A better, healthy version of the original Asian ramen salad with fresh ingredients. Ramen salad is a quick and easy favorite at any potluck!

1 package ramen noodles ((3 ounces))
2/3 cup sliced almonds
2 tablespoons sesame seeds
1 bag coleslaw mix ((16 ounces))
1 1/2 cups shelled frozen edamame (thawed)
1 cup shredded carrots
4 scallions (thinly sliced (both white and green parts))
1/2 cup canned mandarin orange segments in light syrup (rinsed and drained)
1/4 cup rice vinegar
3 tablespoons extra-virgin olive oil
2 tablespoons honey (substitute agave if vegan)
1 tablespoon low-sodium soy sauce
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F. Crumble the ramen noodles onto a baking sheet and spread them in a single layer along with the almonds. Bake for 5 minutes, remove from the oven, add the sesame seeds, and toss, then bake for 1 to 3 additional minutes until fragrant and golden. Watch closely so that the mixture does not burn. Set aside.
  • In a small bowl, briskly stir together all of the dressing ingredients: rice vinegar, olive oil, honey, soy sauce, salt, and pepper. (Alternatively, you can shake them together in a mason jar with a tight-fitting lid.)
  • In a serving bowl, toss together the coleslaw, edamame, carrots, scallions, and toasted ramen and almonds. Drizzle the dressing over the top, then toss again to combine. Sprinkle the oranges over the top, then refrigerate until ready to serve.

I use to make this a lot when I was in college. I recently made it for lunch for my boys and they loved it. This is a cheap, easy and quick lunch or dinner. No there is nothing gourmet about this recipe :)

2 (3 ounce) packages beef-flavor ramen noodles
1 (10 ounce) bag Doritos
1 lb ground beef
2 cups shredded cheddar cheese

Steps:

  • Cook ramen noodles according to package directions. (only add one of the seasoning packets- reserve the other for later).
  • Drain.
  • Cook ground beef adding one of the seasoning packets to the beef mixture.
  • Mix beef and ramen noodles.
  • On a plate, place doritos to make a "bed" for the beef mixture.
  • Place beef mixture on top of doritos and top with cheddar cheese.
  • Enjoy.

13 ounces nacho cheese flavor Doritos (you will only use half of the bag)
1 (11 ounce) bag lettuce (Dole Brand 11 oz bag)
3 roma tomatoes (chopped)
6 large black olives (finely chopped)
1 (9 ounce) can nacho cheese dip (Old Dutch brand)
2 cups cheddar cheese (shredded)
1 cup mozzarella cheese (shredded)

Steps:

  • Stir the lettuce, tomatoes, olives, nacho cheese dip and the shredded cheese together until well blended.
  • Next, add half of the bag of Doritos and stir them into the salad. The chips will naturally break into smaller pieces. (Save the rest of the chips for later!).
  • **Some of you might like to add a zesty taco-seasoned meat to the salad.**.
  • Serve.

1 tablespoon plus 1/2 cup olive oil, divided
1/2 cup slivered almonds
1/2 cup sunflower kernels
2 packages (14 ounces each) coleslaw mix
12 green onions, chopped (about 1-1/2 cups)
1 medium sweet red pepper, chopped
1/3 cup cider vinegar
1/4 cup sugar
1/8 teaspoon pepper
2 packages (3 ounces each) chicken ramen noodles

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium heat. Add almonds and sunflower kernels; cook until toasted, about 4 minutes. Cool., In a large bowl, combine coleslaw mix, onions and red pepper. In a small bowl, whisk vinegar, sugar, pepper, contents of ramen seasoning packets and remaining oil. Pour over salad; toss to coat. Refrigerate until serving. Break noodles into small pieces. Just before serving, stir in noodles, almonds and sunflower kernels.
