Cauliflower-Leek Kugel with Almond-Herb Crust image

8 cups cauliflower florets (from 2 medium heads of cauliflower)
6 tablespoons olive oil, divided
4 cups coarsely chopped leeks (white and pale green parts; from 3 large)
6 tablespoons unsalted matzo meal
3 large eggs
1/2 cup chopped fresh parsley, divided
1/2 cup chopped fresh dill, divided
1 1/2 teaspoons salt
1/2 teaspoon coarsely ground black pepper
1/3 cup almonds, toasted, chopped

Steps:

  • Cook cauliflower in large pot of boiling salted water until tender, about 10 minutes. Drain; transfer to large bowl and mash coarsely with potato masher.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add leeks and sauté until tender and just beginning to color, about 5 minutes. Add leek mixture to cauliflower. Mix in matzo meal. Beat eggs, 1 tablespoon parsley, 1 tablespoon dill, salt, and pepper in small bowl to blend; stir into cauliflower mixture.
  • Brush 11x7-inch baking dish with 1 tablespoon oil. Spread cauliflower mixture evenly in prepared dish. Mix almonds, remaining 7 tablespoons parsley, 7 tablespoons dill, and 2 tablespoons oil in medium bowl to blend. Sprinkle evenly over kugel. (Can be made 8 hours ahead. Cover and chill.)
  • Preheat oven to 350°F. Bake kugel uncovered until set in center and beginning to brown on top, about 35 minutes. Let stand 10 minutes.

Steps:

  • Preheat oven to 375°. In a large skillet, heat 3 tablespoons butter over medium-high heat. Add shallots; cook and stir until golden brown, 3-5 minutes. Remove and set aside., In a large bowl, mix eggs, ricotta cheese, 3/4 cup parsley, shredded cheese, 3 tablespoons dill, 2 teaspoons lemon zest, 1/8 teaspoon salt and pepper. Stir in cauliflower and shallots. Transfer to a greased 8-in. square baking dish., In the same skillet, heat remaining butter. Add bread crumbs; cook and stir until lightly browned, 2-3 minutes. 1 head cauliflower or 1 bag frozen cauliflower
1 -2 tablespoon onion soup mix
2 eggs
1/4 cup mayonnaise

Steps:

  • Cook cauliflower in microwave or steam.
  • Either buy the cut/chopped cauliflower or cut it up or partially mash with a masher after it is cooked.
  • Drain well.
  • Add onion soup mix and mix well.
  • Add slightly beaten eggs and mayo and mix.
  • Pour into a greased pie plate or pan.
  • Sprinkle with paprika.
  • Bake at 350 for 45 minutes.

2 large onions, thinly sliced (about 4 cups)
1/4 cup olive oil
1 teaspoon honey
salt & freshly ground black pepper
1 head cauliflower, cut into small florets (about 8 cups)
4 large eggs, beaten
1/2 cup matzo meal (breadcrumbs can be substituted if not for Passover)
3 tablespoons chopped dill
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 450°F Toss cauliflower with 2 tablespoons oil, reserving remainder. Place cauliflower on a baking sheet and bake for 15 to 20 minutes tossing occasionally or until browned and tender. Reduce oven heat to 350°F.
  • Heat remaining oil in skillet over medium-high heat and add onions. Sprinkle with salt to help the juices come out. Sauté for about 2 to 3 minutes or until onions have softened.
  • Turn heat to medium-low and continue to cook, stirring occasionally, for 18 to 20 minutes or until onions are a thick tangled golden mass. Stir in honey.
  • Pulse cauliflower in a food processor until finely chopped. Transfer to a mixing bowl and stir in onions, eggs, matzo meal, dill and parsley. Season well with salt and pepper and place in oiled baking dish.
  • Bake for 45 minutes or until mixture is browned and set.

Cauliflower, steamed until tender then finely chopped, combines beautifully here with quinoa and cumin. Millet would also be a good grain choice.

2 tablespoons extra virgin olive oil
1/2 medium onion, finely chopped
1/2 cup quinoa
1 1/4 cups water
Salt to taste
1 pound cauliflower (1/2 medium head), broken into florets
1 cup low-fat cottage cheese
2 eggs
1 scant teaspoon cumin seeds, lightly toasted and crushed
Freshly ground pepper

Steps:

  • Heat 1 tablespoon of the olive oil in a medium saucepan and add the onion. Cook, stirring, until just about tender, 3 to 5 minutes, and add the quinoa. Cook, stirring, for another 2 to 3 minutes, until the quinoa begins to smell toasty and the onion is tender. Add the water and salt to taste and bring to a boil. Cover, reduce the heat and simmer 15 to 20 minutes, until the quinoa is tender and the grains display a threadlike spiral. If any water remains in the pot, drain the quinoa through a strainer, then return to the pot. Place a dish towel over the pot, then return the lid and let sit undisturbed for 10 to 15 minutes
  • Meanwhile, steam the cauliflower over 1 inch of boiling water for 10 minutes, or until tender. Remove from the heat
  • Preheat the oven to 375 degrees and oil a 2-quart baking dish or gratin
  • Finely chop the steamed cauliflower, either with a chef's knife or using a food processor fitted with the steel blade. Place in a large mixing bowl. In a food processor fitted with the steel blade, purée the cottage cheese until smooth. Add the eggs and process until the mixture is smooth. Add salt (I suggest about 1/2 teaspoon), pepper and the cumin seeds and mix together. Scrape into the bowl with the cauliflower. Add the quinoa and stir everything together. Scrape into the oiled baking dish. Drizzle the remaining oil over the top and place in the oven
  • Bake 35 to 40 minutes, until the top is lightly browned. Remove from the oven and allow to cool for at least 15 minutes before serving. Serve warm or at room temperature, cut into squares or wedges

  • Prepare vegetables as per directions on the box.
  • For each vegetable:.
  • Melt two tbsp margarine.

1 pkg frozen cauliflower
3 Tbsp margarine
3 Tbsp flour
1/2 c coffee rich
1/2 c water
3 eggs
1/2 c mayonnaise
1-2 Tbsp onion soup mix
salt and pepper to taste
bread crumbs (optional)

Steps:

  • 1. Cook cauliflower and drain well. Partially mash.
  • 2. Melt margarine in a saucepan and add flour, Coffee Rich and water. Stir over medium heat for 10 minutes until flour is dissolved.
  • 3. Pour sauce over cauliower. Add eggs, mayonnaise and onion soup mix.
  • 4. Pour mixture into greased 3 quart baking pan or greased pie pan. May sprinkle with bread crumbs on top. Can sprinkle with paprika.,
  • 5. Bake for 1 hour at 350 degrees.

1 cup breadcrumbs
1 head cauliflower
2 tablespoons margarine
2 tablespoons flour
1/2 cup whipping cream
1/3 cup mayonnaise
3 tablespoons onion soup mix
3 eggs

Steps:

  • Shell: Coat baking dish with margarine. Sprinkle bread crumbs into dish -- they'll stick to the margarine.
  • Kugel: Cook cauliflower in salt water. When it's done, drain and puree.
  • Melt margarine, flour, and cream together. Keep on a low flame.
  • When it's thoroughly blended, remove from fire and place in a bowl. Add mayonnaise, eggs, and onion soup mix. Finally, add pureed cauliflower.
  • Pour into shell and bake 45 minutes at 170°C.
