves garlic, sliced
Kosher salt
One 7.5-ounce bag Sargento Chef Blends Shredded 4 State Cheddar (about 2 cups)
2 pork tenderloins, trimmed (2 to 2 1/2 pounds total)
Freshly ground black pepper
1 medium red onion, sliced into 1/2-inch-thick rounds
2 cups cherry tomatoes
1/2 cup fresh parsley leaves, chopped
2 teaspoons sherry vinegar

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the broccoli, garlic and 1/4 teaspoon salt, and cook, stirring, until the broccoli begins to brown in spots, 3 to 4 minutes. Add 1 cup water, and continue to cook until the water evaporates and the broccoli is tender, 3 to 4 minutes more. Transfer to a bowl, stir in the Cheddar and reserve.
  • Butterfly the tenderloins by making a 1-inch-deep incision down the length of each without cutting all the way through. Open the tenderloins like books so they lie flat, cover with plastic wrap and pound with the flat side of a meat mallet until they're about 1/4 inch thick. Sprinkle with salt and pepper. Spread the broccoli mixture over the 2 tenderloins, leaving a 1-inch border around all the sides except the long one closest to you. Tightly roll up each tenderloin, tucking the narrow ends inside as you roll. Tie each roulade with butcher's twine tightly (without piercing the meat) on each end and at 2-inch intervals in between. Brush with oil, and sprinkle with salt and pepper.
  • Prepare an outdoor grill for medium-high heat, leaving 1 burner off for indirect heat (to finish the roulades). Oil the grill grates. Grill the roulades over direct heat, turning, until the outside is well marked, about 12 minutes. Move them to indirect heat, cover and cook until a thermometer inserted in the center of each roulade registers 145 degrees F, about 15 minutes more. Transfer them to a cutting board to rest 10 minutes.
  • While the roulades are cooking, make the relish: Lay an onion slice on a cutting board. Place the palm of 1 hand on top of the slice, and with the other hand push a metal skewer through the slice crosswise until it comes out the other side. Repeat with the other slices, leaving an inch of skewer uncovered on each end and using as many skewers as necessary. Thread the tomatoes on the skewers. Brush the onions and tomatoes with oil. Grill, turning, until the tomatoes are charred and bursting and the onion slices are tender with brown edges, 6 to 7 minutes. Remove the tomatoes and onions from the skewers, and chop. Mix with the parsley, vinegar, 1 teaspoon salt and a few grinds of pepper in a medium bowl.
  • Cut the strings off the roulades with scissors, and slice the roulades on the bias. Serve with the relish.

3 tablespoons capers, chopped
3 tablespoons minced peperoncini
3 tablespoons butter, room temperature
3 ounces Teleme or Fontina cheese, grated (about 1 cup)
1 cup thinly sliced iceberg lettuce

Steps:

  • Whisk first 4 ingredients in small bowl; season dressing with salt and pepper.
  • Cut top crust (about 1/3 inch) off bread and discard. Cut bread horizontally in half. Arrange provolone cheese on cut side of bottom half, covering completely. Top with layer of salami, then ham. Mix olives, capers, and peperoncini in small bowl; spread relish over ham. Press top half of bread, cut side down, atop relish; spread with 1 1/2 tablespoons butter.
  • Heat heavy large skillet over medium heat 3 minutes. Place sandwich, buttered side down, in skillet. Using another skillet, press sandwich to compact slightly. Cook until golden, about 5 minutes. Spread top of sandwich with remaining 1 1/2 tablespoons butter. Using large spatula, turn sandwich over. Press again with second skillet. Cook until bottom is golden and cheese melts, about 5 minutes.
  • Transfer sandwich to work surface. Lift off bread top; sprinkle with Teleme cheese, lettuce, and dressing. Press bread top onto sandwich and cut into quarters.

2/3 cup Simply Potatoes Traditional Mashed Potatoes
1 tablespoon all-purpose flour
1 egg
1 large green onion, chopped into small pieces
1 teaspoon baking powder
1 tablespoon light sour cream
3 tablespoons milk (or more if needed)
1 large red bell pepper (or used jar of roasted red bell pepper)
2 ounces soft fresh goat cheese
1/3 cup light sour cream
1/2 tablespoon lemon juice
salt, to taste
dill sprigs (for garnish)

Steps:

  • Turn the oven to 375 degrees. Lightly oil your bell pepper on all sides. I like to cut mine in half and put them on foil lined baking sheet, cut side down. Bake until skin is blackened and loose. Allow pepper to cool and peel skin. Chop into very small pieces (like pickle relish).
  • Whip the soft goat cheese, sour cream and lemon juice in a smooth consistency. Add salt to taste. Set in the refrigerator.
  • Heat a nonstick griddle or pan to medium heat. Mix the Simply Potatoes mashed potatoes, flour, egg, baking powder, and sour cream to a smooth consistency. Add enough milk to make a pancake like batter. Mix in the green onions. (No need to salt the batter as Simply Potatoes is already seasoned unless you wish to.) Spoon one tablespoon of batter onto pan, as many as you can handle at one time. When bubbles form then pop, flip the pancake. Cook each side to golden brown.
  • To plate your blinis, top with a dollop of goat cheese cream and a small amount of roasted red pepper relish and a sprig of dill. Enjoy!

DILL PICKLE RELISH CHEESE MUFFINS

I found this recipe in a book, and then altered it to my own taste. I like it with the dill pickle relish, but my hubby doesn't. He would be perfectly happy with just the cheese in these, but you can also use sweet relish if you prefer. Also, you can make these in mini-muffins, but they are so good it is just as fun to double the...

1 1/2 c bisquick (or maybe corn bread mix?)
1/4 tsp garlic powder
3/4 c grated cheddar cheese (i used a little less as i ran out of cheese)
1/4 tsp onion powder
several grinds of pink sea salt with garlic
1 Tbsp sugar
1/4 tsp dry mustard
2 Tbsp 2% milk
1 large egg, beaten
1/4 c relish (dill pickle relish)

Steps:

  • 1. Mix these muffins by hand. To double, like I did, only use 1 egg. But if you are going to omit the relish, try adding a second egg to make up for the difference.
  • 2. Put cheese on top of bisquick in a bowl. Sprinkle seasonings on top, and mix to blend. Put liquid ingredients together separately, then pour into the bisquick mix and mix just until blended. Put into the silicone muffin cups (or you could use paper muffin cups in a muffin tin, but the silicone makes them just pop right out very easily so that is how I make them). Bake at 350 degrees 20-25 min, but check after about 18 min.
  • 3. If you want to use mini muffin pans, bake about 12 min, but could take longer.
  • 4. I really like these warm, split in half from top to bottom, and then with a tad bit of butter on each piece.
  • 5. I was thinking this would be good in corn bread mix, instead of using the bisquick!
