¼ cup vegetable oil
2 cups diced chicken meat
1 teaspoon salt
½ teaspoon ground black pepper
3 cups chicken broth
2 tablespoons soy sauce
1 cup chopped celery
1 (8 ounce) can bamboo shoots, drained and diced
1 (8 ounce) can water chestnuts, drained and diced
⅓ cup cornstarch
½ cup cold water
1 cup cashews

Steps:

  • Heat oil in a large skillet over medium high heat. Saute chicken until it turns white, then season with salt and pepper and add broth, soy sauce, celery, bamboo shoots and water chestnuts. Cover skillet, reduce heat to low and simmer for 5 minutes.
  • Beat cornstarch and water together in a small bowl, then blend into skillet mixture and heat through until thick and bubbly. Sprinkle with cashews and serve.

½ cup brown rice
1 cup diced celery
1 red bell pepper, diced
1 green bell pepper, diced
3 skinless, boneless chicken breasts, cut into 1-inch pieces
1 cup water
2 tablespoons gluten-free soy sauce (tamari)
1 tablespoon rice vinegar
1 tablespoon minced garlic
1 ½ teaspoons minced ginger
½ teaspoon ground cumin
½ teaspoon ground black pepper
¼ teaspoon salt
1 (8 ounce) can sliced water chestnuts, drained
1 cup cashews

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a large casserole dish with cooking spray.
  • Spread brown rice at the bottom of the casserole dish. Layer celery, red bell pepper, and green pepper on top. Top with chicken.
  • Mix water, soy sauce, rice vinegar, garlic, ginger, cumin, pepper, and salt in a small bowl. Pour over chicken. Arrange water chestnuts on top.
  • Bake in the preheated oven until chicken is tender, about 45 minutes. Add cashews. Continue baking until browned, about 10 minutes more.

2 tablespoons cornstarch
1 tablespoon brown sugar
1-1/4 cups chicken broth
2 tablespoons soy sauce
3 tablespoons canola oil, divided
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1/2 pound sliced fresh mushrooms
1 small green pepper, cut into strips
1 can (8 ounces) sliced water chestnuts, drained
1-1/2 teaspoons grated fresh gingerroot
4 green onions, sliced
3/4 cup salted cashews
Hot cooked rice

Steps:

  • Mix first 4 ingredients until smooth. In a large skillet, heat 2 tablespoons oil over medium-high heat; stir-fry chicken until no longer pink. Remove from pan. , In same pan, heat remaining oil over medium-high heat; stir-fry mushrooms, pepper, water chestnuts and ginger until pepper is crisp-tender, 3-5 minutes. Stir broth mixture and add to pan with green onions; bring to a boil. Cook and stir until sauce is thickened, 1-2 minutes., Stir in chicken and cashews; heat through. Serve with rice.

1 lb boneless chicken breast
1 yellow onion
1 (5 ounce) can water chestnuts
1 (8 ounce) can baby corn
2 teaspoons garlic, minced
2 teaspoons ginger, minced
1/4 cup cashews
hot bean paste (or red chili flakes)
1 tablespoon soy sauce
1 tablespoon cornstarch
1 dash garlic powder
1 dash salt
1 tablespoon sugar
2 tablespoons water
3 tablespoons soy sauce
2 tablespoons dry sherry or 2 tablespoons cooking wine
1 tablespoon white vinegar
1 teaspoon cornstarch
1 1/2 teaspoons dark sesame oil
1/4 teaspoon salt

Steps:

  • In bowl, stir together ingredients for marinate.
  • In separate bowl or cup, stir together ingredients for sauce.
  • Trim fat from chicken breast. Cut chicken into 1/2-inch cubes. Stir chicken into marinate and let stand for 10 minutes.
  • Coarsely chop onion. Drain water chestnuts and baby corn.
  • Heat 1 T oil in a wok or large nonstick skillet over high heat. Add chicken to pan and stir fry for about 2 minutes or until cooked. Remove from pan.
  • Heat 1 T oil and add garlic, ginger, onion, water chestnuts, and baby corn. Stir fry for 1 to 2 minutes until vegetables are tender.
  • Add chicken to pan. Add 1 tsp hot bean sauce. Stir well.
  • Add sauce and mix well, allowing the sauce to bubble and thicken. Stir in cashews. Serve over rice.

2 boneless skinless chicken breasts, cut into bite size pieces
Chinese five spice powder
2 dried Thai chiles, crushed
1 teaspoon sesame oil
1 teaspoon vegetable oil
1 bok choy, chopped
1 carrot, chopped
1 medium onion, sliced
1 cup snow peas
1 cup button mushroom, quarterd
0.5 (8 ounce) can water chestnuts
1 chunk ginger (grated or chopped finely)
2 garlic cloves, thinly sliced
3 green onions
3/4 cup whole unsalted cashews
1 cup chicken broth
1/4 cup hoisin sauce
2 cups white rice, cooked
2 teaspoons cornstarch

Steps:

  • Generously season chicken with 5-spice and chiles. Saute in a teaspoon of each oil for 5 minutes in a wok.
  • Add garlic and ginger 1/2 way through cooking chiken.
  • Once chicken is cooked add bok choi, onion, carrot, mushroons and water chestnuts with 1/2 chicken broth and 1/2 hoisin sauce. Close lid for 2 minutes.
  • Add snowpeas and leafy part of bok choi. Add remaining chicken broth and hoisin sauce. Close lid for 2 more minutes.
  • Thicken with cornstarch slurry to desired thickness. Add cashews and green onion just before serving with hot rice.

3 cups cubed cooked chicken
1/2 cup cubed process American cheese
1 small onion, chopped
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 (8 ounce) can sliced water chestnuts, drained
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1 1/3 cups milk
1 (10 1/2 ounce) can chicken broth
1/4 cup butter or 1/4 cup margarine, melted
2/3 cup crushed saltine (about 20 crackers)
3/4 cup cashew halves
