WHOLE GRAIN BREAKFAST COOKIES
My sister and I love something sweet with our coffee in the morning. We created this recipe to make a wholesome breakfast. I generally double the batch and keep them in the freezer. They taste even better frozen (still soft!). Whole grains, fiber, and protein and no butter! Can it really be delicious? Yes! My kids can't keep their fingers out of the batter. I decided to add it to Allrecipes because everyone keeps asking me for the recipe. Enjoy!

- Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- Pulse the walnuts in a food processor several times to chop; continue processing until the walnuts are ground into flour; transfer to a bowl. Mix in the rolled oats, whole wheat flour, flax meal, baking soda, salt, and cinnamon until thoroughly combined.
- Combine the almond butter, canola oil, agave nectar, brown sugar, egg, and vanilla extract in the food processor and process a few seconds to blend the ingredients well; transfer the almond butter mixture to a large bowl and fold in the dried cherries and chocolate chips. Mix the walnut-oatmeal mixture into the almond butter mixture (dough will be very thick).
- Scoop up heaping teaspoons of dough, and form into balls; lay the dough balls onto the prepared baking sheets, about 2 inches apart.
- Bake in the preheated oven until lightly browned, 8 to 10 minutes. Remove from oven and flatten the cookies with a spatula. Allow to cool for about 5 minutes on the baking sheets before removing to finish cooling on wire racks.

These are great cookies and easy. My picky son loves them. If you don't have butter you can substitute 7/8 cup oil.

DOUBLE CHOCOLATE AGAVE WHOLE WHEAT COOKIES
I came up with this recipe because I wanted a cookie that I didn't have to feel guilty about eating. Just remember it is a healthier version of a cookie and will not taste like a cookie with all of the sugar and fat. But I really do like eating them.

- Mix softened butter and agave until completely mixed together, no chunks of butter should be left.
- Add in vanilla and egg whites and mix again until all mixed together.
- Then add in whole wheat flour, baking soda, salt and cocoa powder, mix slowly at first and then mix on med-high until all mixed together.
- Then hand stir in chips.
- Next, on a cookie sheet spoon out about a tablespoon of cookie mix and drop on pan. (I use the pampered chef tablespoon scoop that works great). Don't mash them down just leave them in a ball.
- Cook them in a preheated oven at 375 degrees for 7 MINUTES only. Do not overcook. As soon as you take them out of the oven, take a small spatula and flatten them to about 1/2" thick. This helps get rid of the cakiness of the cookie and gives them more of a cookie texture.
- They are awesome if you put them in the fridge before you eat them. Store in an airtight container in the fridge.
AGAVE OATMEAL COOKIES
Agave replaces sugar in these, lowering the GI. Use light or amber for best flavor.

- 1. Preheat oven to 325F. Line 2 baking sheets with parchment paper.
- 2. Using an electric mixer, in a large bowl cream the butter with the agave and light and fluffy, about 2 minutes. Beat in the eggs, one at a time, and stir in vanilla and orange zest.
- 3. In a separate bowl, combine flour, oats, falxseed meal, cinnamon, baking soda and salt. Add to butter mixture and stir until just combined. Fold in dried cranberries (or raisins).
- 4. Drop by heaping tablespoonfuls onto prepared baking sheets and using the back of a spoon, flatten slightly and bake 12 minutes, or until slightly browned.
- 5. Cool on wire rack.
AGAVE OATMEAL RAISIN FLAX COOKIES
Amazing sugar-free cookies that taste great and are made with whole wheat flour. Kids love these and they are perfect for teaching healthy eating. They are also vegan.

- Preheat the oven to 325°F.
- Mix together the margarine and agave nectar.
- In a separate bowl, whisk together 2 Tablespoons flax seed meal with 4 Tablespoons of water. Add to margarine/agave.
- Add in remaining dry ingredients: 1/2 cup flax seed meal, whole wheat pastry flour, vanilla extract, ground cinnamon, baking soda, sea salt.
- Mix in oats then raisins on low.
- Measure about 1/4 cup of cookie dough (I use an ice cream scoop) per cookie onto ungreased cookie sheets and flatten slightly. Cookies do not spread much so you can bake them rather close together.
- Bake for 12-14 minutes until the edges are slightly browned.

- Preheat oven to 350 degrees F. Line cookie sheet with parchment paper. In a medium bowl, combine ground cereal and oats. Toss. Add agave, oil, vanilla and egg. Mix until a thick sticky batter forms. Fold in chocolate chips. Using 1 round tablespoon, scoop cookie dough onto baking sheets. You should get about 1 dozen or so. AGAVE COCONUT OATMEAL COOKIES
I wanted to try coconut oil and agave for baking cookies and didn't find a recipe online that struck my fancy, so I took one and tinkered with it, adding coconut and chocolate, and leaving out other ingredients. These are NOT sugar free, but much lower in sugar than cookies using brown sugar.

- 2. In a large bowl, using a hand mixer, beat oil, agave, eggs and vanilla until well blended.
