1 tablespoon avocado oil
5 cups diced celery
5 cups finely chopped mushrooms
½ medium onion, diced
3 pounds lean ground turkey
1 tablespoon dried parsley
1 tablespoon dried thyme
2 teaspoons garlic powder
1 teaspoon ground black pepper
½ teaspoon crushed red pepper flakes, or to taste
½ teaspoon sea salt
¼ cup almond flour
1 (8 ounce) can low-sodium tomato sauce
2 medium zucchini, cut into 1/4-inch slices
4 (10 ounce) packages frozen cauliflower rice (such as Green Giant®)
⅓ cup milk
2 tablespoons butter, divided
½ teaspoon paprika

Steps:

  • Heat avocado oil in a very large skillet over medium-high heat. Add celery, mushrooms, and onion; saute until onion is translucent, 5 to 7 minutes. Crumble turkey into the skillet. Add parsley, thyme, garlic powder, pepper, red pepper flakes, and salt. Cook until turkey is no longer pink and has absorbed most of the liquid in the skillet, about 15 minutes.
  • Sprinkle almond flour over the turkey mixture and cook for 1 minute. Stir in tomato sauce until combined; cook until thickened, about 5 minutes. Transfer to a 9x13-inch baking dish and top with sliced zucchini.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cook cauliflower rice in a large nonstick skillet over medium heat, stirring occasionally, until hot, about 5 minutes. Set 1 cup aside in a large bowl. Transfer remaining cauliflower rice to a food processor with milk and 1 tablespoon butter; blend until smooth. Mix with reserved rice for added texture.
  • Spread cauliflower mixture over the meat and zucchini. Cut remaining 1 tablespoon butter into small pieces and dot over the cauliflower. Sprinkle with paprika.
  • Bake in the preheated oven until the cauliflower topping has a golden hue, 30 to 35 minutes.

1/2 teaspoon salt
1 large egg
1/4 cup grated onion
Olive oil
4 large eggs
1/2 cup milk
3 tablespoons grated Parmesan
3/4 to 1 teaspoon salt
1/4 teaspoon freshly milled black pepper
3 tablespoons butter
1 cup chopped onions
1 garlic clove, finely chopped
1 medium cauliflower, broken into small florets
2 tablespoons chopped fresh parsley
1 1/2 teaspoons chopped fresh basil, or 1/2 teaspoon dried
3/4 teaspoon chopped fresh thyme, or 1/4 teaspoon dried
1 3/4 cups grated Gruyere

Steps:

  • Preheat the oven to 400 degrees F. Generously oil a 9-inch pie pan.
  • Potato Crust: Place 2 firmly packed cups grated raw potatoes in a colander placed over a bowl; toss the potatoes with 1/2 teaspoon salt and set aside for 10 minutes. Squeeze out the excess water. Combine the drained potatoes, 1 large egg, beaten, and 1/4 cup grated onion in a medium bowl. Pat the potato mixture into the oiled pie pan, building up the sides of the crust with lightly floured fingers. Bake for 35 to 40 minutes, until golden brown, brushing the crust with oil after the first 20 minutes to crisp it.
  • Remove crust from the oven and reduce the temperature to 350 degrees F.
  • Meanwhile, beat together the eggs, milk, 1/2 teaspoon of the salt, and the pepper in a small bowl; set aside.
  • Blanch cauliflower. Melt the butter in a large skillet over medium heat. Add the cauliflower, onions, garlic, and 1/4 to 1/2 teaspoon of the remaining salt; cook, stirring frequently, until lightly browned, about 5 minutes. Add the parsley, basil, and thyme; cook, covered, for 10 minutes, stirring occasionally. Remove from the heat.
  • Layer the baked potato crust with 1/2 of the cheese, then the cauliflower mixture, then the remaining cheese. Pour the milk mixture over the top and lightly dust with paprika. Bake for 35 to 40 minutes, until set. Remove from the oven and serve.

2 cups shredded potatoes
¼ cup grated onion
1 egg, beaten
1 teaspoon salt
1 tablespoon all-purpose flour
1 ½ tablespoons olive oil
1 tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, minced
salt and pepper to taste
½ teaspoon dried basil
½ teaspoon dried thyme
1 head cauliflower, coarsely chopped
1 ½ cups shredded Cheddar cheese
2 eggs, beaten
¼ cup milk
¼ teaspoon paprika

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a shallow 9 inch baking dish or pie pan.
  • To make crust: Use a cheese cloth to squeeze extra liquid from the grated potatoes. In a medium size mixing bowl, combine potato, onion, egg, salt and flour. Transfer the mixture to the prepared pie pan, and pat it down with a rubber spatula or your fingertips. Bake for 30 minutes. Brush the crust with oil, and bake for another 10 minutes. Remove crust from oven, and reduce the oven's temperature to 350 degrees F (175 degrees C).
  • To make the filling: In a large frying pan over a high heat, heat the oil until hot. Reduce the temperature to medium and saute onion, garlic, basil, thyme, salt, pepper and paprika in the hot oil; cook for 8 to 10 minutes. Stir the cauliflower into the pan and cook for 15 minutes.
  • Spread 1/2 of the cheese onto the potato crust. Spoon the vegetables on top of the cheese. Sprinkle the remaining cheese over the sauteed vegetables. Beat the milk and eggs together in a small bowl, and then pour over the vegetables and cheese. Sprinkle paprika over the mixture.
  • Bake for 35 to 40 minutes, or until the custard is set and the top of the pie is slightly browned.

2 tablespoons coconut oil
1 cup coarsely chopped red onion
1 green bell pepper, coarsely chopped
3 mushrooms, diced
2 tablespoons butter
6 slices cooked bacon, finely chopped, divided
½ teaspoon salt
½ teaspoon ground black pepper
4 eggs
½ cup sour cream
1 ½ cups grated Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch glass pie pan with cooking spray.
  • Grate cauliflower coarsely with a box grater. Measure out 1 1/2 cup of cauliflower "rice"; press into the bottom and sides of the pan to make a crust.
  • Bake in the preheated oven until crust looks dry, about 15 minutes.
  • Melt coconut oil in a large skillet over medium heat. Add onion and bell pepper; cook and stir until softened, about 10 minutes. Add mushrooms and butter; cook and stir until mushrooms are lightly browned, about 5 minutes. Stir in 3 slices bacon. Season with salt and pepper.

1 head cauliflower, cut into bite-sized pieces
cooking spray
1 ½ pounds cooked pulled pork
1 (15 ounce) can peas, drained
½ (15 ounce) can sliced carrots, drained
1 (10.75 ounce) can condensed cream of mushroom soup
¼ cup milk
salt and ground black pepper to taste
¾ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place cauliflower in a pot and cover with water; bring to a boil. Reduce heat and let simmer until tender, 5 to 7 minutes.
  • While cauliflower is cooking, spray an 8x10-inch baking dish with cooking spray.
  • Layer the bottom of the prepared dish with pulled pork. Layer peas and carrots on top of pork. Spoon cream of mushroom over the top.

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth; gradually add broth and milk. Bring to a boil; cook and stir for 2 min or until thickened. Add the chicken, vegetables, cheese, and seasoned salt; heat through.

2 cups packed grated raw potatoes
1/2 teaspoon salt
1 egg, beaten
1/4 cup grated onion
1 cup packed grated strong cheddar cheese
1 medium cauliflower, broken into small florets

1 dash thyme
1/2 teaspoon basil

  • Set the freshly grated potato in a colander over a bowl. Salt it and leave for 10 minutes. Then, squeeze out the excess water. Beat in the egg, salt and grated onion.
  • Pat into a well oiled 9 inch pie tin, building up the sides of the crust with lightly floured fingers. Bake at 400*F for 40 to 45 minutes, until browned. After the first 30 minutes, crush with some more oil to crispen it.

1 tbsp olive oil
250g minced beef
1 large carrot , coarsely grated
1 tbsp tomato purée
200g red lentil
600ml beef stock
140g frozen pea
1 ¼kg potato , cubed
1 large cauliflower (about 400g), cut into florets
150ml milk
50g butter
100g mature cheddar , grated

Steps:

  • Heat oven to 200C/180C fan/gas 4. Heat the oil in a large pan and add the minced beef. Cook for 5 mins until browned all over, then add the carrot and cook for 2 mins more.
  • Stir in the tomato purée and add seasoning. Cook for a few mins, then add the lentils and stock. Simmer for 20 mins, then stir in the peas.
  • Meanwhile, bring a pan of water to the boil and add the potatoes. Simmer for 15 mins, then add the cauliflower and simmer for a further 10 mins until the veg is tender.
  • Drain, then return the veg to the pan for a few mins to dry out. add the milk, butter and seasoning, and mash together. Finally, add the cheese, reserving a handful, and mix well. Cover and put aside 500g of the mash mix for the sausage recipe tomorrow (see 'goes well with', right).
  • Spoon the mince into a large roasting dish, about 30 x 20cm, and spoon the mash over the top. Sprinkle with cheese and bake until golden, about 30 mins.

CRUST:
2 c packed grated raw potatoes
1/2 tsp salt
1 large egg,beaten
1/4 c grated onion
FILLING:
1 c grated sharp cheddar cheese, packed
1 medium head cauliflower, broken into small florets
1 clove garlic, crushed
1 c chopped onion
3 Tbsp butter
1/4 tsp dried thyme leaves, crushed
1/2 tsp dried basil
1/2 tsp salt
2 large eggs
1/4 c milk or cream
pepper to taste
paprika, for garnish

Steps:

  • 1. Preheat oven to 400^. Spray 9-inch pan with non stick oil;set aside. --- Crust: Set grated potatoes in a colander over a bowl. Salt the potatoes and leave for 10 minutes, then squeeze out excess water. Place potatoes in large bowl, beat in egg, salt and onion until blended.
  • 2. Pat into prepared pan, on bottom and up the sides with your floured fingers. Bake for 40-45 minutes, until browned. After 30 minutes, spray with some oil to help it get really crisp.
  • 3. In a large skillet,sauté onion and garlic in butter until soft, without browning, about 5 minutes, add herbs and cauliflower and cook covered, 10 minutes, stirring occasionally. Season to taste with salt and pepper.
  • 4. Filling: Spread 1/2 the cheeses in baked crust. Top with sautéed vegetables, then remaining cheese. beat egg and milk together, pour over cheese. Dust with paprika.
  • 5. Lower oven temperature to 375^ and bake 35-40 minute, until custard is set and pie is nice and brown.(test with table knife inserted near the center). Remove from oven and let rest 5 minutes before cutting into slices . Serve with a tossed salad as a side, if desired.

1 head cauliflower, cut into florets
1 tablespoon olive oil
2 cloves garlic, mashed
¼ cup Parmesan cheese
1 tablespoon reduced-fat cream cheese
½ teaspoon sea salt
⅛ teaspoon freshly ground black pepper
1 pound ground turkey
1 ½ cups hot water
½ cup whole wheat elbow macaroni
½ cup frozen peas
1 (1.25 ounce) envelope dry onion soup mix
½ teaspoon paprika

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover and steam until tender, 10 to 12 minutes.
  • Heat olive oil in a skillet over medium heat; cook and stir garlic until softened, about 2 minutes.
  • Blend cauliflower, garlic, Parmesan cheese, cream cheese, salt, and pepper in a blender until smooth.
  • Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir water, macaroni, peas, and soup mix into turkey; simmer until pasta is tender yet firm to the bite, 5 to 10 minutes.
  • Pour pasta mixture into a 9x13-inch baking dish. Spread cauliflower mixture over pasta mixture. Sprinkle paprika over the top.
  • Bake in the preheated oven until lightly browned, about 20 minutes.

½ cup almond milk
¼ cup chopped kale
1 teaspoon ground nutmeg
1 pound lean ground beef
1 ¼ cups sliced fresh mushrooms
2 leeks, chopped
2 carrots, chopped
½ red onion, chopped
1 clove garlic, minced
¼ cup chopped fresh cilantro

Steps:

  • Place cauliflower in a pot of boiling water; simmer over medium heat until softened, about 15 minutes. Drain and place in the bowl of a food processor. Add almond milk, kale, and nutmeg; pulse until smooth.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine ground beef, mushrooms, leeks, carrots, red onion, and garlic in a skillet over medium-high heat; cook until ground beef is brown and crumbly and vegetables are softened, 5 to 7 minutes. Spread in the bottom of an 8-inch baking dish. Top with pureed cauliflower mixture.

2 cups herbed croutons, crushed
1/4 cup melted butter or 1/4 cup margarine
1/4 cup butter or 1/4 cup margarine
1 cup chopped onion
1 clove garlic, minced
1 medium cauliflower, broken into small flowerettes
1/2 cup sliced fresh carrot
1 dash dried oregano
1/4 teaspoon salt
1 dash black pepper
1 1/2 cups grated cheddar cheese
2 eggs
1/4 cup milk

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare the Savory Pie Crust by mixing croutons and melted butter in a 9" pie shell pan.
  • Bake for 8 minutes or until golden brown@ 375.
  • Remove from oven and set aside.
  • In a large skillet, melt butter.
  • Saute onion and garlic for 3 minutes until golden.
  • Add cauliflower, carrots, oregano, salt and pepper.
  • Cover and cook for 10 minutes, stirring occasionally.
  • Sprinkle 3/4 cup of cheese into prepared pie crust; add veggie mix.
  • Top with remaining cheese.
  • In a small bowl, beat eggs and milk; pour over ingredients in pie shell.

This is a delightful way to eat cauliflower. I got this recipe at a Farmer's Market, too many years to say. I make it for a good vegetarian meal.

2 cups packed grated raw potatoes
1/2 teaspoon salt
1 egg, beaten
1/4 cup grated onion
1 cup cheddar cheese, grated
1 medium head cauliflower, broken into small flowerets

3 tablespoons butter
1/2 teaspoon basil
1/2 teaspoon salt
2 eggs
1/4 cup milk
1/8 teaspoon pepper
1 medium garlic clove, crushed

Steps:

  • Crust:.
  • Set the freshly-grated potatoes in a colander over a bowl. Salt it and leave it for 10 minutes. Then squeeze out the excess water, and add to the remaining ingredients.
  • Pat it into a well-oiled 9-inch pie pan, building up the sides of the crust with lightly floured fingers.
  • Bake at 400 degrees for 40-50 minutes, until browned.
  • After the first 30 minutes, brush the crust with a little oil to crispen it.
  • Turn oven down to 375 degrees.
  • Filling:.
  • Saute onions and garlic in butter for 5 minutes; add the basil and cauliflower and cook, covered, 10 minutes, stirring occasionaly.
  • Spread 1/2 the cheese into the baked crust, then the saute, then the rest of the cheese.
  • Beat the eggs and the milk together and pour over the vegetables.
  • Bake at 375 degrees for 35-40 minutes until set.

2 cups unsweetened plain soymilk
1 bay leaf
2 teaspoons dried tarragon
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/4 teaspoon mustard powder
1 teaspoon salt
ground pepper
1 lb cauliflower, trimmed, washed, and cut into bite-sized pieces
2 tablespoons olive oil
1 leek, thinly sliced
1 small carrot, diced
1/2 lb cremini mushroom, washed, trimmed, and sliced into large chunks
1 teaspoon sherry wine or 1 teaspoon white wine vinegar
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 pinch dried thyme
3 tablespoons margarine, chilled
4 -5 tablespoons cold water
1/3 cup pitted black olives, chopped coarsely (kalamata recommended)

Steps:

  • Preheat the oven to 375 degrees. Use a large, oven-to-table Dutch oven. If you don't have one, use a large, heavy-bottomed pot to prepare the filling and a large, deep casserole dish to bake the finished potpie.
  • Sauce:.
  • In a heavy-bottomed saucepan (not the Dutch oven) over medium heat, melt the margarine and sprinkle in the flour. Stir to form a thick paste. Cook the mixture until fragrant, bubbling, and lightly browned, 4 to 5 minutes.
  • Temporarily turn off the heat. Slowly pour in the soy milk, using a wire whisk to stir until smooth. Whisk in the dried herbs, mustard powder, salt, and bay leaf. Turn on the heat to medium and cook, stirring constantly with whisk, for 8 to 10 minutes, until a thick sauce forms. Turn off the heat, remove the bay leaf, and adjust the salt and pepper to taste.
  • Heat the oil in the Dutch oven over medium heat. Add the mushrooms, leeks and carrots, and saute for 6 to 8 minutes until most of the excess liquid from the mushrooms has evaporated. Add the cauliflower, stir briefly, cover partially, and steam for about 8 minutes, until the cauliflower has just begun to soften. Remove the lid, turn off the heat, and set aside.
  • Prepare the crust while cauliflower is cooking:.
  • Sift together the flour, baking powder, salt and thyme in a small bowl. With a pastry cutter or two knives held together cut the cold margarine until crumbs form, then drizzle in tablespoons of cold water and mix. Drizzle in additional tablespoons of cold water, one at a time, until a soft dough forms (but careful not to overwork it). Fold in the olives.
  • Pat out the dough on a lightly floured surface or give it a few rolls with a rolling pin, to form a circle or appropriate shape slightly smaller than the Dutch oven. Using a sharp knife, cut the dough into diamonds (you'll be placing small squares of dough over the casserole, rather than one big disc of dough).
  • Assemble:.
  • Give the sauce a good whisking (no worries if a skin has formed over it), pour into the cauliflower mixture, and stir completely to blend the veggie juices and sauce. Arrange the diamonds of dough over the mixture and brush with soy milk. Bake for 35 to 40 minutes, until the cauliflower is tender and the biscuits are cooked.
  • Allow to cool at least 10 minutes before serving, as the filling will be boiling hot straight out of the oven.
