Crock-Pot Chicken and Dumplings image

1 small bag sliced carrots or 2 large carrots, sliced on the diagonal
1 large sweet or white onion, sliced or cut into small chunks
2-3 lb boneless chicken breasts
2 tsp salt
1 tsp pepper
1 can (14 oz.) chicken broth
Canned biscuits

Steps:

  • Place carrots and onions in bottom of crock-pot. Add chicken breasts. Top with salt, pepper, and broth.
  • Cover and cook 6-8 hours on low.
  • Break open biscuits; pull each biscuit into four pieces and toss into the broth. Cook on high for 20-30 minutes.
