- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
- Whisk the flour, baking powder, baking soda, and salt together in a bowl. Cut the butter into the flour mixture until the mixture resembles course crumbs. Stir the onion, Parmesan cheese, and Cheddar cheese into the flour mixture. Pour the buttermilk into the bowl; stir until evenly combined. Drop by 1/4-cupfuls onto prepared baking sheet, about 2 inches apart.
- Bake in the preheated oven until the tops of the biscuits are lightly browned, 12 to 15 minutes. Serve warm.

- Preheat oven to 425 degrees with racks in upper and lower third positions. Line two baking sheets with parchment.
- In a large bowl, whisk together flour, baking powder, baking soda, sugar, salt, and cayenne pepper. Work butter into flour mixture with a pastry cutter or your fingers until butter is incorporated and pea-size lumps remain. Stir in cheddar, then buttermilk and chives, just until dough comes together.
- Using two spoons, drop 1/4 cup quantities of dough onto prepared baking sheets, spaced 2 inches apart.

- Combine flour, baking powder and salt. Cut in butter (could do this in a food processor)to make coarse crumbs. Add cheese and chives.

- Whisk first 6 ingredients in a medium bowl to blend. Cut in butter until mixture resembles coarse meal. Add both cheeses and rosemary. Mix with fork. Combine the buttermilk and egg in a small bowl. Add the buttermilk mixture to the flour/cheese mixture stirring until the dough is evenly moist. Drop about 1/4 c. per biscuit onto a parchment lined baking sheet. You can freeze at this point. Store once frozen in a zip lock bag. If frozen bake at 450' for about 18-20 minutes. If baking unfrozen bake at 450' for about 16-18 minutes. - Preheat oven to 450° F. Lightly grease or line a baking sheet with parchment paper and set aside. In a medium mixing bowl, use a pastry cutter to cut the butter into the baking mix until there are small chunks of butter about the size of peas. Stir in the cheddar cheese and garlic powder. Using a large fork or spoon, lightly stir mixture together while drizzling in the milk, only until the mixture is combined. Do not overmix as it will result in tough biscuits. Drop 1/3 cup portions of the dough onto the baking sheet (I used an ice cream scoop). Bake for 12 to 14 minutes, or until the tops of biscuits are beginning to lightly brown. Make the Garlic Butter while the biscuits are baking by melting butter is a small bowl in the microwave. Stir in garlic salt and parsley. When biscuits are done, use a brush to spread the Garlic Butter over the tops of the biscuits. If desired, sprinkle a little kosher salt on the top of the biscuits.
SCALLION & CHEDDAR DROP BISCUITS - VEGAN
Veganized from Gourmet Magazine. These were fantastic! Made for St. Patrick's Day 2012. They turned out fluffy and flaky and were so simple. I used Daiya brand vegan Cheddar cheese shreds, and reduced the amount of cheese to 1 full cup (instead of 1 1/2, which was in the regional recipe) I also used my Pampered Chef Large cookie scoop to make the drop biscuits puffy and even!
