Steps:

  • To make Indian Fry Bread Mix dry ingredients together.
  • Cut in shortening; then add milk.
  • Shape dough into a long cylinder; cut into 8 equal parts.
  • Flour hands, then work the pieces into 6" tortillas.
  • Fry in oil until golden brown.
  • To Make filling Mix dried onion with water in a small bowl and let stand for five minutes.
  • Combine ground beef, flour, chili powder, paprika, and salt.
  • Mix well.
  • Add onions and water.
  • Mix again.
  • In a skillet, cook beef mixture until browned.
  • Stir often while cooking so no large chunks form; it should be more like a paste.
  • Remove from heat and keep warm.
  • Build Chalupas starting with meat, then sour cream, lettuce cheese, and tomatoes in that order.
  • Top with hot sauce or salsa if desired.

3/4 cup sour cream
1 small avocado, pitted and diced
4 tomatoes, seeded and chopped
1 head iceberg lettuce, shredded
3 cups cheddar cheese, shredded
2 lbs ground chicken, white meat
2/3 cup all-purpose flour, plus more for rolling
1/2 cup cornstarch
2 teaspoons kosher salt
1 teaspoon granulated sugar
1 teaspoon white vinegar
1/2 teaspoon Accent seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 (6 ounce) can cooking spray
1/4 cup buttermilk
2 large eggs
2 cups all-purpose flour
1 cup unseasoned breadcrumbs
1 teaspoon kosher salt
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon sweet paprika

Steps:

  • In the bowl of a blender or food processor combine ingredients for Creamy Avocado Ranch Sauce. Blend until completely smooth. Transfer to a small container, cover and refrigerate until ready to use.
  • In the bowl of a food processor combine ingredients for Naked Chicken Chalupa Shell. Process until completely combined and chicken has formed a paste, about three minutes. Transfer mixture to a bowl.
  • Line two rimmed baking sheets with parchment, flour liberally.
  • Using a 1/3 cup measure lightly sprayed with cooking spray to help, divide chicken mixture into 12 portions, placing each portion on a floured baking sheet. Place both baking sheets in the freezer while you roll out chicken shells.
  • Flour a washable cutting board liberally. Transfer one chicken portion to cutting board and flour the top. Using a rolling pin, roll the chicken mixture into a 6-inch circle. If the mixture is too sticky to roll, continue to freeze it for a bit longer. Make sure the rolling pin and the work surface are well floured. Place rolled out chicken rounds back in the freezer, dividing each with parchment.
  • In a pie dish or shallow rimmed platter whisk together Wet Ingredients thoroughly.
  • In another shallow dish stir together Dry Ingredients.
  • In a large heavy bottomed pot or dutch oven, with a deep frying thermometer attached to side, heat oil over medium-high to 340°F.
  • Working one at a time, remove a rolled out chicken round from the freezer, dust off excess flour, dip in egg mixture on both sides, then Dry Mixture on both sides.
  • Using kitchen twine tie chicken round into "taco" shape. If chicken is too soft after breading, place in freezer again for a few minutes and continue with remaining rounds.
  • Before frying make sure to have kitchen scissors and tongs on hand.
  • Place Chalupa shells into hot oil one at a time. Fry for 1 1/2 minutes undisturbed. Using tongs, lift Chalupa gently to the surface of the oil. Snip string, and gently remove. Chalupa should now hold it's shape. Continue to fry until golden brown and cooked through another 2 1/2 to 3 minutes. Transfer to a paper towel lined plate. Fill with Creamy Avocado Ranch Sauce, lettuce, tomatoes, and cheddar cheese; serve immediately.

1 lb dry pinto beans, soaked overnight and drained
3 lbs lean pork roast
1/2 cup chopped onion
2 minced garlic cloves
1 tablespoon salt
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon oregano
1 (4 ounce) can green chilies, chopped
4 cups water

Steps:

  • Soak beans overnight and drain.
  • Add all ingredients to the slow cooker.
  • Cook on high for 5 hours, or on low for 10 hours, or until meat falls apart and beans are done. Every slow cooker is different! You may need to add more water.
  • If you have a bone from the roast, remove it, and "mash" beans, if you like.
  • Uncover and cook for about a 30 minutes until desired thickness is reached.
  • Serve with tortillas or tortilla chips with lots of toppings!
  • IF you end up with too many leftovers, these can be made into burritos and frozen. Just add some cheese and salsa!

Steps:

  • Put all ingredients in crock pot. Cook covered, until beans are done and meat falls apart easily; about 5-6 hours on high.
  • Shred pork and put on tortillas with cheddar cheese.
  • Note: Tapioca is a strange ingredient but it really helps the thickness of this pork. You need to buy the Quick-Cooking tapioca that may come in a little red 8 oz box. You would find this by the jello mixes. I would guess that you could use cornstarch or flour instead of tapioca but I haven't done that before.

1 bone-in pork loin roast (3 1/2 lb)

1 tablespoon chili powder
2 teaspoons salt
1 teaspoon dried oregano leaves
1 teaspoon ground cumin
1 carton (32 oz) Progresso™ chicken broth (4 cups)
1 can (10 oz) diced tomatoes with green chiles, lime juice and cilantro
1 small head iceberg lettuce, shredded
1 box (6.5 oz) Old El Paso™ taco salad shells (8 shells), heated as directed on box

Steps:

  • Spray 6-quart slow cooker with cooking spray. In slow cooker, place beans; top with pork roast. Add green chiles, garlic, chili powder, salt, oregano and cumin. Pour broth evenly over top of pork.
  • Cover; cook on High heat setting 6 hours. Remove pork from slow cooker to large plate; remove bones and fat. Pull pork into large pieces with 2 forks; return to slow cooker. Stir in tomatoes. Cook uncovered 1 hour or until liquid is slightly thickened.

6 corn tortillas (or premade fried chalupa shells)
2 tablespoons olive oil
2 tablespoons lime juice
1/2 teaspoon chili powder
1 teaspoon Dijon mustard
1 head iceberg lettuce, shredded
2 radishes, thinly sliced
1/4 cup cilantro leaf, loosely packed
1/4 cup basil leaves, chopped (or 1 teaspoon dried basil)
1/4 cup scallion, chopped
salt and pepper, to taste
8 ounces cheddar cheese, grated
6 tablespoons low-fat sour cream

Steps:

  • When you are ready to assemble the chalupas, preheat oven to 350 degrees F.
  • Lightly spray cookie sheets with nonstick cooking spray.
  • Place the tortillas in a single layer. Bake tortillas for 20 minutes until crispy and golden brown. (Do not turn over.)
  • While the tortillas are baking, place the olive oil, lime juice, chili powder and Dijon mustard in a bowl and whisk until blended.
  • Add the lettuce, radishes, cilantro leaves, basil and scallions to the above ingredients. Toss to combine.
  • Season with salt and pepper to taste and toss again.
  • Keeping the just-baked tortillas on the cookie sheet, spread 1/4 cup of the White Bean Dip on each tortilla and sprinkle with 2 Tablespoons of shredded cheddar cheese.
  • Heat in oven at 350 degrees F until cheese is melted-about 5 minutes.
  • Top each tortilla with salad mix, avocado salsa, sour cream and remaining cheese. If you have extra tortillas, cut them into quarters and bake them to use as garnish.

I found several recipes for this and just tweaked it to make it work for me.. Was yummy and my family love it!

3 lb chicken breast
2 can(s) cream of chicken soup
1 can(s) rotel tomatoes and green chilies
1 pkg sour cream 16 oz
1 medium onion
2 lb cheese
1 pkg tortillas, flour

Steps:

  • 1. Boil the chicken breast. (I added celcery, carrots, and an onion so that I could use the broth later for soup or fried rice.) After the chicken is cooked allow to cool so that it can be shreaded.
  • 2. I'm not a fan of crunchy onions so I always sauté them first with a little butter or margerine but this can be done in the same pot you use to cook the chicken mixture.
  • 3. In a large pot add the chicken, rotel tomatoes (I use the generic ones), cream of chicken soup, onion and the sour cream and cook until warm and bubbly. (You can substitute one can of cream of mushroom if you prefer)
  • 4. Cut tortillas into quarters. In a large 3 quart baking pan place one layer of tortillas into the bottom of pan. Next spoon on a layer of the chicken mixture. Top this with a layer of the cheese. I used 1 lb of Monzeralla and 1 lb of Monterray Jack mixed together. Then repeat layers until all ingredients are used up.
  • 5. Bake at 350 for 45 minutes. I covered mine with aluminum foil to prevent the top from drying out. Let it set and cool for approximately 10-20 minutes then cut and serve.
  • 6. Some additions or changes: you could serve with salsa, sour cream, or what ever you like. I'm thinking of adding ranch dressing next time I make it and even possibly some bacon crumbles. Also, you could use corn tortilla's instead of the flower ones. Enjoy!

CROCK-POT CHALUPA

This is basically a Mexican pork and pinto bean stew. A favorite to serve during neighborhood bonfires where I lived in Mississippi. Even better served with a fistful of Freetos! I use a bone-in pork shoulder roast for this- cutting as much meat off the bone as is easy but always throwing the bone into the pot as well. If you use a leaner cut of pork it just doesn't come out right at all- neither the texture nor the flavor. Another keeper from my ex mother-in-law.

Pass remaining ingredients as toppings.

2 burrito-size flour tortillas
2 tablespoons caesar salad dressing
1/2-1 cup caesar salad dressing
2 -3 cups lettuce (preferably romaine)
1 -2 cup mozzarella cheese, shredded (depending on how much you like)
1 (6 ounce) package Oscar Mayer Deli Fresh Oven Roasted Chicken Breast Cuts
1 -2 large tomatoes, diced (or 1 can diced tomatoes, drained well)
crouton (optional)
black pepper (optional)

Steps:

  • Preheat oven to 350.
  • Put tortillas on baking sheet, spread a thin layer of dressing (1 Tablespoon or so) on each tortilla and cook in oven for about 3 minutes.
  • Remove from oven and sprinkle with cheese (enough to cover the tortilla and to your taste), half the chicken, and a few handfuls of tomatoes. Sprinkle with pepper.
  • Put back into oven and cook about 8-10 minutes (you can take out earlier, we like ours crispy). Meanwhile, mix lettuce with salad dressing and croutons.

1 8-10oz jar red salsa
1 8-10oz jar green salsa
1 8 oz. bag shredded cheddar, colby or jack cheese
10 flour tortillas
1/4 - 1/2 cup chopped cilantro

  • Preheat oven to 350. Mix salsas together. Put 2-3 TBSP salsa in bottom of 13X9 casserole dish and spread evenly. Place one layer or tortillas on bottom of dish. You may cut tortillas to fit. Combine rest of salsa, chicken and 1/2 of cilantro. Spread 1/2 of chicken mixture in dish on top of tortillas, top with cheese and repeat layers with tortillas, rest of chicken and cheese. Top with remaining cilantro. Cover and bake 30 min., remove cover and bake additional 10 minutes or until cheese starts to bubble/brown.

In this Spanish dish, called Chalupa, a savory pork roast bakes with beans until the meat is so tender you can shred it with a fork. Because the dish bakes for such a long time the beans do not need prior soaking. Serve this chili-like mixture with desired condiments such as chopped tomatoes, avocado, onions, shredded cheese, taco or hot sauce.

1/2 cup green pepper, chopped
1/2 cup onion, chopped
1 garlic clove, minced
1 (14 ounce) can low-sodium low-fat chicken broth
1 (16 ounce) can fat-free refried beans (or 2 cups cooked pinto beans, mashed)
4 ounces minced smoked turkey breast, deli, mesquite-smoked
1/2 teaspoon chili powder (to taste)
1 dash Tabasco sauce (to taste)
2 tablespoons low-fat cheddar cheese
1/2 cup chopped tomato
1 cup baked corn tortilla chips

Steps:

  • In a medium soup kettle over medium heat, cook pepper, onion and garlic in 1/4 cup of the chicken broth, stirring, until tender.
  • Add the beans, stir till smooth then add the rest of the broth, minced turkey, chili powder and Tabasco sauce.
  • Stir and cook until heated through.

  • 1. Preheat oven to 350F. Spray large ovenproof dish with cooking spray. 2. Remove chicken meat from bones and shred. Discard bones and skin. 3. Lay 1 or 2 tortillas in bottom of baking dish, overlapping slightly. Layer tortillas with chicken, cheese, and salsas. Repeat layers until baking dish is full. Finish with cheese and salsas. 4. 1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon dried oregano
1/2 teaspoon garlic powder
4 ounces chopped green chilies
15 ounces black beans
1/2 cup salsa, plus some
salt
baked tortilla
shredded non-fat cheese
chopped tomato
shredded lettuce
taco sauce

Steps:

  • Spray a large non-stick skillet with cooking spray. Heat skillet over high heat for 30 seconds. Add turkey, sprinkle with seasonings and saute until browned and no longer pink. Add black beans, green chilies and salsa; cover skillet and simmer over low heat for 15 minutes.
