4 cups half-and-half cream
3 chai tea bags
2 bars (3-1/2 ounces each) 70% cacao dark chocolate, chopped
2 ounces milk chocolate, chopped
1 teaspoon vanilla extract
Dash salt
Optional: Sweetened whipped cream and cinnamon sticks

Steps:

  • In a large saucepan, heat cream and tea bags over medium heat until bubbles form around sides of pan (do not boil). Remove from the heat; steep 5 minutes. Remove tea bags; whisk in the chocolates, vanilla and salt until smooth. Return to the heat; cook and stir until heated through. Pour into mugs; top with whipped cream and cinnamon sticks.

½ cup milk
1 chai tea bag
1 (.55 ounce) package instant hot chocolate mix

Steps:

  • Stir the water and milk together in a microwave-safe mug. Cook on high in the microwave for 1 1/2 minutes. Remove, and add the chai teabag. Allow tea to steep about 2 minutes. Remove the tea bag, and stir in the hot chocolate mix.

4 cups low-fat (1%) milk
3/4 cup bittersweet chocolate chips
10 cardamom pods, coarsely cracked
1/2 teaspoon whole allspice, cracked
2 cinnamon sticks, broken in half
1/2 teaspoon freshly ground black pepper
5 tablespoons (packed) golden brown sugar, divided
6 quarter-size slices fresh ginger plus 1/2 teaspoon grated peeled fresh ginger
1 teaspoon vanilla extract, divided
1/2 cup chilled whipping cream

Steps:

  • Combine first 6 ingredients, 4 tablespoons brown sugar, and ginger slices in medium saucepan. Bring almost to simmer, whisking frequently. Remove from heat; cover and steep 10 minutes. Mix in 1/2 teaspoon vanilla.
  • Meanwhile, whisk cream, remaining 1 tablespoon brown sugar, grated ginger, and remaining 1/2 teaspoon vanilla in medium bowl to peaks.
  • Strain hot chocolate. Ladle into 6 mugs. Top each with dollop of ginger cream.

VEGAN CHAI HOT CHOCOLATE

Don't compromise on flavour or creamy consistency with vegan hot chocolate; this spiced drink made with oat milk is the perfect winter warmer

350ml oat milk (use barista-style for a creamy texture)
1 tsp organic cocoa powder
½ tsp ground cinnamon, plus extra to serve (optional)
½ tsp ground nutmeg, plus extra to serve (optional)
1 cardamom pod
½ tsp ground coffee
1 organic vanilla bean pod, split (or use 1 tbsp vanilla extract)
1 tbsp agave nectar
vegan whipped cream and shaved semi-sweet vegan dark chocolate, to serve (optional)

Steps:

  • Pour two-thirds of the oat milk into a saucepan. Add the cocoa, cinnamon, nutmeg, cardamom pod and coffee. Bring to the boil over a medium-high heat. Cook for 1-2 mins.
  • Reduce the heat to medium and stir in the vanilla and agave. Froth the remaining oat milk using an electric milk frother or the mini whisk attachment on a hand blender. Strain the hot chocolate into two mugs, discarding the cinnamon and cardamom pod, then gently pour in the frothed milk.
  • Top with whipped cream, chocolate shavings and a pinch each of cinnamon and nutmeg, if you like.

32 ounces good-quality white chocolate, such as Callebaut, chilled and coarsely chopped
1 vanilla bean, cut lengthwise and chopped
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 1/2 teaspoons ground cardamom
1 teaspoon fresh coarse ground black pepper
1/4 teaspoon ground cayenne pepper

Steps:

  • Place about 12 ounces chocolate and chopped vanilla bean in food processor. Pulse just until chocolate is granular. Transfer to a large bowl.
  • 2. Place about 10 ounces chocolate and ground ginger in processor. Pulse just until chocolate is granular. Add to chocolate-vanilla bean mixture.
  • 3. Place remaining chocolate, nutmeg, cardamom and peppers in processor. Pulse just until chocolate is granular. Add to chocolate-vanilla bean mixture. Stir well.
  • 4. Spoon into half-pint jars or small zip-lock bags. Makes about 7 ½ cups.
  • Hot Chocolate Chai: Pour 1 cup scalded milk into a mug. Add 2 to 4 tablespoons mix; whisk well.
  • White Christmas Lattes: Combine equal parts strong coffee and Hot Chocolate Chai.
  • White Chocolate Chai Fondue: Heat 1/3 cup heavy cream in a small saucepan over medium heat; add 1 cup mix and whisk.
