Number Of Ingredients 7

2 teaspoons plus 10 tablespoons butter, divided
1/2 cup sugar
1/4 cup brown sugar
1 tablespoon light corn syrup
3/4 teaspoon cayenne pepper
1/4 teaspoon salt
2 cups salted cashews

Steps:

  • Line a 15x10x1-in. pan with foil and grease the foil with 2 teaspoons butter; set aside. In a large heavy saucepan, combine the sugar, brown sugar, corn syrup, cayenne, salt and remaining butter. Cook and stir until sugar is dissolved., Add cashews and bring to a boil; cook and stir until a candy thermometer reads 280° (soft-crack stage), about 6 minutes., Immediately pour into prepared pan; spread with a metal spatula. Cool completely. Break into pieces. Store in an airtight container.

1 cup sugar
1 cup Land O Lakes® Butter
1 tablespoon light corn syrup
1 1/2 cups salted cashew pieces *

Steps:

  • Line 15x10x1-inch baking pan with aluminum foil. Set aside.
  • Combine sugar, butter and corn syrup in 2-quart saucepan. Cook over medium heat, stirring occasionally, 9-11 minutes or until butter is melted and mixture comes to a boil. Reduce heat to medium-low; cook, stirring occasionally, 40-50 minutes or until candy thermometer reaches 310°F or small amount of mixture dropped into ice water forms brittle strands. Remove from heat; stir in cashews.
  • Spread to 1/4-inch thickness on prepared pan. Cool completely; break into pieces.

1/2 cup corn syrup
1 1/2 cups sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup raw cashews, unsalted
2 tablespoons butter
Vanilla ice cream

Steps:

  • Spray inside of measuring cup with nonstick cooking spray. In a medium saucepan, over medium-high heat, add corn syrup, sugar, and salt. Cook on stove until the temperature reaches 310 degrees F. on a candy thermometer. Once the mixture reaches 310 degrees F, take off the stove; add the baking soda, cashews and butter, working quickly and stirring constantly.
  • The mixture should stay an opaque color. On a nonstick tray sprayed with nonstick cooking spray, pour in the mixture and spread with wooden spoon. Cool for 1 1/2 hours.
  • Place 2 scoops of vanilla ice cream on each dish and garnish with broken pieces of cashew crunch.

1 cup light corn syrup
1 cup water
2-1/2 cups unsalted cashew halves
1/4 teaspoon baking soda

Steps:

  • Butter a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a large saucepan, combine the sugar, corn syrup and water. Bring to a boil, stirring constantly. , Reduce heat; cut remaining butter into cubes and carefully stir into syrup. Cook and stir until a candy thermometer reads 280° (soft-crack stage). Add nuts; cook and stir until candy thermometer reads 295°. , Remove from the heat; stir in baking soda. Immediately pour into prepared pan. Cool; break into pieces. Store in an airtight container.

1/4 cup grated Parmesan cheese
1/4 cup salted cashews, lightly chopped
Zest of 1 lemon
1/4 teaspoon garlic powder
Kosher salt
1 pound fresh broccoli, florets removed and separated
2 tablespoons melted butter
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small bowl combine Parmesan cheese, cashews, lemon zest, garlic powder, and pinch of salt, and set aside.
  • Place the broccoli on a baking sheet. Drizzle with butter and toss. Season with salt and pepper, to taste.
  • Roast in the oven until broccoli begins to caramelize, about 20 minutes. Remove, and toss the broccoli with the cashew mixture. Serve warm.

2 cups hershey's milk chocolate chips
3/4 cup cashews, coarsely chopped
3/4 cup macadamia nuts, coarsely chopped
1/2 cup butter, softened
1/2 cup sugar
2 tablespoons light corn syrup

Steps:

  • Line 9-inch square pan with foil, extending foil over edges of pan; butter foil. Cover bottom of prepared pan with chocolate chips.
  • Combine cashews, macadamia nuts, butter, sugar and corn syrup in large heavy skillet; cook over low heat, stirring constantly, until butter is melted and sugar is dissolved. Increase heat to medium; cook, stirring constantly, until mixture begins to cling together and turns golden brown.
  • Pour mixture over chocolate chips in pan, spreading evenly. Cool. refrigerate until chocolate is firm. Remove from pan; peel off foil. Break into pieces. Store tightly covered in cool, dry place. About 1-1/2 pounds candy.

½ cup light corn syrup

1 teaspoon vanilla extract
1 teaspoon baking soda

  • Grease a baking sheet with 1 tablespoon butter.
  • Combine cashews, sugar, and corn syrup in a large microwave-safe glass or ceramic bowl. Microwave on high until sugar melts and mixture is hot, about 6 1/2 minutes.
  • Stir 1 tablespoon butter and vanilla extract into cashew mixture. Microwave until hot, about 2 1/2 minutes more. Stir baking soda into cashew mixture until light and foamy. Spread mixture on prepared baking sheet. Cool completely and break into pieces.
