These toasts are topped with a light sprinkling of minced garlic, olive oil, and sharp Pecorino Romano before being baked. Garlicky and salty, they are a great accompaniment to cocktails.

24 (1/3-inch-thick) baguette slices (from a baguette at least
1/4 cup olive oil, divided
3/4 cup finely grated Pecorino Romano (preferably imported)
5 large garlic cloves, minced
Kosher salt
2 tablespoons finely chopped flat-leaf parsley

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Arrange bread slices in 1 layer on a large baking sheet and brush tops with 3 tablespoons oil.
  • Stir together remaining tablespoon oil, cheese, garlic, 1/4 teaspoon kosher salt, and 1/4 teaspoon pepper in a small bowl. Sprinkle each slice with about 1 teaspoon cheese mixture, mounding it slightly.
  • Bake until topping just starts to melt, 6 to 8 minutes. Sprinkle with parsley and kosher salt to taste. Serve warm.

1 teaspoon chopped fresh thyme leave
1 teaspoon minced garlic
1/2 teaspoon minced lemon zest
1/4 teaspoon dried crushed red pepper flakes
12 slices baguette (2-inch x 1/3-inch thick)
1 cup grated provolone cheese

Steps:

  • Preheat oven to 425 degrees.
  • Melt butter in heavy small skillet over medium heat. Add anchovies and stir until they dissolve, about 3 minutes. Stir in herbs, garlic, lemon zest, and red pepper.
  • Arrange bread slices on a large baking sheet. Brush with anchovy mixture. Sprinkle with cheese.
  • Bake until cheese melts and bread is golden, about 10 minutes. Cut bread slices in halves and serve.

1 1/2 cups quartered cherry tomatoes
3 tablespoons thinly sliced shallots
2 1/2 tablespoons extra-virgin olive oil, divided
1/2 tablespoon balsamic vinegar
3/4 cup ricotta cheese
1/4 cup crumbled blue cheese, loosely measured
1/4 cup prepared basil pesto
3/4 teaspoon salt, divided
1 teaspoon fresh lemon juice
1 teaspoon grated lemon peel, loosely measured
16 slices French or artisan type baguette, cut 1/4-inch thick on the diagonal
2 to 3 grinds black peppercorns (using handheld grinder)
3 tablespoons finely chopped fresh basil leaves
1/4 cup finely shredded fresh Pecorino Romano cheese, loosely measured

Steps:

  • Position an oven rack 5 to 6 inches from the broiler element. Preheat the broiler to high. Line a baking sheet with heavy-duty aluminum foil.
  • In a small bowl gently toss the tomatoes, shallots, 1/2 tablespoon of olive oil and vinegar together. Spread out the mixture on the prepared baking sheet. Set the baking sheet on a rack under the broiler element. Broil until the tomatoes begin to show a few black spots, about 4 minutes with oven door closed. Turn the mixture, using a spatula, and broil 3 minutes longer with the oven door closed. Remove from the oven and transfer the mixture with a slotted spoon to a small bowl; set the bowl aside until needed. Retain the broiler heat on high.
  • While the tomatoes are broiling, combine the ricotta, blue cheese, pesto, 1/2 teaspoon salt, lemon juice and lemon peel in a medium bowl.
  • Arrange the baguette slices on a large baking sheet and brush with the remaining 2 tablespoons of olive oil. Put the baking sheet on the rack under the broiler element and broil until golden, about 1 minute or so per side, watching carefully. Remove from oven.
  • To assemble, season the tomato mixture with remaining 1/4 teaspoon salt and peppercorns, then stir in the basil. Spread some of the ricotta mixture over each crostini. Top with the tomato/onion mixture, then sprinkle with shredded cheese, dividing all the ingredients equally among the slices. Transfer to a serving plate and serve.

1/4 cup fresh basil leaves

3 flat anchovy fillets
1 clove garlic, chopped
1 roasted red bell pepper

Steps:

  • Preheat the oven to 375 degrees F. Brush the bread lightly with oil on one side and arrange on a baking sheet. Bake until lightly dried out, about 10 minutes.
  • Meanwhile, combine the olives, basil, parsley, oil, lemon juice, anchovy fillets, garlic and bell pepper in a food processor and pulse until very finely chopped.

This is my absolute favorite crostini! If you've never cooked with anchovies before, don't worry, they don't taste "fishy" at all and they totally dissolve in the butter. In fact, when I serve this I never tell people that there are anchovies in it. If anyone asks, I just say that I use garlic and herbs and my 'secret ingredient'. So far no one has guessed my secret ingredient and everyone loves the crostini. Based on a recipie by Giada De Laurentiis.

12 slices crusty white bread, sliced on the diagonal (1/3 - 1/2 inch thick slices)
1/4 cup butter

1 baguette cut into 1/2-inch diagonal slices (or 8 slices country-style bread cut into 3-by-3-inch slices 1/2-inch thick)
Dijon mustard
1/4 pound good-quality cheddar cheese
Cayenne pepper

Steps:

  • Preheat oven to 400 degrees. Bake the slices of bread until lightly browned (about 10 minutes). The slices may be toasted under a broiler or over a grill instead.
  • Preheat broiler. Spread the slices with mustard, topped with slices of cheddar cheese and sprinkle with cayenne. Brown under the broiler and arrange on a serving platter.
