This is one of my favorite recipes for soda bread. It's versatile-you can do endless sweet or savory variations. I serve it sliced alongside assorted spreads and cheeses. -Theresa Vujosevic, Hamburg, New Jersey For a savory Irish bread: Omit Sugar and Raisin and replace with 1 medium onion, 5 gloves of garlic (chopped and sauteed until translucent). Number Of Ingredients 9

1 tablespoon olive oil
1 medium onion, chopped
5 garlic cloves, minced
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/4 cup cold butter, cubed
1 large egg, room temperature
1-1/2 cups buttermilk

Steps:

  • Preheat oven to 425°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until light golden brown, 3-5 minutes. Add garlic; cook and stir 30 seconds longer. Cool., In a large bowl, whisk flour, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in cooled onion mixture; make a well in center. In a small bowl, whisk egg and buttermilk; pour into well. Using a wooden spoon, mix dough until too stiff to stir. Turn onto a lightly floured surface; knead gently 10 times. Shape into a round loaf., Transfer to a large greased cast-iron skillet or baking sheet. Using a sharp knife, cut a shallow "X" on the top of loaf. Bake until golden brown, 35-40 minutes., Remove from pan to a wire rack; serve warm.

4 cups bread flour, plus more for dusting
1 ½ teaspoons salt
1 tablespoon baking powder
6 tablespoons butter, softened
1 ¼ cups buttermilk
2 tablespoons confectioners' sugar
¾ cup finely chopped onion
¾ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together bread flour, salt, and baking powder until thoroughly combined. Beat in the butter, buttermilk, and confectioners' sugar to make a dough; gently mix in the onion and Cheddar cheese. Divide dough in half, and shape each half into a ball. Place the loaves onto the prepared baking sheet, and gently flatten to about 2 inches thick. Dust each loaf with flour.
  • Bake on a preheated oven until browned, about 30 minutes. Cool on racks for a few minutes; serve warm.

I was searching for a quick bread recipe without all the time and work it takes to knead dough and then wait for it to rise. I searched Food Network.com and found a recipe for "Beer Bread". Although simple and fast to make, I did not like the taste of it. So I altered the ingredients and experimented a bit and after just two trys, I came up with this version. I was so pleased with it....I felt compelled to share it with others who like me, want a quick homemade bread that everyone will love! Make sure your oven is the required temperature. Let cool before slicing otherwise it will crumble and fall apart. When slicing, use a very sharp knife and saw gently while pressing down to get the best results. This bread is great with stews, chili, heartly soups, and open faced turkey or beef sandwiches. Very filling!

3 cups all-purpose flour (pre-sifted or sift yourself)
3 teaspoons baking powder
1 teaspoon salt
12 ounces milk (whole or low fat)
1/4 cup sugar
1/2 cup water
1/4 cup melted butter
1 cup shredded cheddar cheese (mild or sharp)
1/2 cup chopped onion

Steps:

  • Pre-heat oven to 375 degrees.
  • Mix together flour, baking powder, sugar and salt.
  • Add milk, water, butter, cheese, and onions.

  • Dough should be a bit moist but not watery. Should look very sticky and lumpy.
  • Scoop into greased bread pan. (cooking spray works fine).

250 g strong white flour, plus extra for dusting
250 g wholemeal flour
20 g baking powder
40 g caster sugar
75 g unsalted butter, softened
200 ml buttermilk
100 ml sour cream
150 g cheddar cheese
1 onions, chopped and gently fried in a little sunflower or 1 vegetable oil, until softened but not browned

Steps:

  • Preheat the oven to 400°F Line a baking sheet.
  • Place the flours, baking powder and sugar in a large bowl. Make a well in the centre and work in the butter, buttermilk, soured cream, Cheddar cheese and fried onion to make a soft dough.
  • Shape the dough into a ball. Flatten slightly and cut a cross into the top, then dust the top with a little flour.
  • Place the loaf on a lined baking sheet and bake for 25 minutes until golden brown. Transfer to a wire rack to cool.

Perk up homemade soda bread with onion and a light but punchy mustard butter. Serve alongside your favourite cold meats and a fresh salad

340g strong wholemeal flour
340g strong white bread flour , plus extra for dusting
2 tsp bicarbonate of soda
40g dried onion flakes
1 tbsp nigella seeds
85g butter , melted
625ml natural yogurt
splash of milk
1 tbsp oats
135g unsalted butter , chopped and softened
25g English mustard

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the flours into a bowl with the bicarb, onion flakes, nigella seeds and 1½ tsp salt. Stir together and make a well in the middle. Tip in the butter and yogurt, and bring together into a soft, sticky dough using a spatula. If it seems dry, add a splash of milk.
  • Tip the dough out onto a lightly floured surface and gently form into a round. Lift onto a lightly floured baking sheet, cut a deep cross in the top using a sharp knife and sprinkle over the oats. Bake for 1 hr, or until golden and the loaf sounds hollow when tapped underneath. Leave to cool on a wire rack.
  • While the bread cools, beat the butter, mustard and a pinch of sea salt together until light and airy. Spoon into a small pot. Slice the bread and serve with the mustard butter for spreading over.

1 cup shredded old cheddar cheese
2 tablespoons sugar
1 teaspoon baking soda

1/4 cup chopped green onion
1 1/2 cups buttermilk
1/4 cup vegetable oil
1 pinch cayenne pepper
1 tablespoon all-purpose flour (for topping)

Steps:

  • Preheat oven to 375°F (190°C).
  • In large bowl, whisk together all-purpose flour, whole wheat flour, cheese, onions, sugar, baking soda, salt and cayenne.
  • In small bowl, whisk together buttermilk and oil. Add to dry ingredients all at once; stir with fork until soft dough forms.
  • Turn out dough onto lightly floured surface. With floured hands, press dough into ball; knead lightly 10 times. Place on greased baking sheet; gently pat out dough into 6-in (15 cm) circle.

120g rolled oats, plus extra for the topping
250g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
150g mature cheddar, grated
4 spring onions, chopped
350ml buttermilk, plus a little extra (optional)
½ tsp Dijon mustard

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Blitz the oats in a food processor until fine, then tip into a large bowl along with the flour, bicarbonate of soda, ½ tsp salt and 1 tsp freshly ground black pepper. Quickly mix together to combine. Mix in 130g of the cheese and all of the spring onions.
  • Mix the buttermilk and mustard together in a jug, then pour this into the dry ingredients and use a cutlery knife to quickly mix into a soft, shaggy dough. If the dough still looks dry, add another 1-2 tbsp buttermilk. Turn the dough out on a floured surface and knead briefly to just bring it together into a ball.
  • Transfer the dough to the prepared tray and flatten it slightly into a thick disc using your palm. Use a sharp knife to cut a very deep cross into the top, then scatter with the remaining cheese and a small handful of oats. Bake for 35-45 mins until deeply browned and the loaf sounds hollow when tapped on the bottom. Leave to cool on a wire rack before slicing and serving.
