4 large vidalia onions (peeled and sliced into 1/8 inch thick slices)
3 medium apples (peeled and sliced into 1/8 inch thick slices)
6 slices bacon (cooked and crumbled, reserve 2 tablespoons of the fat)
3/4 cup chicken broth
1/2 cup breadcrumbs

Steps:

  • Layer the onions, apples and bacon in a 2 quart casserole.
  • Pour the chicken broth over all.
  • Cover and bake at 350°F for 45 minutes.
  • While baking, saute bread crumbs in 2 tablespoons bacon fat.
  • Uncover casserole and sprinkle top with the toasted bread crumbs.
  • Bake for an additional 15 minutes.

Celeriac, Potato, Leek and Apple Soup image

A sweet and savory mixture that works well as a soup. I've always loved the combination of celeriac, potatoes and apples, which I first tasted in France as a celeriac, potato and apple purée. The sweet and savory mixture works very nicely as a soup. I like to strain this soup after I purée it to get a velvety texture.

Number Of Ingredients 11

1 tablespoon extra virgin olive oil
1 medium onion, chopped
2 leeks, white and light green part only, halved lengthwise, cleaned and sliced or chopped
Salt to taste
2 pounds celeriac, peeled and diced (retain tops for bouquet garni and garnish)
1 large russet potato (about 3/4 pound), peeled and diced
2 granny smith or braeburn apples, cored, peeled and diced
2 quarts water, chicken stock, or vegetable stock
A bouquet garni made with a bay leaf and a couple of sprigs each thyme and parsley, and a stem or two of the celery from the celery root, if still attached
Freshly ground pepper to taste
Slivered celery leaves for garnish

Steps:

  • Heat the olive oil in a large, heavy soup pot over medium heat and add the onion, leeks and a pinch of salt. Cook, stirring, until tender, about 5 minutes. Add the celeriac and a generous pinch of salt, cover partially and cook for another 5 minutes, stirring often, until the celeriac has begun to soften. Add the potatoes, apples, water or stock, salt to taste, and the bouquet garni. Bring to a boil, reduce the heat, cover and simmer 1 hour, or until the vegetables are very tender and the soup is fragrant. Remove and discard the bouquet garni.
  • Blend the soup in batches in a blender (cover the top with a towel and hold it down to avoid hot splashes), or through a food mill fitted with the fine blade. The soup should be very smooth. Strain if desired. Return to the pot. Stir and taste. Adjust salt, add freshly ground pepper, and heat through. Serve in small bowls or espresso cups, garnished with thin slivers of celery leaves.

1 stick butter
2 large onions, sliced into 1/4 inch slices, separated into rings
6 large cooking apples, such as northern spy or golden delicous, peeled, cored and sliced 1/4 inch thick
2 Tbsp sugar
2 tsp cinnamon, ground
kosher salt and freshly ground black pepper to taste
30 round buttery crackers, finely crushed
1 c apple cider or apple juice

Steps:

  • 1. Preheat oven to 325-degrees. In a large skillet, melt 2 tablespoons of butter over medium-low heat.
  • 2. Add onions and saute` until golden, about 10 minutes, stirring occasionally.
  • 3. Remove onions with a slotted spoon and set aside. In the same skillet melt 3 tablespoons of butter over medium-low heat. Add apples and cook until golden, about 12-15 minutes, stirring occasionally.
  • 4. Butter a 1 1/2 quart casserol dish and spread half of the apples over the bottom. Top with half of the onions; sprinkle with 1 tablespoon sugar, 1 teaspoon cinnamon, salt and pepper to taste, and half of the cracker crumbs. Repeat layers.
  • 5. Pour apple cider over the top and dot with the remaining 3 tablespoons of butter.
  • 6. Bake, uncovered, until casserole is bubbling up in the center, about 1 hour.

Steps:

  • Heat oven to 350.
  • Thoroughly wash whole celeriac and pat dry; brush the outside with olive oil, sprinkle liberally with coarse salt and bake for 1 to 2 hours (for celeriac, longer is better; many vegetables will be done sooner), until the outside is roasted and evenly crisp and the inside is tender.
  • Remove from the oven, cut up if you like (you can also sprinkle with more oil and salt) and serve. (Yes, you can eat the skin.)

A lovely tasty side dish to compliment any meal. If you are not watching calories etc add a couple tbsp of butter and top with some buttered crumbs. Add some cheese if you wish but it is also delish just plain. I like to use hot paprika.

2 cups celery root, pared and diced 3/4-inch pieces
1 cup apple, peeled, chopped
1 cup onion, chopped
3/4 teaspoon oregano, dried
salt & pepper
1 teaspoon paprika

Steps:

  • Prepare the celeric and par boil it for 5 minutes.
  • In a baking dish mix together the onion, apple. oregano and celeric.
  • Sprinkle with paprika.
  • Cover with foil.
  • Place in 375 preheated oven for 30 miutes.
  • Season with salt & pepper.
