GARLIC CHICKEN NUGGETS
A healthy version of chicken nuggets. Note that the calorie estimate will be high. You will have to drain off some olive oil during the preparation of the chicken.

Steps:
- In a tupperware bowl that has a lid, combine the chicken, water, oil, garlic, and pepper.
- Marinade the chicken for 30 minutes to 1 hour. Shake the bowl about half way through to recoat the chicken with the marinade.
- In a separate bowl mix together the bread crumbs, salt, and cayenne pepper. Set aside.
- Drain the chicken.
- In a one gallon Ziploc, mix together the chicken and bread crumb mix.
- Preheat the oven to 425.
- Layout the chicken on a cookie sheet in a single layer. (Throw out excess breading that may be in the bag. It will burn if not on the chicken.).
- Cook at 425 for 15 minutes. Flip them half way through.

ASIAN-STYLE CHICKEN NUGGETS
This recipe comes from two different cultures: Asian and American--just like me! This is a very simple recipe. I recommend deep-frying the chicken in a pot or saucepan instead of a frying pan so that it doesn't make a mess on the stove top. Enjoy!

- Defrost frozen chicken breast, if needed.
- In a small mixing bowl, mix together honey, soy sauce and ginger to create your marinade.
- Cut chicken breast into bite-sized pieces and marinate them in the honey mixture.
- Take the chicken and cover it in cornstarch, then in the beaten egg, then in the breadcrumbs.
- Deep-fry the chicken nuggets.
- Serve hot or cold.

- Beat eggs and milk together in a bowl.
- Cut chicken to desired size and dip in egg/milk mixture.
- In another bowl, combine flour, salt blend (I use Morton Nature's Season seasoning blend) and pepper. Coat chicken pieces in flour mixture.
- Heat oil in frying pan ( I use about 1/4 cup) and brown chicken on both sides. Drain on paper towel, then place in a 9 x 13 baking dish. Cover and bake at 325 for 30 minutes.

- Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
- Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.

- Instructions.
- Fill fryer or heavy bottomed pot with at least 2 inches of peanut oil. Bring to 350 degrees F.
- Combine remaining ingredients except chicken in a medium bowl and whisk until smooth.
- Add chicken and toss to coat. Let sit in fridge while oil heats up (10 minutes).
- When oil is ready fry the chicken pieces in batches, until golden brown (about 4-5 minutes). Remove chicken from fryer and let drain on a paper towel lined plate.
