After ending up with bunches of apricots one summer, I created this quick and simple dish. My friends were blown away with its fresh taste and uniqueness. -Wendy Weidner, Ham Lake, Minnesota

3 ounces fresh goat cheese
2 teaspoons minced fresh basil
2 teaspoons minced fresh chives
2 teaspoons 2% milk
4 fresh apricots, sliced
1/8 teaspoon salt
Dash pepper
2 tablespoons balsamic glaze

Steps:

  • Place goat cheese, minced basil, chives and milk in a mini food processor; process until smooth. Arrange apricot slices on a serving platter. Drop goat cheese mixture by teaspoonfuls over top. Sprinkle with salt and pepper; drizzle with balsamic glaze. Garnish with additional basil leaves. Serve immediately.

1 tablespoon evoo -- extra-virgin olive oil, 1 turn of the pan
1/2 onion, chopped
1 1/4 pounds bulk Italian sweet sausage meat
3 tablespoons chopped fresh sage, 4 or 5 sprigs, slivered
1/4 cup balsamic vinegar, eyeball it
1 cup apricot all-fruit spread or, apricot preserves
1/2 cup spicy brown mustard
1 cup Italian bread crumbs, a couple of handfuls
Italian beer (Moretti, Peroni)
wines (chianti classico, primitivo, nero d'avola)
San Pelligrino water and sliced citrus fruit

Steps:

  • Preheat a small pot over medium heat and the oven to 425 degrees F.
  • To the pot, add oil and onion. Saute the onion for 1 minute.
  • In a mixing bowl, combine sweet sausage and chopped sage.
  • Next, add balsamic vinegar to onion and reduce by half, 1 minute. Remove vinegar from heat and combine with apricot all-fruit spread or preserves and spicy mustard. Stir until mustard is fully incorporated. Dip will be glossy and brown in color.
  • Add 2 tablespoonfuls of apricot dip to bulk sausage and mix. Form meat into bite size nuggets, coat in bread crumbs then place on nonstick cookie sheet. Recipe will make 20 to 24 pieces. Bake 15 to 17 minutes, until evenly browned, turning occasionally. Drain, then serve with party picks for dipping with remaining balsamic apricot mustard dip.

Fresh ripe apricots stuffed with a slightly sweetened mascarpone cheese drizzled with a sweet honey balsamic sauce. You can use a piping bag for the cream to make this look extra fancy

1 cup whipping cream
3 tablespoons white sugar
4 ounces mascarpone cheese
2 tablespoons apricot nectar
½ teaspoon vanilla extract
1 pinch ground cardamom
3 tablespoons apricot preserves
¼ cup honey
1 tablespoon balsamic vinegar
8 fresh apricots, pitted and halved

Steps:

  • Beat the cream in a chilled bowl with an electric mixer until soft peaks form. Beat in the sugar and set aside. In another bowl, whip the mascarpone cheese with an electric mixer until very soft; beat in the apricot nectar, vanilla extract, and cardamom. Gently fold the mascarpone mixture into the whipped cream.
  • Place the apricot preserves and honey into a microwave-safe bowl and heat in microwave oven until warm but not hot, about 30 seconds. Mix well and stir the balsamic vinegar into the honey mixture.
  • Stuff each apricot half with a dollop of the mascarpone cream and place the filled apricot halves on a serving dish. Drizzle the fruit and plate with balsamic sauce and serve.

2 pounds fresh green beans, trimmed
1 can (14-1/2 ounces) chicken broth
1/2 pound bacon strips, chopped
1 cup dried apricots, chopped
1/4 cup balsamic vinegar
3/4 teaspoon salt
3/4 teaspoon garlic powder
3/4 teaspoon pepper

Steps:

  • Place beans and broth in a large saucepan. Bring to a boil. Cook, covered, until beans are crisp-tender, 4-7 minutes; drain., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 1 tablespoon drippings in pan., Add apricots to drippings; cook and stir over medium heat until softened. Add vinegar, salt, garlic powder, pepper and beans; cook and stir until beans are coated, 2-3 minutes longer. Sprinkle with bacon.

¼ cup honey
3 large tomatoes, cut into 1/2-inch slices
1 (16 ounce) package fresh mozzarella cheese, cut into 1/4-inch slices
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup fresh basil leaves
¼ cup extra-virgin olive oil

Steps:

  • Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Set the balsamic reduction aside to cool.
