Steps:
- Heat oven to 400° F. Spray 12 regular-size muffin cups with cooking spray, or grease bottoms only of muffin cups. Place cereal in food-storage plastic bag; slightly crush with rolling pin to make 1 1/2 cups.
- In large bowl, mix cereal, flours, brown sugar, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
- Bake 18 to 22 minutes or until golden brown. Let stand about 2 minutes in pan, then remove from pan to cooling rack. Serve warm if desired.

APPLE AND CHEERIOS™ BANANA MUFFINS
Steps:
- To prepare the muffins: Preheat the oven to 350 °F.
- In a container, combine the ground Cheerios™ with the quinoa flour, potato starch, cinnamon, baking powder, baking soda and salt.
- In a separate container, combine the coconut oil and sugar. Add the egg and mashed banana.
- Add the apples and incorporate to the Cheerios™ mix. Pour the batter into the individually-lined muffin pan.
- To prepare the topping: Combine all the ingredients and drizzle about 1/2 teaspoon of the mix over each muffin. Bake for 30 minutes or until muffins are golden brown. Serve and enjoy!

- Preheat oven to 400 degrees. Prepare 12 muffin cups with paper lining or grease. Crush the Cheerios into very small pieces. In a large mixing bowl, sift together the Cheerios, flour, brown sugar, baking powder and baking soda, Stir in all remaining ingredients just until moistened. Divide batter evenly among muffin cups. Bake about 20 minutes until golden brown. Use the toothpick test to see if they're done. A toothpick inserted in the center of a muffin should come out clean if they're finished. If batter sticks to the toothpick, give it another few minutes. You can actually use just about any breakfast cereal you want. I tried Wheaties once and it was very nice. I say Cheerios just because that was in the directions of the recipe I originally found. Enjoy!
