Grandma's own! Adjust the milk to the thickness you like. Works with bacon, too. Serve hot over freshly baked biscuits!

1 pound ground pork sausage
3 tablespoons all-purpose flour
3 cups milk

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
  • Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
  • Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

This is my version of savory chaffles (cheese waffles).

nonstick cooking spray
2 cups shredded Cheddar cheese
4 large eggs
1 cup low-carb baking mix (such as Carbquik®)
½ cup milk
¼ cup coconut flour
salt to taste
1 pound bulk mild pork sausage (such as Jimmy Dean®)
½ cup chicken broth
¼ cup heavy cream
2 ounces cream cheese, softened
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
1 pinch paprika, or to taste
ground black pepper to taste

Steps:

  • Spray a waffle iron with cooking spray; preheat according to manufacturer's instructions.
  • Mix Cheddar cheese, eggs, baking mix, milk, coconut flour, and salt together.
  • Cook in 1/2 cup batches in the preheated waffle iron until waffle is golden brown and the iron stops steaming, about 5 minutes.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add chicken broth, cream, and cream cheese; stir to combine and add garlic powder, onion powder, paprika, and pepper. Cook down until thickened and reduced, 5 to 10 minutes. Serve chaffles with gravy on top.

This Chaffle Recipe is ultra crispy, yet fluffy and so flavorful! This keto breakfast is quick, easy, and can be made sweet or savory.

3/4 cup freshly shredded cheese of choice (pepperjack, cheddar, colby jack etc.)
2 tablespoons finely grated parmesan cheese
2 large eggs
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place shredded cheese, parmesan, eggs, garlic powder, salt, and pepper into a medium sized bowl, then whisk until well combined.
  • Spray pre-heated waffle maker with cooking spray, then cook according to manual*, until the chaffle is cooked through and crispy. This should take about 3 minutes.
  • Serve as desired.**
