This is my favorite recipe, learned from my mother. People love it and ask me for the recipe every time they try it, so here it is. I find it tastes better cold.

1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
6 eggs
1 (8 ounce) package cream cheese, softened
⅓ cup 2% milk
1 teaspoon vanilla extract
1 cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large oven-safe pot with water to 1 inch; bring to a boil.
  • Place sweetened condensed milk, evaporated milk, eggs, cream cheese, milk, and vanilla extract in a blender; blend until smooth.
  • Place sugar in an even layer in a saucepan over medium heat. Cook until edges start to brown, about 1 minute; drag sugar into the center with a spatula once the edges start to brown. Continue cooking, stirring from time to time, until caramel is an even golden brown, 4 to 5 minutes.
  • Pour caramel into a 9-inch flan mold or baking pan; swirl so that caramel reaches 1 inch up the sides. Pour condensed milk mixture on top. Place mold in the pot of boiling water.
  • Bake flan in the preheated oven until a damp table knife inserted into the center comes out clean, 45 minutes to 1 hour. Remove from oven and let stand for 5 minutes.
  • Chill flan in the refrigerator until firm, 2 to 3 hours. Invert onto a serving plate so that caramel is on top.

¼ cup water
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat sugar and water together in a small saucepan over medium heat, stirring occasionally, until sugar dissolves into a light brown caramel, 8 to 10 minutes. Pour into a round glass baking dish.
  • Place condensed milk, evaporated milk, eggs, cream cheese, and vanilla extract in a blender; blend into a smooth custard. Pour over caramelized sugar in the baking dish.
  • Place baking dish in a deep baking pan. Pour in enough water to reach halfway up the baking dish.
  • Bake in the preheated oven until custard is set and top is light brown, about 1 hour.

1 cup white sugar
8 large eggs
12 ounces cream cheese at room temperature
1 (10 ounce) can sweetened condensed milk
1 (15 ounce) can cream of coconut (such as Coco Lopez®)
1 (14 ounce) can coconut milk
1 (12 ounce) can evaporated milk
1 tablespoon coconut-flavored rum (such as Bacardi® Coconut™)
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a heavy skillet over medium-low heat, cook and stir sugar with a wooden spoon until melted and golden, about 10 minutes. Caramel is very hot. Very carefully pour the caramel into a 9-inch round, 3-inch deep baking dish. Swirl dish to cover bottom and sides. The caramel will harden as it cools.
  • Combine the eggs, cream cheese, and sweetened condensed milk in a blender. Cover, and blend on High until well combined; transfer to a large bowl. Pour the cream of coconut, coconut milk, evaporated milk, coconut-flavored rum, and vanilla extract into the blender; cover and blend on High until well combined. Pour into the bowl with the cream cheese mixture. Whisk until incorporated. Pour the flan mixture into the caramel-coated baking dish.
  • Line a roasting pan with a damp kitchen towel. Place the filled baking dish on the towel, and place roasting pan in the preheated oven. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake until the flan is set and a knife inserted in the center comes out clean, about 1 hour. Transfer to a wire rack; cool. Refrigerate flan until ready to serve.
  • To serve, run a knife around the edges of the pan and flip the flan out onto a serving platter. Spoon any caramel remaining in the baking dish over the flan.

Rich and Creamy Flan with a beautiful amber sauce makes for a striking presentation. If you like cheese cake you will love this. 3/4 cup milk

1 (8-ounce) package cream cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook 1 cup sugar in a medium-size saucepan over medium heat, and cook, stirring constantly, 5 minutes or until sugar melts and turns a light golden brown. Quickly pour hot caramelized sugar into a 2-quart flan dish. Using oven mitts, tilt dish to evenly coat bottom and sides. Let stand 5 minutes. Sugar will harden.
  • Whisk together egg yolks and next 5 ingredients in a large bowl.
  • Process egg whites, cream cheese, and remaining 1/2 cup sugar in blender until smooth. Stir egg white mixture into egg yolk mixture. Pour mixture through a wire-mesh strainer into a large bowl; pour custard over caramelized sugar.
  • Place dish in a large shallow pan. Add hot water to pan to a depth of 1/3 up sides of dish.
  • Bake for 1 hour and 45 minutes. Remove dish from water bath; cool completely on a wire rack. Cover and chill at least 3 hours.
  • Run a knife around edge of flan to loosen; invert onto a serving plate.

Steps:

  • Preheat oven to 350°F. Stir sugar and 1/2 cup water in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down sides of pan with wet pastry brush and swirling pan. Immediately pour caramel into 9x5x3-inch glass baking dish, tilting and rotating dish to coat bottom and 2 inches up sides with caramel. Cool.
  • Using electric mixer, beat cream cheese in large bowl until smooth. Gradually beat in sweetened condensed milk, then eggs and yolk. Add evaporated milk, vanilla, salt, and remaining 1/2 cup water; beat to blend. Pour custard into caramel-lined dish. Place dish in 13x9x2-inch metal baking pan. Add enough hot water to pan to come 1 1/2 inches up sides of dish. Bake until knife inserted into center of flan comes out clean, about 1 hour. Remove flan from water bath. Refrigerate uncovered until cool, then cover and refrigerate overnight.
  • Run small sharp knife around flan to loosen. Firmly hold dish and platter together and invert, shaking gently to unmold flan onto platter. Scrape caramel syrup from dish over flan. Slice flan and serve.

1 cup sugar
One 8-ounce package cream cheese, at room temperature
One 14-ounce can sweetened condensed milk
1 1/2 cups milk
2 teaspoons ground cinnamon
2 teaspoons vanilla
Pinch salt
5 large eggs
1 cup mixed berries (blueberries, raspberries, blackberries), for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the caramel, add the sugar and 2 tablespoons water to a pan and heat over medium-low heat, stirring to dissolve the sugar. Once the sugar is dissolved, do not stir anymore. Cook until the mixture turns amber brown, about 10 minutes. Brush down the sides of the pan as needed with a wet pastry brush to avoid crystallization. When the caramel is done, pour evenly into six 3/4- to 1-cup ramekins.
  • Add the cream cheese to the bowl of a stand mixer and whip until smooth. Add the condensed milk, regular milk, cinnamon, vanilla, salt and eggs and beat until smooth and the ingredients are incorporated. Divide evenly among the ramekins over the caramel.
  • Bring some water to a boil in a kettle. Place the ramekins in a large roasting pan and pour boiling water into the pan until it reaches about halfway up the ramekins. Bake until the custard is set, about 45 minutes. Allow to cool completely, then refrigerate until chilled.
  • To remove the flans from the ramekins, run a knife around the edge of each flan and invert onto individual serving plates. Garnish with the mixed berries.

2 lb asparagus, trimmed
4 large eggs
1 1/3 cups whole milk
2 tablespoons freshly grated Parmigiano-Reggiano
1 1/4 teaspoons salt

1/8 teaspoon freshly grated nutmeg, or to taste
For sauce
1/4 lb Italian Fontina, rind discarded and cheese coarsely grated (or cut into 1/4-inch dice if too soft to grate)
1/2 cup whole milk
2 large eggs yolks
1 tablespoon butter

Steps:

  • Make flan:
  • Put oven rack in middle position and preheat oven to 325°F. Butter an 8- by 2-inch round cake pan and line bottom with a round of wax paper, then butter paper. 3Steam asparagus in a steamer set over boiling water, covered, until very tender, 6 to 8 minutes. Purée asparagus in a food processor until smooth, 1 to 2 minutes. (You will have about 2 cups purée.)
  • Whisk together eggs, milk, cheese, salt, pepper, and nutmeg in a bowl, then whisk in asparagus purée.
  • Pour asparagus mixture into pan and bake in a hot water bath until flan is set and a wooden pick or skewer inserted in center comes out clean, 50 minutes to 1 hour.
  • Transfer pan to a rack to cool slightly, 10 to 15 minutes.
  • Make sauce while flan cools:
  • Put all sauce ingredients in a metal bowl, then set bowl over a pan of barely simmering water. Heat sauce, whisking until cheese and butter are melted, and then stirring with a wooden spoon, until sauce is slightly thickened and registers 165°F on an instant-read thermometer, 5 to 8 minutes. Remove bowl from pan.
  • Run a thin knife around edge of flan to loosen, then invert a serving plate over pan and invert flan onto plate. Remove pan and discard paper. Cut flan into wedges and serve immediately with sauce.

MEXICAN CHOCOLATE CREAM CHEESE FLAN

  • Preheat oven to 350 degrees F.
  • Combine sugar and water in a medium saucepan; cook over low heat, stirring constantly, for 3 to 4 minutes or until sugar is dissolved. Increase heat to medium-high, boil, without stirring, for about 15 minutes or until caramel-colored. Quickly pour over bottom and sides of twelve 6 ounce ramekins or custard cups (if syrup hardens, soften over low heat.).
  • Heat evaporated milk in a small saucepan until it begins to simmer. Remove from heat. Stir in chopped chocolate until melted.
  • Place evaporated milk and chocolate mixture, sweetened condensed milk, cream cheese, butter, eggs and vanilla extract in blender; cover. Blend well. Pour mixture into prepared custard cups. Arrange in 1 or 2 large baking pans; fill pans with hot water to 1 inch depths.
  • Bake for 35 to 45 minutes or until knife inserted near center comes out clean. Cool in pans on wire racks for 20 minutes. Refrigerate for several hours or overnight. Run knife around rims; gently shake to loosen. Invert onto serving dishes.

My wonderful former neighbors in Gainesville, FL (Rafael and Madeleine De Paz) gave me this recipe after giving me, for Christmas, one of these. Ignore the "caramels." The last two ingredients make the caramello for the cake pan. (RecipeZaar doesn't let me list instructions for the ingredients.)

1 (14 ounce) can condensed milk
1 teaspoon vanilla
4 large egg yolks
12 ounces softened cream cheese

1 (3 1/2 ounce) can sweetened flaked coconut
1 cup sugar
1/4 cup water

Steps:

  • Preheat oven to 350 degrees F.
  • Put water, an inch or so, into a large lasagna or other pan that will accommodate the bundt or angel food cake pan. Put into the oven.
  • In a bowl, combine the milks (evaporated and condensed and cream of coconut), the vanilla and the coconut flakes.
  • In a separate bowl, mix the egg yolks with a fork or whisk. Add to the milk mixture. Add the softened cream cheese and mix (may use an electric mixer).
  • Caramel:.
  • In a saucepan, combine the sugar and water over medium-high heat. Let "melt" until it turns light brown (do not let burn!). Pour the caramel into an angel food or bundt pan.
  • Let the caramel harden.
  • Pour the milk mixture into the cake pan. Put the cake pan into the oven in a preheated lasagna pan.
  • Bake at 350 degrees for an hour and an half. When it is done, let it cool for a full hour.
  • Turn upside down onto a large platter and chill for at least 2-3 hours.
  • Garnish with oranges with leaves and orange slices and mint.

CHEESE AND BACON FLAN

My mother used to make this when I was a child. Apologies for the imperial measurements but I've been making this since before metrication!

8 ounces plain flour
4 ounces margarine cut into cubes
Little salt
2 - 4 tablespoons water
3 rashers streaky bacon, chopped
2 eggs
4 ounces grated Cheddar cheese
2 teaspoons chopped onion

Steps:

  • To make the pastry, combine the flour, salt and margarine. Rub until it resembles fine breadcrumbs. Add the water a spoonful at a time until it comes together in a dough. I use a stand mixer on speed 2 with a K beater. Place in the fridge for 30 minutes wrapped in cling film.
  • Pre heat the oven to 200 degrees (not fan). Roll out the pastry to fit a 7-8" flan dish and bake blind for 10 minutes.
  • Fry the bacon until crisp. Beat the eggs with some seasoning then add the hot milk, bacon, cheese and onion. Spoon the mixture into the part baked pastry case, lower the oven to 180 degrees and cook for about 30 minutes until set.
  • This can be served hot or cold with salad. You can always swap the bacon for a vegetarian option if you prefer.

GUAVA CHEESE FLAN

Guava and cheese (Guyaba con Queso) is a typical combination for Cubans. It is delicious! They have Guava Skins that are made in syrup and then combined with cream cheese and "Cuban" crackers - oh my!!! This is an acquired taste and one that is NOT diet friendly!! This was given to me by a woman who works in the activities dept and is trying to start her own dessert business. Didn't include chilling time of about 3 hours up to overnight.

  • Remove cake pan from water bath.
  • Cool on wire rack.
  • Carefully loosen sides of custard from pan with a knife.
  • Cover and refrigerate 3 hours or until chilled.
  • May be chilled overnight.
  • To unmold, invert pan onto a large shallow plate or pie dish.
  • Garnish with mango and kiwi slices, if desired.
  • *Guava paste is available in the international aisle of grocery store, it is sold in bars.

  • REFRIGERATE several hours or unti chilled. When ready to serve, run a knife along the edge of the pan. Then, invert pan onto serving plate to unmold flan. If some caramel is stuck to the bottom of the pan, you can place the bottom of the pan in a sink full of hot water to heat it, and then spoon it over flan. Store any leftovers in refrigerator.

10 oz sweetened condensed milk
15 oz coco lopez (cream of coconut)
15 oz coconut milk
12 oz evaporated milk
1 Tbsp coconut-flavored rum (malibu or bacardi® coconut™)
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350
  • 2. Add the sugar to the metal pan and melt over the stove at low-medium heat moving it with a wooden spoon until golden color. Turn the heat off a little before the desired color as it will continue to darken and it will burn if you are not careful. Very carefully and using oven mitts, swirl pan around while sugar is still soft to cover bottom and sides. It will get thicker as it cools and eventually harden as a lollipop. Set pan aside to cool.
  • 3. Combine the eggs, cream cheese, and sweetened condensed milk in a blender. Cover, and blend on High until well combined; transfer to a large bowl. Pour the cream of coconut, coconut milk, evaporated milk, coconut-flavored rum, and vanilla extract into the blender; cover and blend on High until well combined. Pour into the bowl with the cream cheese mixture. Whisk until incorporated. Pour the flan mixture into the caramel-coated baking dish.
  • 4. Line a roasting pan with a damp kitchen towel. Place the filled baking dish on the towel, and place roasting pan in the preheated oven. 2 cups sugar, divided
1 (12 ounce) can evaporated milk
1 (8 ounce) package Philadelphia Cream Cheese, cut up, softened
5 eggs
1 teaspoon vanilla
1 dash salt
1/4 cup cajeta caramel topping

Steps:

  • PREHEAT oven to 350°F Place 1 cup of the sugar in small heavy saucepan; cook on medium heat until sugar is melted and deep golden brown, stirring constantly with wooden spoon. Remove from heat. Immediately pour into 9-inch round baking pan; tilt pan to evenly cover bottom of pan with syrup. Set aside.
  • PLACE milk and cream cheese in blender; cover. Blend until smooth. Add remaining 1 cup sugar, the eggs, vanilla and salt; cover. Blend just until smooth; add cajeta and pour into prepared baking pan. Place filled baking pan in larger baking pan; add enough hot water to larger pan to come halfway up side of smaller pan.
  • BAKE 50 minute to 1 hour or until knife inserted near center comes out clean. Cool. Carefully remove flan from water. Cool on wire rack.
  • REFRIGERATE several hours or unti chilled. When ready to serve, run a knife around the edge of the pan. Then, invert pan onto serving plate to unmold flan. Store any leftovers in refrigerator. If you have trouble getting the caramel out of the pan, place the bottom of the pan in hot water and then spoon the caramel on the flan.

1/2 cup sugar
2 tablespoons water
8 ounces reduced-fat cream cheese, softened (Neufchà tel)
8 large eggs
14 ounces milk (nonfat or low-fat sweetened condensed)
12 ounces milk (nonfat or low-fat evaporated)
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Cook sugar and water in a small saucepan over medium-high heat, gently swirling the pan (do not stir), until the mixture turns golden brown, 5 to 7 minutes. Immediately, pour the caramel carefully into a 9-inch round metal cake pan. If it stiffens before it completely covers the bottom of the pan, warm the pan in the oven, then swirl to cover the bottom.
  • Beat cream cheese in a large bowl with a mixer at medium-high speed until soft. Beat in eggs, one at a time, until thoroughly combined, scraping down the sides. Add condensed milk, evaporated milk and vanilla; mix until combined. Carefully pour into the prepared pan. (You may hear some cracking; the pan will be very full).

1/2 cup water
1 (12 fluid ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese, softened
1/2 cup butter or 1/2 cup margarine, softened
2 ounces mexican chocolate, chopped (unsweetened)
5 large eggs
1 teaspoon vanilla extract

Steps:

  • PREHEAT oven to 350°F.
  • COMBINE sugar and water in medium saucepan; cook over low heat, stirring constantly, for 3 to 4 minutes or until sugar is dissolved.
  • Increase heat to medium-high; boil, without stirring, for about 15 minutes or until caramel-colored.
  • Quickly pour over bottom and sides of twelve 6-ounce ramekins or custard cups (if syrup hardens, soften over low heat).

My parents were world travelers and picked up this recipe in Scotland. It is one of my father's favorite recipes. Flan is kinda like a quiche. It initially called for a traditional shortbread pastry but I use pre-made pie crusts with the same result.

1 pie crust (1/2 package)
2 large leeks, washed and sliced thin
1/2 cup butter
3 large eggs
3 ounces milk
3 ounces sour cream
6 ounces cheddar cheese, grated
1 pinch salt
1 pinch ground nutmeg

Steps:

  • Ste oven to 400 degrees (Mark6).
  • Line a 9 inch pie pan (or flan tin) with pie crust.
  • Saute leeks until soft, season with black pepper and cool.
  • Whisk together the eggs, milk and sour cream. Add salt and then half the cheese and leeks to this mixture.
  • Pour into pie pan and sprinkle with rest of cheese. Grate nutmeg over, place on a baking sheet and bake for 30 minutes until brown.

1 egg
1 large onion
1 ounce margarine
4 ounces grated cheese
2 eggs
1/2 pint milk or 1/2 pint tomato juice
1 teaspoon dried sage

  • for crust: rub margarine into the flour and oatmeal and mix with the beaten egg.
  • press the mixture into a round pie tin 8" in diameter and 2" deep for filling: chop the onion and cook in margarine for a few minutes.
  • add the sage, and salt and pepper to taste.
  • in a large bowl mix the beaten eggs, milk/juice, and cheese.
  • add the onion mixture.
  • pour the filling into the crust and bake at 350 degrees for 45 minutes, until the filling is set and golden-brown.
