1 1/2 cups all-purpose flour, sifted
1 1/2 cups cake flour, sifted
1 tablespoon baking powder
1/2 teaspoon table salt
2 cups granulated sugar
2 sticks (1 cup) unsalted butter, at room temperature
1 cup Champagne, flat
1/3 cup milk
5 large egg whites
1/4 teaspoon cream of tartar
1 1/4 cups heavy cream
1 tablespoon nonfat powdered milk
1 teaspoon vanilla extract
6 to 8 tablespoons confectioners' sugar
5 large egg whites
1 1/4 cups granulated sugar
3 sticks (1 1/2 cups) unsalted butter, cut into cubes, at room temperature
1/2 cup pureed fresh strawberries
2 teaspoons pure vanilla extract
1/4 teaspoon fine salt
Splash lemon juice
2 cups fresh strawberries, washed and dried, diced

Steps:

  • For the pink champagne cake: Preheat the oven to 350 degrees F. Lightly coat three 8-inch cake pans with cooking spray.
  • Whisk together the all-purpose flour, cake flour, baking powder and salt in a medium mixing bowl. Set aside.
  • Combine the granulated sugar and butter in a large bowl and beat with an electric mixer until light and fluffy, about 3 minutes. With the mixer on low, add one-third of the flour mixture to the creamed butter mixture. Mix until the flour is just blended. Combine the Champagne and milk. Beat in half of the Champagne mixture. Alternate adding the flour mixture and the Champagne mixture, ending with flour and incorporating fully. Set aside.
  • Beat the egg whites with an electric mixer just until foamy. Add the cream of tartar and beat until stiff peaks form. Gently fold one-quarter of the egg whites into the batter. Then fold in the remaining egg whites.
  • Spoon the batter into the prepared cake pans. Bake until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool the cakes in the pans on a wire rack for 10 minutes, then remove from the pans and cool completely.
  • For the stabilized whipped cream: Pour the heavy cream into a medium bowl. Add the powdered milk, vanilla and 6 tablespoons of the confectioners' sugar. With an electric mixer, beat the cream until it reaches stiff peaks, adding additional confectioners' sugar if needed for desired consistency. (Makes 2 cups.)
  • For the strawberry Swiss meringue buttercream: Place a glass bowl over a saucepan filled with approximately 1 inch of water; bring to a simmer. Add the egg whites and granulated sugar to the bowl. Cook, whisking constantly, until the egg whites are hot, the sugar is dissolved and the temperature of the mixture has reached about 140 degrees F. (You can test this by rubbing a small amount between your fingers to make sure it's not gritty.)
  • Pour the hot egg mixture into the bowl of a stand mixer. Beat with the whisk attachment until the bottom of the bowl is no longer warm and the meringue is thick and glossy, 7 to 10 minutes.
  • Slowly add the butter cubes, one at a time, until incorporated. The mixture may curdle; keep beating and it will come back together. Continue beating until the mixture is silky and smooth. If it becomes too thin, refrigerate for around 15 minutes and then beat until it comes together.
  • Add the pureed strawberries, vanilla extract, salt and a splash of lemon juice. Mix until smooth. (Makes 5 cups.)
  • To assemble the cake: Fold the diced strawberries into the stabilized whipped cream, then spread half of the strawberry whipped cream on the top of one cake layer. Place a second cake layer on top of the filling. Repeat with the remaining half of the whipped cream. Place the third cake layer on top of the second. Frost the entire cake, top and sides, with the strawberry Swiss meringue buttercream.

1 ⅓ cups pink Champagne
3 eggs
⅓ cup vegetable oil
3 tablespoons cherry juice
3 drops red food coloring

1 tablespoon confectioners' sugar
1 tablespoon half-and-half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 8-inch round cake pans.

1 1/4 cups champagne, room temperature
1/3 cup vegetable oil
3 egg whites
4 or 5 drops red food color

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Spray bottoms and sides of two 8- or 9-inch round cake pans with baking spray with flour.
  • In large bowl, stir together cake mix and 1 1/4 cups champagne. Add oil, egg whites and food color; beat with electric mixer on medium speed 2 minutes. Pour into pans.
  • Bake as directed on box for 8- or 9-inch rounds. Cool 10 minutes. Remove cakes from pans to cooling racks. Cool completely, about 1 hour.

This is a very easy to make cake that tastes elegant! I got this out of a magazine years ago and every year i have to hunt for it so now am posting on Zaar for safe keeping. UPDATE: There used to be a white cake mix that had no oil added to it but it has since been discontinued. For the cake mix use the specified amount of oil on the cake mix box and amount of eggs. this is just to replace the water.

18 1/4 ounces white cake mix, no pudding, and must be white to taste champagne
1/2-3/4 cup champagne, chilled (pink, white, sweet, dry)
1 cup butter, softened
4 cups powdered sugar
1/4 cup milk
1/4 cup champagne
1 tablespoon vanilla
5 -5 1/2 cups additional powdered sugar

Steps:

  • Use a box of white cake mix (NO pudding) and substitute champagne - 1/2 to 3/4 cup to replace all of the liquid called for in the cake mix. So if the box says 3/4 cup water replace with 3/4 cup champagne. I did use one that had 1 1/4 cups water and replaced with champagne, just depends on the cake mix brand you buy. The kind of champagne/sparkling wine (pink, white, sweet, dry) used will determine the flavor. I usually just buy the cheap pink sparkling stuff in the grocery store, it's sweet and yummy in this!
  • Tint with red food coloring to a soft pink, use a drop at a time, this stuff will stain, probably take about 3 drops.
  • Bake cake as instructed on box. I usually make in 9x13-inch pan, but for an elegant layer cake use two 9 round cake pans, a heart pan would be perfect for Valentine's Day!
  • Creamy champagne frosting:.
  • Beat 1 cup softened butter for 30 seconds. Gradually add 4 cups powdered sugar.
  • Beat in 1/4 cup milk, 1/4 cup champagne, and 1 TB vanilla.
  • Beat in 5-5 1/2 more cups powdered sugar till you can spread it or is consistency you want.
  • Add red coloring till pink color, again slowly add a drop at a time till color you want. Frost completely cooled cake.
  • This is excellent served the next day after being refrigerated all night so the flavors can blend!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C), Grease and flour one 9 inch round and one 9x13 inch pan.
  • In a very large bowl stir together flour, sugar, baking powder, soda, and salt.
  • Add milk, 1 cup shortening, 1/2 cup champagne, vanilla, and, if desired, red food coloring. Beat on low to medium speed about 30 seconds or just till combined, scraping bowl constantly. Beat on medium speed 2 minutes.
  • Add unbeaten egg whites and beat for 2 minutes (Batter may appear slightly curdled).
  • Spread 2 3/4 cups batter in 9inch round pan and remaining batter in 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes for round cake and 40 to 45 minutes for rectangular cake or until cake tests done. Cool cakes in pans on racks for 10 minutes, then remove from pans and cool completely.
  • To make the frosting: In a bowl beat 3/4 cup shortening and butter until combined. Beat in 1 tablespoon champagne. Beat in sifted powdered sugar and a few drops red food coloring. If necessary, beat in additional champagne to make frosting spreading consistency. Makes 3-3/4 cups.
  • Using cardboard circle patterns of 4 and 6 inches, cut one 4-inch and one 6-inch cake layer from the 9x13 inch cake. If desired, drizzle 3 tablespoons of champagne over the top of each round cake layer. Place the 9-inch cake layer on a serving plate; frost sides and top. Lining up the backs of the layers, place the 6-inch cake on top of the 9-inch cake. Frost sides and top. Repeat with remaining 4-inch cake. If desired, tint any remaining frosting and decorate with tinted frosting and flowers. Serves 24.

1 1/4 cups extra dry Champagne
1/3 cup vegetable oil
3 large egg whites
1 can whipped white frosting
1/4 teaspoon Champagne flavoring
Silver mini disco balls, optional
Silver Dragees, optional, if available in your area
Silver edible glitter, optional

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat the bottom of a 9 by-13-inch cake pan with cooking spray.
  • In a large mixing bowl combine the cake mix, Champagne, vegetable oil, and egg whites. Beat on low speed with an electric mixer until just combined. Scrape down the sides of the bowl with a rubber spatula and continue beating on medium speed for 2 minutes. Pour into the prepared cake pan and bake for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Remove it from the oven and cool completely.
  • Empty the frosting into a small bowl and add the Champagne flavoring. Stir to combine and set aside.

3/4 cup whipping cream
10 tablespoons unsalted butter, cut up
2 teaspoons light corn syrup
1/4 cup unsalted butter
6 large eggs
1 cup sugar
1/8 teaspoon salt
2 teaspoons vanilla
1 cup all-purpose flour
2 1/2 cups sweet champagne or 2 1/2 cups sparkling wine, divided
1/4 cup sugar
1 (12 ounce) package frozen raspberries
1/2 cup seedless raspberry jam, divided

Steps:

  • Finely chop 12 oz. of the white chocolate and place in large bowl; reserve remaining 4 oz. chocolate for garnish. Place remaining frosting ingredients in medium saucepan; cook over medium heat 2 to 3 minutes or until butter is melted and cream is hot (do not let cream boil). Pour over chocolate; let stand 3 to 4 minutes or until chocolate is soft and melted. Gently whisk until smooth.
  • Pour into 13x9-inch baking pan. Refrigerate 2 to 4 hours or until frosting is of spreadable consistency.
  • Meanwhile, heat oven to 350°F Spray 2 (9x2-inch) round baking pans with nonstick cooking spray. Line bottoms with parchment paper. Spray paper with nonstick cooking spray; lightly flour.
  • To make cake, melt 1/4 cup butter in small saucepan over low heat or in microwave. Skim foam from top; cover to keep warm.
  • In large bowl, whisk together eggs, 1 cup sugar and salt until blended. Set bowl over saucepan of barely simmering water (bowl should not touch water). Cook 2 to 3 minutes or until sugar is dissolved and mixture is warm to the touch, whisking constantly. Remove from heat.
  • Beat at medium-high speed 5 minutes or until mixture is pale and thick; beat in vanilla. Sift half of flour over egg mixture; gently fold until combined. Sift and fold in remaining flour. Stir about 1 cup of the cake batter into melted butter. Fold mixture back into batter. Divide batter between cake pans.
  • Bake 18 to 20 minutes or until golden brown and toothpick inserted in center comes out clean. Cool on wire rack 10 minutes. Run small knife around pan edges to loosen; invert onto rack; cool completely.
  • Meanwhile, make syrup. Combine 1/2 cup of the Champagne and 1/4 cup sugar in medium saucepan. Bring to a boil over medium-high heat, stirring occasionally. Boil 2 to 3 minutes or until reduced to 1/2 cup. Place in small bowl; cool to room temperature.
  • To make sauce, place remaining 2 cups Champagne in another medium saucepan. Bring to a boil over medium-high to high heat; boil until reduced to 1 to 1 1/4 cups, about 10 minutes. Stir in raspberries and 1/4 cup of the jam; reduce heat to low. Simmer 1 minute or until jam is melted and raspberries are thawed. Cool slightly. Place mixture in food processor or blender; process until smooth. Strain through sieve to remove seeds. Cover and store in refrigerator.
  • To assemble cake, place one layer on serving platter or cardboard round. Brush with half of the syrup; spread with remaining 1/4 cup of the jam. Spread about 1/2 cup of the frosting over raspberry jam (don't worry if layers blend together). Top with second cake layer. Brush with remaining half syrup; frost top and sides of cake with remaining frosting. Using vegetable peeler, make chocolate curls or shavings. Press curls onto sides of cake. Store in refrigerator; let stand at room temperature 30 minutes before serving. Serve with raspberry sauce.

1 tablespoon vanilla extract
1 (8 ounce) jar hot fudge topping
3 (1.75 quart) containers vanilla ice cream, softened
1 (8 ounce) jar caramel ice cream topping
1 (7 ounce) jar marshmallow cream (such as Marshmallow Fluff®)
3 cups heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and line the bottom of five 8-inch cake pans with parchment paper.
  • Beat butter and white sugar together in the bowl of a stand mixer fitted with the paddle attachment on medium-low speed until creamy and light, 3 to 5 minutes.   • Carefully remove cakes from the pans. Add 1 final layer of ice cream to 1 cake and top with the other cake.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until stiff peaks form. Spread whipped cream over entire cake; freeze until set, at least 30 minutes. Drizzle caramel over cake before serving.

1 cup egg white (7 to 8 eggs)
2 1/4 cups cake flour
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 cup salad oil
5 egg yolks
1/2 cup water
1/2 teaspoon cream of tartar
1/2 teaspoon coconut extract
1/2 teaspoon vanilla
1 (3 1/2 ounce) package vanilla instant pudding mix
1 cup half-and-half
1 cup whipping cream
1 tablespoon brandy (see below for option)
3 tablespoons champagne
1 teaspoon clear vanilla
1 (1/3 ounce) envelope unflavored gelatin
1 pinch salt
6 tablespoons granulated sugar
2 eggs, separated
1 1/4 cups milk
1 cup heavy cream
1 teaspoon vanilla
1/2 teaspoon almond extract or 1/2 teaspoon rum extract, to taste

Steps:

  • In a large bowl of an electric mixer, let egg white warm to room temperature about 1 hour.
  • Preheat oven to 325°F.
  • Sift flour with sugar, baking powder and salt into another bowl. Make a well in the center.
  • Add in order: oil, egg yolks, 1/2 cup water, vanilla and coconut extract. Beat with a spoon until smooth.
  • In the large bowl of an electric mixer, at high speed, beat egg whites with cream of tartar until stiff peaks form when beater is lifted.
  • With a wire whisk or rubber scraper, using an over and motion, gently fold egg yolks/flour batter mixture into egg white mixture until just blended.
  • Pour into two 8-inch round cake pans which have been greased and floured. Bake 30 to 35 minutes or until top springs back when lightly touched. You can split each of these layers to make 4 layers, if desired.
  • Ice with the following recipe.
  • Champagne Icing.
  • Mix all ingredients together; beat with mixer until thickened. Split cake and spread between layers and all over cake. Grate pink, chocolate or tinted coconut over top of cake. Refrigerate.
  • Bavarian Cream - Optional.
  • The day before making cake, or early in the day, in a double boiler combine gelatin, salt, 2 tablespoons sugar. Stir in egg yolks. Then slowly add milk. Cook over boiling water, stirring until moisture coats the spoon. Remove at once.
  • Refrigerate until slightly thicker than unbeaten egg whites. Beat egg whites until they form moist peaks when the beater is raised. Gradually add 1/4 cup of the sugar, beating until stiff. Fold into yolk mixture along with whipped cream, vanilla. Leave in bowl until ready to use.

1/3 cup oil
3/4 cup pink champagne
4 -6 drops red food coloring
1/4 cup cold water
1/2 cup hot water
1.5 (7 g) packets unflavored gelatin
3/4 cup pink champagne
3/4 cup butter
2 1/2 cups powdered sugar
3 tablespoons milk
1 1/2-2 cups candy sprinkles (rosà )

Steps:

  • For the Cake:.
  • Follow instructions on cake box; use hand mixer to combine.
  • To the bowl of cake batter add pink champagne.
  • Mix with hand mixer.
  • Add red food coloring, mix until the batter has a pink hue.
  • Fill 2 loaves cake pans with the cake batter.
  • Bake at 350F for 30 minutes.
  • For the Poke Filling:.
  • In a small bowl, pour in cold water, add the gelatin, and once the gelatin begins to solidify, add hot water.
  • Add pink champagne.
  • For the Frosting:.
  • In a medium bowl, hand mix butter, powdered sugar and milk until the buttercream is thick and fluffy.
  • For the Assembly:.
  • After the 2 cakes are cooled down, poke holes using the BBQ skewers throughout the cake; make sure to poke in deep, and approximately 1/4 inch spaces between the perforations.
  • Pour the gelatin mixture so that it drains into the holes.
  • For the bottom cake layer, trim the top so that it's flat.
  • Apply the frosting to the top.
  • With the 2nd cake, trim the top so that too is flat and even.
  • Place the 2nd cake on top of the 1st cake.
  • Cover the entire cake tower with the buttercream frosting.
  • Then cover the entire cake tower with the rosé sprinkles.
  • Insert the sparklers on the top and ignite with a flame.

This cake is extremely moist and wonderfully delicious! It is elegant and very simple to make. Also works great as cupcakes. I've tried a couple of different recipes for champagne cake, and after trial and error I combined the best and voila! Enjoy. :) I usually prepare this a day in advance and refrigerate overnight.

1 (18 ounce) box white cake mix (NO PUDDING if possible)
3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1/2-1 1/2 cup champagne (I've found that Asti is best)
1 (3 1/2 ounce) package vanilla or 1 (3 1/2 ounce) package French vanilla instant pudding
1 cup half-and-half
1 cup whipping cream
3 tablespoons champagne
1 teaspoon vanilla
fresh sliced strawberry (raspberries work well too)

Steps:

  • Follow directions on cake box, substituting champagne in place of water (add vegetable oil and eggs as the recipe asks for, only omit the water). The amount of champagne you add will depend on the brand of cake mix you buy, but it always turns out great! You can also add food coloring in this step if desired for a more festive effect. The most common is a "pink" champagne cake.
  • Bake according to the directions on the box. A layered cake (two 8" or 9" rounds) is best for this recipe!
  • While cake is baking, combine pudding, half-and-half, whipping cream, 3 tbsp champagne, and vanilla together and beat with a mixer until thickened.
  • Refrigerate until you're ready to frost the cake.
  • Once cake is completely cooled, put a layer of frosting on top of one of the cakes, and top with fresh strawberries.
  • Place other cake on top of strawberries, and frost the whole thing.
  • Refrigerate until eating.

16 oz. white chocolate, divided
3/4 cup whipping cream
10 tablespoons unsalted butter, cut up
2 teaspoons light corn syrup
CAKE
1/4 cup unsalted butter
6 large eggs
1 cup sugar
1/8 teaspoon salt
2 teaspoons vanilla
1 cup all-purpose flour
SYRUP, FILLING AND SAUCE
2 1/2 cups sweet Champagne or sparkling wine, divided
1/4 cup sugar
1 (12-oz.) pkg. frozen raspberries
1/2 cup seedless raspberry jam, divided
Finely chop 12 oz. of the white chocolate and place in large bowl; reserve remaining 4 oz. chocolate for garnish. Place remaining frosting ingredients in medium saucepan; cook over medium heat 2 to 3 minutes or until butter is melted and cream is hot (do not let cream boil). Pour over chocolate; let stand 3 to 4 minutes or until chocolate is soft and melted. Gently whisk until smooth.
Pour into 13x9-inch baking pan. Refrigerate 2 to 4 hours or until frosting is of spreadable consistency.
Meanwhile, heat oven to 350°F. Spray 2 (9x2-inch) round baking pans with nonstick cooking spray. Line bottoms with parchment paper. Spray paper with nonstick cooking spray; lightly flour.
To make cake, melt 1/4 cup butter in small saucepan over low heat or in microwave. Skim foam from top; cover to keep warm.
In large bowl, whisk together eggs, 1 cup sugar and salt until blended. Set bowl over saucepan of barely simmering water (bowl should not touch water). Cook 2 to 3 minutes or until sugar is dissolved and mixture is warm to the touch, whisking constantly. Remove from heat.

  • 6. Beat at medium-high speed 5 minutes or until mixture is pale and thick; beat in vanilla. Sift half of flour over egg mixture; gently fold until combined. Sift and fold in remaining flour. Stir about 1 cup of the cake batter into melted butter. Fold mixture back into batter. Divide batter between cake pans. 7. Bake 18 to 20 minutes or until golden brown and toothpick inserted in center comes out clean. Cool on wire rack 10 minutes. Run small knife around pan edges to loosen; invert onto rack; cool completely. 8. Meanwhile, make syrup. Combine 1/2 cup of the Champagne and 1/4 cup sugar in medium saucepan. Bring to a boil over medium-high heat, stirring occasionally. Boil 2 to 3 minutes or until reduced to 1/2 cup. Place in small bowl; cool to room temperature. 9. To make sauce, place remaining 2 cups Champagne in another medium saucepan. Bring to a boil over medium-high to high heat; boil until reduced to 1 to 1 1/4 cups, about 10 minutes. Stir in raspberries and 1/4 cup of the jam; reduce heat to low. Simmer 1 minute or until jam is melted and raspberries are thawed. Cool slightly. Place mixture in food processor or blender; process until smooth. Strain through sieve to remove seeds. Cover and store in refrigerator. 10. To assemble cake, place one layer on serving platter or cardboard round. Brush with half of the syrup; spread with remaining 1/4 cup of the jam. Spread about 1/2 cup of the frosting over raspberry jam (don't worry if layers blend together). Top with second cake layer. Brush with remaining half syrup; frost top and sides of cake with remaining frosting. Using vegetable peeler, make chocolate curls or shavings. Press curls onto sides of cake. Store in refrigerator; let stand at room temperature 30 minutes before serving. Serve with raspberry sauce.

1 1/4 c pink champagne or cherry 7-up
1/3 c vegetable oil
3 large eggs,beaten
3 or 4 dash(es) red food coloring drops
FROSTING:
1/4 c pink champagne or cherry 7-up
1 tsp vanilla extract
3 or 4 dash(es) red food coloring drops
1/2 c butter, softened
4-5 c powdered sugar

Steps:

  • 1. Cake: Heat oven to 350^. Spray a 9x13-inch pan,or 2 8-round cake pans or place 24 cupcake papers in muffin pans. In a large bowl, combine cake mix, champagne, add beaten eggs and food coloring. Beat 2 minutes. Pour into prepared pan or fill 23 full the cupcake papers. Bake cake 25-35 minutes. 1 box(es) duncan hines moist deluxe strawberry supreme cake mix
1 box(es) jello sugar free/fat free white chocolate instant pudding mix
1 cup(s) pink champagne (i used andre's pink champagne)
3 - eggs
2/3 cup(s) sour cream
1/3 cup(s) milk

Steps:

  • Line two nine inch round cake pans with parchment paper. Pre heat your oven to 350 degrees.
  • Using a mixer in a large bowl for 2 minutes. Mix the ingredients using the milk last and adjust the amount of milk according to the consistency of the batter. Less if the consistency seems too thin or more if it seems too thick.
  • Divide the mixed batter into the two pans and bake according to cake mix directions.
  • Test the cake with a toothpick. Lightly insert the pick into the center of the cake. It should come out clean when the cake is done. Let the cake cool in the pans for 15 minutes then completely on wire racks before icing.

Steps:

  • Prepare Champagne Cake I as directed, but bake in two 9 inch round pans. Allow to cool. When cool, put together with coconut filling.
  • Coconut Filling: Over boiling water in double boiler, melt 16 marshmallows, butter and wine. Remove from heat and add coconut.
  • Fondant Frosting: Sift powdered sugar in top of double boiler. Add corn syrup and water. Stir over boiling water until smooth. Add the vanilla, salt and almond flavoring. For pink champagne effect, add 2 or 3 drops red food coloring.
  • Keep frosting warm so it spreads evenly. With spoon, carefully pour fondant over top and sides of cake. Slice marshmallows into 4 rounds each, dip in fondant and place at random on top of cake.

Steps:

  • Make Chocolate Truffles: In a small saucepan, combine the sweetened condensed milk, semi-sweet chocolate, cocoa powder and salt. Place the pan over medium high heat and bring to a gentle boil, stirring constantly with a wooden spoon. Reduce heat to medium-low and cook 10 to 15 minutes, stirring constantly, until mixture is thick and shiny and starts to pull away from bottom and side of saucepan. The mixture is going to get thick. Remove from the heat and stir in the butter and vanilla until melted and smooth. Pour mixture into glass bowl, cover and place in the fridge for at least 1 1/2 hours or overnight. Rub some softened butter over hands and scoop out rounded teaspoons of the chocolate mixture, roll into 1 to 1 1/2 inch balls. Place half of the balls on one parchment lined baking sheet and the other half on another parchment lined baking sheet. Place one sheet in the fridge and one sheet in the freezer. Leave the one sheet of truffles in the fridge until ready to assemble the cake. Freeze the other sheet for 30 minutes and then once frozen, dip each truffle in melted chocolate and place back on the baking sheet lined with parchment paper until dry and firm. Store in tightly covered container in the refrigerator for up to 1 week. Make the Cake: Preheat the oven to 350 degrees F. Grease three 8 inch (or 9 inch) round cake pans. Line with parchment paper, then butter or spray with cooking spray. In a medium size bowl combine the flour, sugar, unsweetened cocoa powder, baking soda, baking powder and salt. Set aside. In the bowl of a stand mixer (or use a hand held mixer) beat together the eggs, buttermilk, canola oil and vanilla until smooth. Slowly add the dry ingredients to the wet ingredients with the mixer on low until there are no longer any clumps of flour. Add the champagne and hot water, mix until combined. Batter should be pourable, but not super thin. Pour the batter among the 3 cake pans and bake 20 to 25 minutes, until the tops are just set and no longer wiggly in the center. Remove and let cool five minutes, then run a knife around the edges of the pan. Grab 3 large flat plates, line them with wax or parchment paper and invert the cakes onto the paper-lined plates. Cover and let the cakes cool completely before frosting. Make the Truffle Filling: Bring 1 cup of the cream to a simmer in a medium saucepot set over medium heat. Next, put the chocolate in a heatproof bowl. Add the hot cream and let stand until the chocolate softens, about 3 minutes. Stir until smooth. Let cool slightly, about 15 minutes. The chocolate should still be pourable. Meanwhile, whip the remaining 1 1/4 cups cream in the bowl of a stand mixer fitted with the whisk attachment on high until soft peaks begin to form. Stir the whipped cream over the cooled chocolate mixture until combined and smooth. Be very careful not over mix, or the filling will get lumpy. Assemble the Cake: Place 1 layer, flat side up, on a plate or cake stand. With a knife or offset spatula, spread the cake with the truffle filling. Remove the reserved truffles from the fridge and place half of them on top of the filling. Place the second layer on top of the truffles, gently pushing down on the cake to adhere. Spread the remaining truffle filling evenly on the top and then add the remaining truffles. Add the third layer of cake and press gently to adhere. In a bowl of a stand mixer, beat together the butter and powdered sugar until creamy and fluffy. Add the salt, champagne and vanilla, beat until smooth. 1 cup/8oz. Orange Almond Champagne (or Sparkling Wine) The brand I got is made by Wilson Creek, called "Orange Mimosa".

Steps:

  • Preheat the oven to 350 degrees
  • Mix Ingredients in a stand mixer or bowl and pour into a greased bundt pan
  • Bake at 350 according to the box directions (our oven is finicky and ended up being done at 30 mintues)

  • Citrus Champagne Frosting
  • 4 cup of orange juice
  • 4 cup champagne (can omit and sub in more orange juice)
  • lb of powdered sugar (I made mine with about 3/4 of a lb.)
  • **In a bowl, pour in champagne and OJ, slowly add in the powdered sugar and whisk as you go, mixing it to the desired consistency.
  • **Pour frosting over cooled bundt cake. Top with chopped almonds if desired.
