Yield Makes about 8 servings as a main course, more as a side dish or buffet dish

Number Of Ingredients 20

Batter:
4 large eggs (no substitutes)
1 1/4 cups milk
2 tablespoons sour cream
1/4 cup butter, melted (for best flavor, no substitutes)
3/4 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1 to 2 tablespoons sugar
1 1/4 teaspoons baking powder
Filling (see notes):
2 (7 1/2- to 8-ounce) packages curd-style farmer cheese
1 (15- to 16-ounce) container ricotta cheese, any type
2 large eggs or 1/2 cup egg substitute
2 to 3 tablespoons sugar
2 tablespoons lemon juice
To serve:
sour cream
plain or vanilla yogurt
applesauce
sliced fresh strawberries or other fruit

Steps:

  • Preheat the oven to 350 degrees. Butter a 9 by 13-inch baking dish or coat it with nonstick cooking spray.
  • In a blender or a food processor (fitted with a steel blade), combine all batter ingredients. Process until very smooth, scraping down the sides of the container once or twice. Measure out 1 1/2 cups of the batter, and pour it into the bottom of the prepared baking dish. Bake at 350 degrees forabout 10 minutes, or until it is set.
  • Meanwhile, combine all the filling ingredients in a large bowl, and mix them well. When the bottom layer has set, remove it from the oven and spread the filling over it, smoothing the top. Give the remaining batter a brief stir to resuspend the ingredients; then very slowly pour it over the cheese filling so the filling is completely covered. Carefully return the casserole to the 350 degree oven, and bake an additional 35 to 40 minutes, or until the top is puffed and set.
  • Let the casserole rest for about 10 minutes before cutting it into squares. Serve with your choice of accompaniments.

We love Cheese Blintzes but sometimes they are a pain to make when you are in a hurry. This is an easy way to get the taste of blintzes with the ease of just throwing everything together. Might take a while the first time, but it gets easier after you make it a few times.

1 lb cream-style cottage cheese
1 lb farmer cheese, shredded
2 eggs
1/4 teaspoon salt
1/4-1/2 cup granulated sugar
1/2 teaspoon vanilla extract
1 lemon, juice of
1 cup butter, melted and cooled slightly
2 eggs
1/4 cup milk
3 teaspoons baking powder
1/2 cup sugar
1 cup flour
1 teaspoon vanilla extract
sugar
cinnamon
1 (21 ounce) can blueberry pie filling (or your preference)
1/2 teaspoon grated lemon, rind of

Steps:

  • Preheat oven to 300 degrees F.
  • In large bowl, combine fist 7 ingredients, blending well and set aside.
  • Grease a 2-quart long baking dish.
  • In a large bowl, combine the next 7 ingredients until blended.
  • Pour 1/2 of the mixture into the prepared pan.
  • Pour all of the first mixture on top of the batter in the pan and top with the other 1/2 of remaining batter, being careful not to mix together.
  • Sprinkle with sugar and cinnamon and bake for 45 to 60 minutes.
  • Warm the pie filling and lemon peel together and pour over slices of the blintz.

Everyone in our family loves this casserole. It appeals equally to those who are finicky and others with more sophisticated tastes. We like a nonsweet filling, but you can replace the salt with a couple tablespoons of sugar if you prefer. This recipe can be doubled. Then bake it in a larger casserole for about an hour. Depending on the size of your blender, you may need to make the batter for the double recipe in two batches. Serve hot with sour creme.

3 eggs
3/4 cup milk
1/4 cup vanilla yogurt
1/2 teaspoon vanilla
1 teaspoon baking powder
1 tablespoon sugar
2 1/2 tablespoons butter, melted
1 cup flour
8 ounces farmer cheese
12 ounces cottage cheese
2 tablespoons butter, melted
1 egg
2 tablespoons sour cream
salt

Steps:

  • Mix the first 7 ingredients in a blender until blended.
  • Add the flour and mix again.
  • Pour half of batter mixture into a 9" square greased or Pam'd casserole.
  • Bake at 350 for about 10 min or until set.
  • Mix the remaining ingredients to make the filling.
  • Spread filling evenly over the baked bottom layer.
  • Re-stir the remaining batter and pour it over the filling, trying to cover all the cheese layer.
  • Bake at 350 for about 40 min or until slightly browned.
  • Optional - brush top with melted butter the last 5 minute.

15 ounces ricotta cheese
1 large egg
1 tablespoon sugar
1 teaspoon vanilla extract
1/2 cup butter, melted

1 teaspoon baking soda
1/2 cup orange juice
1 (16 ounce) package frozen strawberries with juice, thawed
2 tablespoons sugar

1 cup sliced fresh strawberries
1 tablespoon Grand Marnier (optional)

Steps:

  • Filling: In a medium bowl with an electric mixer, beat together all ingredients. Set aside.
  • Batter: Preheat oven to 350 degrees Fahrenheit. In another medium bowl, with an electric mixer and with clean beaters, beat butter, sugar, and eggs. Add flour, baking powder, baking soda, and orange juice and beat well.
  • Casserole: Pour half of the batter into a lightly sprayed or oiled 9 X 13 baking dish. Spoon Filling on top, spreading it around as much as possible. Pour remaining batter on top. Bake until firm and golden on top, about 50 minutes. Cut into squares and serve with Strawberry Sauce or a blueberry sauce.
  • Strawberry Sauce: In a food processor, slightly puree the thawed berries, including their juice. Transfer puree to a medium saucepan. Add remaining ingredients (except liqueur) and bring to a boil on medium-high, whisking, until thickened, about 4 minutes. Remove from heat, add fresh berries and liqueur. Let cool, then cover and refrigerate. Serve at room temperature.

Though cheese blintzes rate as an all-time favorite in my family, I don't always have the time to prepare them in the usual fashion. Therefore, I created the following casserole, which has a fantastic flavor very similar to blintzes (some say it's even better); yet it takes only a few minutes to prepare. In fact, I make it often throughout the year. It is quite different from the popular cheese blintz casseroles made with frozen commercial blintzes. For my version, a layer of cheese filling is baked between two light layers of a special blintz-type batter. The casserole is then cut into squares for serving, making it a perfect choice for a dairy buffet and great for Shavuot. Since the first edition of this book was published, this layered blintz casserole has proven to be one of its most popular recipes. The dish is served at the famous Moosewood Restaurant in Ithaca, New York, where it has become a favorite brunch offering under the name "Easy Cheese Blintz Puff." And the recipe has appeared in a number of books and magazines. Like some of the other "creative" recipes in this book, this one appears to be on its way to becoming a classic of "new" Jewish cooking. Notes: The types of cheese in the filling were determined after much experimentation with various mixtures. It is the best combination to produce the desired results of separate layers. The top of this casserole is rather plain. If desired, it may be sprinkled lightly with cinnamon or cinnamon-sugar before the casserole is returned to the oven for the final baking.

1/2 c orange juice
1 1/2 c sour cream
1 c flour
2 Tbsp baking powder
1/4 c butter, melted
1/2 tsp cinnamon
FILLING:
2 c cottage cheese
8 oz c cream cheese
2 yolks
2 Tbsp sugar

Steps:

  • 1. Combine all ingredients in a food processor.Blend until smooth.
  • 2. Grease 9 by 13 inch casserole dish.
  • 3. Beat together all filling ingredients.
  • 4. Pour half of the batter into the casserole dish.
  • 5. Drop filling teaspoonfuls over batter; spread evenly. The filling will mix slightly with the batter.
  • 6. Pour remaining batter over filling.
  • 7. Bake, uncovered, at 350 F for 50-60 minute,until light golden brown.Serve with fruits.

2 box frozen cheese blintzes
8 eggs, beaten till foamy
1 stick butter
1/2 c sugar
4 tsp lemon juice
1 Tbsp orange juice, fresh
1 tsp salt
1 pt sour cream

Steps:

  • 1. Melt butter in a 9 x 12 baking dish. Add blintzes and roll in butter to coat.
  • 2. Mix all other ingredients and pour over blintzes.
  • 3. Bake 45 minutes at 350 degrees. Serve.
