Chive and Onion Yogurt and Cream Cheese Spread image

A delicious, homemade version of the new yogurt and cream cheese spreads in the grocery store. If Greek yogurt is not available, hang your yogurt in a cheesecloth over the sink to drain overnight.

5 green onions, chopped
3 tablespoons chopped fresh chives
2 teaspoons dried chives
½ teaspoon onion powder
1 (12 ounce) container whipped cream cheese
¾ cup Greek-style yogurt

Steps:

  • In the container of a food processor, combine the green onions, fresh chives, dried chives, onion powder, cream cheese and yogurt. Pulse until blended, but the onions and chives should be in chunks. Transfer to a container, and refrigerate overnight before serving.

8 ounces soft fresh goat cheese (such as Montrachet), room temperature
4 ounces cream cheese, room temperature
6 tablespoons minced fresh chives (about 1 ounce)
1 garlic clove, pressed
12 whole long fresh chives
1 French bread baguette, sliced

Steps:

  • Combine goat cheese, cream cheese, minced chives and garlic in medium bowl. Stir with fork until well blended. Place large piece of plastic wrap on work surface. Arrange whole chives in crisscross pattern atop center of plastic. Spoon cheese into center of chives, forming 4- to 5-inch round. Lift edges of plastic, wrapping chives around cheese and covering cheese completely. Refrigerate overnight. (Can be prepared 2 days ahead. Keep refrigerated.) Remove plastic wrap from cheese. Place cheese on platter; surround with baguette slices and serve.

1/4 teaspoon kosher salt
5 ounces goat cheese, room temperature
3 tablespoons unsalted butter, room temperature
1/4 cup pistachio nut, shelled, finely chopped
3 tablespoons fresh chives, finely chopped
1 dash ground pepper, to taste

Steps:

  • In a food processor fitted with a metal blade, process the garlic & salt until garlic is finely minced, then add the goat cheese & butter & process until combined & smooth.

This is a very versatile sandwich spread or dip, which is so easy to whip up at the last minute; it makes VERY elegant sandwiches and is a wonderful accompaniment for smoked salmon, prawns (shrimp) or tuna. I have also used it to spread on savoury scones and crackers. If you plan to make this a day before you need to use it, you might like to salt the cucumbers first - as they do release water into the spread.

From the "Smokin" cookbook Makes about 1 1/2 cups, may be doubled easily for a large crowd. This recipe is to be made using a stove top smoker.

1 smoked trout fillet
1 (8 ounce) container whipped cream cheese
2 scallions, trimmed and sliced very thinly
2 teaspoons fresh lemon juice
1/2 teaspoon kosher salt (to taste)
1/4 teaspoon fresh ground white pepper (or black)
3 tablespoons thinly sliced chives (optional)

Steps:

  • Smoke the trout according to the recipe Stove Top Smoker Smoked Whole Trout. (See related recipe).
  • Cool to room temperature.
  • Pick over the trout fillet, removing any fine bones or pieces of skin but leaving the trout in the largest pieces possible.
  • Stir the trout, cream cheese, scallions, lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper together gently in a mixing bowl until blended, leaving the trout in smallish pieces. (For an even chunkier spread, beat all the ingredients except the trout together, then gently fold in the trout)
  • Taste and stir in a little more salt and/or pepper if you like.
  • The spread may be made up to two days in advance and stored, covered in the refrigerator.
  • Bring to room temperature and sprinkle the chives over the top before serving.
  • If you're making canapes or stuffing celery with the spread, sprinkle a little of the chives over each.
