MARINATED CAULIFLOWER, OLIVE, AND ARUGULA SALAD
Some of the ingredients need to marinate overnight in the Dijon-red wine vinaigrette, so plan accordingly.

Steps:
- Whisk vinegar and mustard in small bowl; gradually whisk in oil. Season dressing generously with salt and pepper. Combine cauliflower, olives, and celery in large bowl. Add 3/4 cup dressing; toss to coat. Cover salad and remaining dressing separately; chill overnight.
- Mix green onions and parsley into salad. Arrange arugula on platter; drizzle with remaining dressing. Top arugula with cauliflower mixture. Sprinkle with pepper.

I make this salad for work functions, sometimes using half cauli and half broccoli. It's ok to make the day before too. Don't tell anyone about the anchovies and they won't notice!

Steps:
- Boil, steam or microwave cauliflower until tender (about 3 minutes).
- Drain, rinse under cold water, drain well.
- Combine cauliflower with remaining ingredients in a bowl and add dressing; mix well.
- DRESSING: Combine all ingredients in a jar, and shake well.

- Combine first 4 ingredients Add next 3 and marinate 1 hour. Tear lettuce into bite size pieces. Sprinkle with cheese. Pour marinated mixture over lettuce and toss gently.
