PINEAPPLE CHEESE CASSEROLE

2 (20-ounce) cans pineapple chunks, drained with juice reserved
1 cup sugar
6 tablespoons all-purpose flour
2 cups shredded sharp cheddar cheese
1 sleeve buttery round crackers, crushed ((about 1 3/4 cups crushed) I used Ritz. )
1/4 cup unsalted butter, melted

Steps:

  • Preheat the oven to 350°F and spray a 2-quart baking dish with nonstick cooking spray. Drain the pineapple very well and reserve 6 tablespoons of the juice for the recipe.
  • In a large bowl, stir together the sugar, flour and 6 tablespoons of the juice. Add the pineapple and mix well. Pour it into the prepared dish. Sprinkle the cheese over the top.
  • In a medium bowl, add the melted butter to the crushed cracker crumbs and stir to coat them in the butter. Sprinkle them evenly over the cheese. Bake for about 30 minutes and then allow the casserole to rest for about 10 minutes and thicken before serving.

1 teaspoon vanilla
8 oz frozen whipped topping, thawed
1/2 cup powdered sugar
1 1/2 cup walnuts (coarsely chopped)

Steps:

  • Drain pineapple well in a mesh strainer.
  • Combine pineapple, cream cheese, and vanilla; mix well.
  • Gently fold in whipped topping.
  • Stir in powdered sugar and walnuts.
  • Chill several hours and serve cold.

1 beaten Egg
3/4 cup Pineapple juice This is about the amount in a can of pineapple
1 large can Pineapple chunks or bits
1/4 pound Cheese (cheddar) diced
1/2 cup Marshmallows miniature
1/3 cup Pecans (or other nuts) chopped

Steps:

  • Put pineapple chunks, diced cheese, and miniature marshmallows in a bowl and set aside. Use the juice from the can of pineapple. Put the juice, sugar, egg, and cornstarch in a pan over medium heat. Stir constantly until mixture thickens. Pour immediately over pineapple chunks, marshmallows, and cheese. This will slightly melt the cheese and marshmallows and blend the flavors. Add nuts and chill

1 pkg. (6 oz.) or 2 pkg. (3 oz. each) JELL-O Lime Flavor Gelatin
2 cups boiling water
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 can (8 oz.) crushed pineapple in juice, undrained
1 cup pineapple juice
1/2 cup cold water
1 tub (8 oz.) COOL WHIP Extra Creamy Whipped Topping, thawed
assorted fresh or frozen fruit

Steps:

  • Dissolve JELL-O in 2 cups boiling water. Whisk in softened cream cheese until thoroughly blended. Then add crushed pineapple, pineapple juice and 1/2 cup cold water. Pour into 6-cup mold and refrigerate until set.
  • Turn out mold onto serving plate. Spoon COOL WHIP into center of mold.
  • Arrange your choice of fresh or frozen fruit on top as desired. (I'm not entirely happy about the color of the kiwi in combination with the color of the JELL-O, but since it tastes great, I live with it. Ha!)
  • Serve immediately, and be sure to add a big spoonful of the fruit and COOL WHIP to your JELL-O for a cool, creamy and refreshing fruit dessert!

Can be used for a party dip for pretzels or a side salad depending on your choice. I usually double this recipe for parties. If you want to use for a dip for pretzels, one batch should be enough. I recommend crushing the pretzels using a rolling pin. I recommend not to add pretzel mixture to pineapple mixture until ready to serve.

1 (8 ounce) can crushed pineapple, drained

1 cup sugar
6 tablespoons self-rising flour
2 cups grated medium-sharp cheddar cheese
1 sleeve Ritz crackers, crushed
1/2 cup (1 stick) unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, combine pineapple, sugar, flour, and cheese. Transfer to an 8-by-8-inch, 1 1/2 quart baking dish. Top with crushed crackers and drizzle with melted butter. Bake for 35 minutes. Let stand 10 minutes before serving.

1 (1 tablespoon) envelope unflavored gelatin
1/4 cup cold water
3/4 cup sugar
1/2 cup pineapple syrup
1 cup crushed pineapple, drained (use 14-oz can for fruit and juice)
1 cup freshly grated American cheese (or mild cheddar cheese)
1 cup heavy cream, whipped

Steps:

  • Soften gelatin in cold water.
  • Dissolve sugar in pineapple syrup in small saucepan over low heat. Add gelatin and stir until dissolved.
  • Chill till partially set, add pineapple and cheese.
  • Fold in whipped cream. Turn into serving bowl.
  • Chill until firm.

3 medium tart apples, unpeeled and diced
2 tablespoons lemon juice
1/4 cup chopped red onion
2 cups sliced celery
1 (20 ounce) can pineapple chunks, well drained
8 ounces sharp cheddar cheese, cut into small cubes
3/4 cup slivered almonds, toasted
1/2 cup reduced-fat sour cream
1/4-1/2 cup mayonnaise mayonnaise
salt and pepper, to taste

  • Toss the diced apple with the 2 tbsp lemon juice and them place in a large mixing bowl.
  • Add the chopped red onion, sliced celery, well-drained pineapple chunks, diced cheese and toasted almonds to the mixing bowl.
  • In a seperate bowl, mix together the sour cream and mayonnaise (start with just 1/4 cup of mayo).
  • Add sour cream/mayo mixture to the salad and toss to evenly coat.
  • Add salt and pepper to taste and, if necessary, more mayonnaise.

1 large can pineapple chunks reserving juice (i usually cut the chunks in half)
1/2 lb mini marshmallows
1/2 lb velveeta small cubed
1/2 c broken pecans
2 large eggs
3 Tbsp sugar
2 Tbsp cornstarch
1 Tbsp butter
1 c whipping cream

Steps:

  • 1. Pour drained pineapple chunks, marshmallows, nuts, and velveeta cubes into a bowl and toss to combine. Set aside.
  • 2. Mix reserved pineapple juice, sugar, and cornstartch in a small saucepan. Beat in eggs. Cook until thick. Add butter.
  • 3. Pour hot mixture over pineapple and marshmallows and cheese. Stir just to combine. Cool completely.
  • 4. Whip cream until soft peaks form. Fold into cooled pineapple and cheese mixture. Chill for a few hours before serving.
