CHEESEBURGER MEATLOAF

2 pounds ground beef
¾ cup bread crumbs
½ cup minced onion
2 eggs, beaten
1 ½ teaspoon salt
1 ½ teaspoon pepper
3 cups shredded cheddar cheese
Ketchup and mustard to preference for glaze

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix beef, bread crumbs, onion, eggs, salt, and pepper just until the mixture comes together. Do not over-mix.
  • If using the pinwheel method, flatten your meat mixture into a 14x18 rectangle on a piece of wax paper.
  • Spread your shredded cheese on the center of your meat mixture. Leave a ¾ inch border around the edges.
  • Start forming your pinwheel loaf by rolling up your mixture like a jelly roll.
  • Pinch both ends, making sure the cheese is fully closed in.
  • Place in a 10x15 baking dish.
  • Cook for 1 hour or until the center reaches 160 degrees F.
  • If adding a glaze, put your oven temperature to 400 degree F and caramelize the glaze for 10 minutes.
  • Let sit for 10 minutes before cutting.

1/2 cup ketchup, divided
1 egg
1/4 cup dry bread crumbs
1 teaspoon onion powder
1 pound lean ground beef (90% lean)
2 teaspoons prepared mustard
2 teaspoons dill pickle relish
6 slices process American cheese

Steps:

  • In a bowl, combine 1/4 cup ketchup, egg, bread crumbs and onion powder. Crumble beef over mixture and mix well. On a large piece of waxed paper, pat beef mixture into a 10x6-in. rectangle. Spread remaining ketchup over meat to within 1/2 in. of long sides and 1-1/2 in. of short sides. Top with mustard and relish., Place four cheese slices on top; set remaining cheese aside. Roll up loaf, jelly-roll style, starting with a short side and pulling away waxed paper while rolling. Seal seams and ends well. Place loaf, seam side down, in a greased 11x7-in. baking pan., Bake at 350° for 45 minutes or until meat is no longer pink and a thermometer reads 160°. Cut the reserved cheese slices in half diagonally; place on top of loaf. Return to the oven for 5 minutes or until cheese is melted. Let stand for 10 minutes before slicing.

4 slices bacon
1 1/2 pounds lean ground chuck or ground round
1 cup firm fresh white bread crumbs
1 cup coarsely shredded sharp Cheddar cheese (4 ounces)
1 large sweet onion, such as Vidalia, chopped
2 tablespoons mayonnaise
2 tablespoons India or other sweet pickle relish
2 teaspoons dry mustard
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1 egg
1/4 cup ketchup

Steps:

  • Preheat the oven to 350°F. In a medium skillet, cook the bacon over medium heat until limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve it.
  • In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup. Bake until the loaf is firm and the bacon is crisp, 45 to 50 minutes, sprinkling the top the loaf with the remaining 1/2 cheese to melt during the last 5 to 10 minutes of baking. Let the meatloaf stand in the baking dish for 10 minutes, then cut into squares to serve.

1/4 cup chopped onion
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/2 teaspoon garlic salt
1/4 teaspoon salt
1/4 teaspoon pepper
1 loaf (1 pound) unsliced French bread
1 tablespoon butter, softened
8 ounces plain or Mexican process cheese (Velveeta), sliced

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Add soup, garlic salt, salt and pepper; simmer, uncovered for 5-10 minutes. , Meanwhile, slice the top third off the bread. Hollow out bottom half of loaf, leaving a 3/4-in. shell (discard removed bread or save for another use). Spread butter on cut side of bread. Place loaf on an ungreased baking sheet and broil 4-in. from the heat until lightly browned. , Spoon beef mixture into shell; arrange cheese slices on top. Broil 2-3 minutes longer or until cheese is melted. Replace bread top.

1 cup plain breadcrumbs
1 egg (slightly beaten)
1/3 cup onion, finely chopped
1/4 cup Heinz 57 steak sauce
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
