CHEATERS RUSSIAN KHRUSTY
Years ago when I was a scout leader our troop was working on an International badge, which each troop member brought a recipe and a dish for everyone to taste. This is one of my favorite of those recipes. Its a pastry-like cookie that is deep fried and sprinkled with confectioners sugar.

Steps:
- Cut 1 sheet at a time of egg roll wrappers from corner to corner to form a triangle.
- Fold two corners on long side of triangle to form a smaller triangle (does not have to be precise).
- In a skillet with about 1" deep oil -- fry a few triangles at a time until they are light golden brown in hot oil. Each Khrusty only takes 1-2 minutes to reach desired color.
- Warning: Watch out as oil splatters.
- Drain on absorbent paper and sprinkle with confectioner's sugar.
- Enjoy!

- Cook the linguine according to package directions.
- Add broccoli for last 4 minutes of cooking time.
- Drain.
- Heat butter in skillet.
- Add chicken and cook until browned (if precooked until heated) Combine soup, milk, cheese and pepper, whisk until smooth.
- Add linguine mixture and heat through.

- In a large bowl, beat the eggs, egg yolks, cream and vanilla. Beat in sugar. Combine flour and salt; stir into the egg mixture just until smooth (dough will be soft). Divide into 4 portions. , On a well-floured surface, roll out 1 portion to 1/8-in. thickness. Cut into 1-1/2-in. strips; cut strips diagonally into 3 pieces. Cut a 1-1/2-in. slit lengthwise into the center of each piece; pull 1 end of strip through slit to make a loop. Cover shaped pieces while rolling out and cutting the remaining dough., In a deep cast-iron or electric skillet, heat 2-3 in. of oil to 375°. Fry pastries, in batches, until golden brown, turning once. Drain on paper towels. Dust with confectioners' sugar.

KHRUSTYKY (UKRANIAN PASTRY)
Also called 'Ears', this pastry is light and crunchy. Really easy to prepare, and makes a HUGE batch of Khrustyky.. (which works out wonderfully for holidays when you'll have plenty of friends or family around to enjoy them!)

Steps:
- Beat the eggs and egg yolks together until light in colour.
- Beat in sugar, cream, salt, rum or brandy (or extract).
- Stir in the flour.
- This dough should be soft.
- Cover and let rest for 10 minutes.
- Roll out small amounts of dough at a time, with LOTS of flour on your rolling surface, put flour on top of the dough and on your rolling pin.
- (this dough is very sticky otherwise).
- Roll to 1/8 inch or thinner.
- Keep the un-used dough covered to prevent drying out.
- Cut the dough into long strips, about 1 1/4 inches wide.
- Then further cut the strips into 2 1/2 or 3 inch segments, diagonally (they will look like 2 1/2 inch long and 1 1/4 inch wide diamonds.) Make a slit in the center (about 1/2 inch long in the middle, lengthwise...) Grasp the bottom tail of the Khrustyky, put it through the slit in the middle, and pull it gently back down to the bottom.
- (this will form a twist in the dough) continue to do this to each piece of dough.
- (I roll out a small portion, cut and form my Khrustyky, and set them on a plate. Once my small bit of dough that I've rolled out is all used up, I fry these in the deep fryer before moving on to another piece of dough to roll and cut).
- Deep fry a few at a time (I'm comfortable doing 7 at a time), in oil at 375 F until light brown.
- These puff up as you fry them, making a delectible treat.
- Drain on paper towels.
- Sprinkle confectioner's sugar over the drained Khrustyky.
- Enjoy!
ANGEL WINGS - KHRUSTY
This very dainty pastry is simple, quick and loved by everyone, especially children, as finger food. Not very rich and not too sweet either. Steps:
- Mix all ingredients together to form dough smooth enough to roll out.
- Place your dough on a floured board, or counter top.
- Use a rolling pin and roll out the dough very thin, 1/8 inch thick or slightly thinner.
- Use pizza cutter, and cut 1 inch wide slices, then cut these into 3 inches long pieces.
- Make a lengthwise slid in the middle of each of the 1 x 3 inch pieces, leaving at least ¼ inch from each end.
- Pull one end through the slid, to form a twist.
- Fill a frying pan with canola oil, about 2 inches deep.
- Heat the oil to about 200 degrees (to test the oil, drop in one piece of dough, and if it starts to sizzle, the oil is ready).
- Place your angel wings in the hot oil, as many as you can fit without crowding them.
- Fry for one minute on one side.
- Turn them over (I use a fork), and fry on the other side for another minute.
- Using tongs, remove golden fried angel wings onto a platter lined with paper towel, to absorb any excess oil.
- Cool them completely.
- Sprinkle generously with powdered sugar on both sides.

CHEATER ALMOST KOLACHES
Okay, so you're not anywhere near the Texas Hillcountry, but you are craving kolaches. Or you ARE in the Texas Hillcountry but you don't really feel like making a real yeast dough and you're craving kolaches. What do you do? Cheat.

Steps:
- Preheat oven to 375 degrees.
- Either mix up a batch of your favorite biscuit dough and cut into 16 pieces or open a can of biscuits (the flaky kind is my favorite) and separate each biscuit into half (this should give you 16 biscuit halves).
- Take the 2 slices of cheese, cut each into 4 strips, and then cut those in half the other direction, giving you 16 short strips.
- Place 1 strip of cheese and 1 sausage onto each biscuit piece and wrap dough around them. Place seam side down on an ungreased cookie sheet.
- Bake for 15-20 minutes, until golden brown. Brush the tops with melted butter and serve warm.
- You can of course, substitute any of your favorite kolache fillings.
