GARLIC CHICKEN NUGGETS

A healthy version of chicken nuggets. Note that the calorie estimate will be high. You will have to drain off some olive oil during the preparation of the chicken.

2 boneless chicken breasts, cut into bite-sized pieces
1/4 cup water
1/8 cup olive oil
1 tablespoon garlic powder
1/4 teaspoon pepper
1/2 cup breadcrumbs
1/4 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • In a tupperware bowl that has a lid, combine the chicken, water, oil, garlic, and pepper.
  • Marinade the chicken for 30 minutes to 1 hour. Shake the bowl about half way through to recoat the chicken with the marinade.
  • In a separate bowl mix together the bread crumbs, salt, and cayenne pepper. Set aside.
  • Drain the chicken.
  • In a one gallon Ziploc, mix together the chicken and bread crumb mix.
  • Preheat the oven to 425.
  • Layout the chicken on a cookie sheet in a single layer. (Throw out excess breading that may be in the bag. It will burn if not on the chicken.).
  • Cook at 425 for 15 minutes. Flip them half way through.

This recipe comes from two different cultures: Asian and American--just like me! This is a very simple recipe. I recommend deep-frying the chicken in a pot or saucepan instead of a frying pan so that it doesn't make a mess on the stove top. Enjoy!

1 chicken breast
2 1/2 tablespoons honey
2 tablespoons soy sauce
1/2 teaspoon minced ginger
cornstarch
1 egg, beaten
1 cup breadcrumbs
vegetable oil

Steps:

  • Defrost frozen chicken breast, if needed.
  • In a small mixing bowl, mix together honey, soy sauce and ginger to create your marinade.
  • Cut chicken breast into bite-sized pieces and marinate them in the honey mixture.
  • Take the chicken and cover it in cornstarch, then in the beaten egg, then in the breadcrumbs.
  • Deep-fry the chicken nuggets.
  • Serve hot or cold.

3 lbs boneless skinless chicken breasts, cut into pieces
4 eggs
1/2 cup milk
2 cups flour
1 -1 1/2 teaspoon salt
1/4 teaspoon pepper
oil (for frying)

Steps:

  • Beat eggs and milk together in a bowl.
  • Cut chicken to desired size and dip in egg/milk mixture.
  • In another bowl, combine flour, salt blend (I use Morton Nature's Season seasoning blend) and pepper. Coat chicken pieces in flour mixture.
  • Heat oil in frying pan ( I use about 1/4 cup) and brown chicken on both sides. Drain on paper towel, then place in a 9 x 13 baking dish. Cover and bake at 325 for 30 minutes.

4 cups all-purpose flour
6 tablespoons garlic salt
3 tablespoons ground black pepper
4 eggs, beaten
8 skinless, boneless chicken breast halves - cut into small chunks

Steps:

  • Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
  • Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.

2 tablespoons flour
2 tablespoons cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
2 tablespoons water
2 tablespoons dry sherry
1 tablespoon peanut oil (or vegetable oil)
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
peanut oil (for frying)

Steps:

  • Instructions.
  • Fill fryer or heavy bottomed pot with at least 2 inches of peanut oil. Bring to 350 degrees F.
  • Combine remaining ingredients except chicken in a medium bowl and whisk until smooth.
  • Add chicken and toss to coat. Let sit in fridge while oil heats up (10 minutes).
