BUTTER TOFFEE CASHEW CRUNCH CANDY

- Melt the butter in a medium-sized heavy-bottom saucepan over medium heat.
- Add the sugar and whisk to combine.
- Stir in the salt.
- Increase the heat to medium/high and, using a candy thermometer, continue to cook and stir the mixture until the toffee reaches the hard-crack temperature on the candy thermometer of 300-degrees Fahrenheit. *Note - this can take up to 10 minutes or more. Do NOT walk away from the stovetop, and stir very frequently.
- **Special Note - NEVER heat the toffee over high heat as this will cause the candy mixture to break and separate.
- Meanwhile, line a baking sheet with parchment paper and spray it liberally with baking spray. Set aside.
- Once the toffee has reached the hard-crack temperature, remove the pot from the heat and stir in the vanilla extract, and the cashews until evenly coated.
- Spread the butter toffee cashews in an even layer onto the prepared baking sheet and cool completely.
- Once cooled, break the candy into bite-sized pieces. Set aside.
- Melt the chocolate chips in a microwave-safe bowl (on medium/low power) and stirring frequently, until smooth and creamy.
- Drizzle the melted chocolate over the butter toffee cashew crunch candy and allow the candy to set until firm. Do NOT refrigerate.
- Store in an airtight container in a dark location.

BUTTER TOFFEE PRETZELS
Steps:
- Preheat oven to 200° degrees F. Lightly grease a large roasting pan with cooking spray; I use a disposable one for easy cleanup. Add the pretzels to the roasting pan; set aside.
- In a medium saucepan, add the brown sugar, cubed butter, and corn syrup and bring to a boil over medium heat. Boil for 5 minutes, stirring constantly. Remove from the heat and whisk in the vanilla extract and baking soda; the toffee will bubble violently - this is normal.
- Pour the hot toffee mixture evenly over the pretzels; sprinkle half of the bag of toffee bits over the pretzel mixture, too. Toss the pretzels to coat evenly in the toffee mixture and toffee bits.
- Bake for 1 hour, stirring every 15 minutes to ensure the hot toffee mixture evenly coats the pretzels. Once baked, spread the pretzel mixture onto a wax paper-lined countertop and immediately sprinkle with the remaining toffee bits. Allow the pretzels to set and harden, about 1 hour, before breaking into smaller clusters and packaging.

- Cook 1 1/2 cups sugar in a saucepan over medium heat, swirling the pan but not stirring, until dark amber, about 10 minutes. Remove from the heat and stir in 2 tablespoons butter and 3 cups salted cashews. Pour onto an oiled baking sheet and separate into small clusters with 2 forks. Let harden.

- Line baking sheets with waxed paper and grease paper with butter; set aside., In a microwave, melt 1 pound of candy coating; stir until smooth. Drop by scant tablespoonfuls onto prepared pans. Let stand until partially set, about 3 minutes. Top each with six or seven cashews. Let stand until completely set., In a small heavy saucepan, combine caramels and cream. Cook and stir over low heat until melted; stir until smooth. Spoon over cashews. Reheat caramel over low heat if it thickens. Melt remaining candy coating; spoon over caramel. Let stand until set.

- 1. Preheat oven to 300 degrees. Spray large baking sheet with nonstick cooking spray.
- 2. Place sugar, syrup and butter in heavy small saucepan. Heat over medium heat until mixture boils and sugar dissolves, stirring often. Remove from heat; stir in vanilla.
- 3. Combined pretzels,cereal and cashews in large bowl. Pour sugar mixture over pretzel mixture; toss to coat evenly. Spread on prepared baking sheet. Bake 30 minutes, stirring after 15 mins. Spread onto greased waxed paper. Cool completely; break into clusters.
