- To meat drippings add onions, carrots, celery, garlic, bay herb bundle, salt and pepper. Cook partially covered 10-12 minutes to soften, stirring occasionally. Add flour and stir one minute to cook out raw flour taste, add Worcestershire and wine, and stir. Add stock and beef or lamb and bacon back to pan reduce heat to simmer and cook covered until tender, stirring occasionally, up to 40 minutes.

Once you've tried this pie,you will make it all the time. It is so easy to make . There are other pies out there that are similar but the Gruyere cheese gives it a rich taste.

- 1. Preheat oven to 350. Fry bacon, remove and pat with paper towels and leave fat in the pan.
- 2. Add onions to the pan and brown. Sprinkle with salt. Once they are browned , let them cool.
- 3. Mix ricotta, egg yolk and Gruyere in a separate dish. Spread into the pie shell. Scrap onions on top of that, ( even the little brown bits) than shake Parmesan on top. Sprinkle with pepper.
- 4. Spread bacon evenly on top of that and bake until the pie shell has baked, approx. 30 - 40 minutes depending on your oven. ( when the pie shell has baked a golden brown, that's when I take it out)
- 5. Enjoy all the raves!!

- MAKE THE PASTRY: In a large bowl, combine the flour and salt. With a pastry blender or two knives, cut the butter in until the mixture resembles coarse meal. Blend in the sour cream. Sprinkle on 1 tablespoon of the water and work it into the dough, adding up to 1 more tablespoon of water to form a dough that can be gathered into a ball. Pat the dough into a disc shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll the dough into a 12-inch circle, then fit it into a 9-inch pie pan. Trim the overhang to an even 1/2-inch all the way around. fold the overhang over and crimp the dough to form a decorative border. Prick the bottom of the crust lightly with a fork. Refrigerate the pie shell for 30 minutes.
- Preheat the oven to 400 degrees. Line the pie shell with foil and fill with dried beans or pie weights. Bake for 8 minutes. Remove the foil and beans, and bake the pastry for 8 to 10 minutes longer, or until lightly golden. Remove the pie shell from the oven and reduce the the oven temperature to 375 degrees.
- MAKE THE FILLING: In a large skillet, cook the bacon over medium heat until crisp, about 10 minutes. Reserving the fat in the skillet, drain the bacon on paper towels; crumble and set aside.
- In the bacon fat, saute the onions over medium heat until softened but not browned, about 10 minutes.
- Meanwhile, in a medium bowl, whisk together the eggs, milk, sour cream, flour, nutmeg, and pepper.
- Spread the onions evenly over the bottom of the pie shell. Sprinkle the reserved bacon and the cheese evenly on top. Pour the custard mixture into the pie shell and bake for 20 minutes, or until the custard has set and the top is golden brown.
- Serve pie warm, garnished with the parsley.

- Pat the meat dry after chopping and before cooking. Heat a Dutch oven or other heavy pot over medium-high heat. Add oil and bacon and cook to crisp. Remove to a plate and drain all but 3-4 tablespoons drippings from the pot. Add beef or lamb, season with salt and pepper, and cook in 2 batches to brown and crust. Remove meat to the plate with bacon. To meat drippings add onions, carrots, celery, garlic, bay herb bundle, salt and pepper. Cook partially covered 10-12 minutes to soften, stirring occasionally. Adjust seasoning, stir in egg yolks and pipe or spread over meat filling in casserole or single-serve dishes. Heat broiler and place a rack in the center of the oven. Brown potatoes and sprinkle with paprika to serve.
BACON AND CHEESE APPETIZER PIE

- Roll the pastry into a 13-1/2 circle an d fit into bottom and up the sides of the springform pan. Prick the bottom with a fork. Bake at 450 7-10 min -varies-until lightly browned Remove and cool. Beat cream cheese until fluffy in a mixing bowl; add eggs and milk and beat until smooth. Add the cheese, onions, bacon, mushrooms and spices to the cream cheese mixture and stir by hand until well incorporated. Pour into crust. Bake at 350 for 40-45 min. until a knife inserted in center comes out clean. Remove and place pan on a wire rack and cool for 20 minutes. Remove the side of the springform and cut into slices. Optional: garnish with more sliced green onions, add a dollop of sour cream, or serve with salsa.
BACON AND CHEESE PIE
This pie is beautiful! I invented it tonight for dinner and thought that I just had to post it! Even for someone like me who isn't great at pastry it was super easy and tasted great. Please taste the filling as it is cooking before you add stock. Try to find a salt free or make it yourself because the bacon and cheese are salty enough. Also- thicken to your own liking

- Pastry.
- Put flour, onion flakes, pepper and paprika in a food processor. Add the butter and process until crumby.
- Add half the cold water to the beaten egg and pour in while still mixing. Add water very slowly until it starts to resemble dough. Don't let it form a ball.
- Divide dough in half, roll one lot out and line your pie dish. Prick and cover with dried beans and bake on 200 celsius until almost cooked -- about 15 minutes.
- Wrap the other dough in wrap and refrigerate until needed.
- Filling.
- Sauté onion, bacon, garlic and paprika in the oil in a pan until cooked just through.
- coat the beef with the flour and add to the pan, cook it for about five minutes and then add the stock slowly stirring it constantly to avoid lumps.
- Depending on what meat you are using, add enough water to cook it down for a while (1-4 hours) and keep adding it as needed. Add the Marjoram.
- When the meat is just about tender enough cook it down until it is thick.
- Empty out the beans and pour the filling into the case. Break the eggs straight on top, spread out evenly and cover with the cheese (Save some for the top of the pie).
- Roll out the pastry and put it on top. Prick a few air holes.
- Brush with egg wash and sprinkle some extra bacon pieces, grated cheese (not too much and the parmesan on top. You can grind some pepper over it too.
- Bake until golden brown on high for about 30 mins or so -- watch it!

- Preheat the oven to 350 degrees F (175 degrees C). Cut Red Leicester cheese into 1/2-inch cubes; set aside.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until almost cooked through, 10 to 15 minutes.

- Take 1 pound of bacon and tightly weave it into a square, alternating over and under with the strips of bacon, that is roughly the size of your pie tin. Flip the bacon weave into your pie tin and press down, conforming the bacon to the shape of the tin. Create another bacon weave using the remaining 3/4 pound of bacon. This will be the lattice top for the pie, so with this one you'll want to leave some space in between the slices of bacon. Place the bacon pie crust and lattice top on separate baking sheets and cook at 400°F for 15 minutes. Meanwhile, cook the macaroni according to the package directions, drain it and set aside. In a saucepan, melt 1/4 cup butter over medium heat and stir in the flour. Add milk to the mix slowly while stirring constantly. Stir in the cheeses and cook over low heat until the cheese is melted and the sauce is slightly thick. Melt remaining 2 tablespoons butter in a skillet over medium heat. Add breadcrumbs and brown. When the bacon is done cooking remove the second pie tin from the top of the crust and let it cool for a few minutes. (Pat the bacon gently with paper towel to absorb any excess grease.)
