I saw this made on the Food Channel and I'm putting it on here cause it looked so good! UPDATE: I have made this and of course, it is delicious!

9 slices commercial whole wheat bread (about 8 ounces)
2 cups walnuts (about 8 ounces)
3 large eggs
3 medium onions, diced
1 small green bell pepper, diced
1 stalk celery, minced
1 bunch parsley, stems discarded and leaves chopped
2/3 cup canned crushed tomatoes or 1 (16 ounce) can diced tomatoes, drained very well
1 1/2 tablespoons canola oil
1 teaspoon poultry seasoning
1 teaspoon salt
generous seasoning fresh ground black pepper
1/4 cup unsalted butter
2 cups thinly sliced mushrooms (8 ounces)
1/4 cup unbleached flour
2 1/2 cups vegetable stock, store-bought or homemade
1/4 cup dry red wine
2 tablespoons tamari soy sauce
fresh ground black pepper

Steps:

  • Toast the bread slices either in the toaster or on a baking sheet placed under the broiler.
  • Let cool.
  • Preheat the oven to 375 degrees F.
  • Generously butter a 9 by 5-inch loaf pan, then line the bottom with waxed paper and butter the paper.
  • Tear up the toasted bread slices and make crumbs out of them in a food processor.
  • Place in a large bowl.
  • Process the walnuts until finely ground and mix into the bread crumbs.
  • Combine the eggs and onions in the processor and process until fine but not liquefied.
  • Stir into the bread crumbs.
  • Place the green pepper, celery, parsley, tomatoes, and oil in the processor and grind until fine but still with some texture.
  • Stir into the loaf mixture along with the poultry seasoning, salt, and pepper.
  • Mix this all very well until evenly moistened.
  • (The mixture may be prepared to this point and refrigerated up to 8 hours in advance.) Scrape it into the prepared loaf pan and smooth over the top.
  • Cover the loaf with foil.
  • Bake 1 hour and 20 minutes, or until a knife inserted in the center of the loaf comes out dry.
  • Let sit 5 minutes, then run a knife all along the sides of the loaf to help loosen it.
  • Unmold the loaf onto a platter and remove the waxed paper.
  • Let the loaf cool 20 minutes or so before slicing it.
  • It's best to serve the loaf warm and the gravy hot.
  • Mushroom gravy: Melt the butter in a medium-size saucepan over medium heat.
  • Add the mushrooms and saute until brown, about 7 minutes.
  • Stir in the flour; it will become very pasty.
  • Cook this roux for 2 minutes, stirring constantly.
  • It will stick to the bottom of the pan a little bit; that's okay.
  • Stir in the stock, wine, soy sauce, and pepper, and bring to a boil.
  • Cook the sauce at a bubbling simmer for 5 minutes, stirring almost constantly and scraping any crusty bits that stick to the bottom of the pan.
  • Serve in a pretty gravyboat.

1 ½ cups walnuts
½ cup pecans
2 tablespoons olive oil
1 small sweet yellow onion, finely chopped
3 cloves garlic, minced
1 (6 ounce) package baby bella mushrooms, chopped
1 teaspoon dried marjoram
1 teaspoon dried sage
1 teaspoon dried thyme
12 ounces shredded Swiss cheese
1 ½ cups cooked wild rice
1 cup cottage cheese
4 large eggs, lightly beaten
2 tablespoons chopped fresh parsley
1 teaspoon salt
½ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a 9x5-inch loaf pan.
  • Put walnuts and pecans in a resealable bag and seal; crush nuts using a rolling pin.
  • Heat olive oil in a skillet over medium heat; cook and stir onion and garlic in the hot oil until onion is translucent, about 3 minutes. Add mushrooms, marjoram, sage, and thyme; cook and stir until mushrooms are golden, about 5 minutes. Transfer mushroom mixture to a large bowl.
  • Stir crushed walnut mixture, Swiss cheese, wild rice, cottage cheese, eggs, parsley, salt, and pepper into mushroom mixture until evenly mixed. Pour mixture into the prepared loaf pan.
  • Bake in the preheated oven until loaf is golden brown, about 1 hour. Let loaf cool in pan for about 20 minutes before inverting pan and removing loaf.

Walnut Quick Bread image

The perfect size for one or two people when baked in two mini loaf pans. Eat one now and store one for later. Freezes very well. Tastes best when tightly wrapped and allowed to set overnight. I like to use walnut or coconut oil, but any neutral/mild tasting oil will do fine. There are variations listed below.

1 cup white flour
1 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup sugar
1 cup walnuts, chopped
1/4 cup walnuts, chopped (optional garnish)
1 egg
3/4 cup milk
2 teaspoons vanilla
2 tablespoons oil

Steps:

  • Preheat oven to 350°F - Spray two mini loaf pans or one 8x4 loaf pan.
  • Combine dry ingredients (except optional 1/4 cup nuts) in a med size bowl; set aside.
  • Crack the egg into a measuring cup and stir to break yolk.
  • Add milk up to the 3/4 cup mark; then add vanilla and oil.
  • Make a well in the flour mixture and pour wet ingredients into the dry ingredients.
  • Mix until combined. Don't over mix. If batter is very stiff add an additional tbsp milk.
  • Transfer batter to prepared pan(s).
  • Sprinkle on optional 1/4 cup chopped nuts and lightly press down so they adhere.
  • Bake for 38 minutes or until tested done.
  • Cool on a rack for 1/2 hour. While still warm, wrap well and let set overnight for best texture. Can be frozen.
  • Variations: Pecans/rum extract; Coconut/vanilla or coconut extract; Almonds/almond extract.

This is an easy recipe to follow and it's great for any occasion. It's a very moist loaf cake, ideally cut into slices and buttered. 4 ounces pitted chopped dates
2 ounces margarine
1 cup boiling water
1 teaspoon baking soda
8 ounces self-rising flour
6 ounces brown sugar
2 ounces chopped walnuts
1 egg, beaten

Steps:

  • Place dates and margarine in a bowl with boiling water and baking soda. Gently mix with a wooden spoon until margarine has melted and dates are plumped up. Let cool to room temperature, at least 30 minutes.
  • Preheat the oven to 325 degrees F (165 degrees C). Line a 2-pound loaf pan with parchment paper.
  • Combine flour, brown sugar, and walnuts in a separate bowl. Add to bowl with the date mixture. Mix well with a wooden spoon. Add egg and mix in. Spoon mixture into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Let cool on a wire rack.
