BAKED HAM WITH LOW CARB MAPLE BOURBON GLAZE
Steps:
- Preheat oven to 325 degrees F.
- Place ham face down in a shallow baking pan and cover loosely with aluminum foil.
- Place on lower rack of oven and bake for 1 hour.
- While the ham is baking, mix together all the glaze ingredients in a bowl and set aside.
- After 1 hour of cooking, remove ham from oven, uncover and stand ham up on 1 side. With a sharp knife and in a "tic-tac-toe" fashion, make shallow cuts all over the fatty side of the ham, scoring 1-inch squares. Insert single whole cloves in every corner of the squares created by the cuts. Pour the glaze over the top and let drip down the ham. Place uncovered ham back in the oven and cook for another 30 minutes. Remove from oven and let stand 15 minutes before slicing.

This is a mash up of two recipes with coffee added to give it a kick. It doesn't taste like coffee but I think it gives it a lift.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place ham fat side-up on a rack in a roasting pan. Score ham fat in a crisscross design; season with sea salt.
- Mix brown sugar, sorghum syrup, brown mustard, brandy, dry mustard, cinnamon, nutmeg, and ginger together in a bowl for the basting mixture. Brush 1/3 basting mixture on top of ham and stick cloves into fat. Pour coffee into bottom of roasting pan.
- Cook ham in the preheated oven, brushing with remaining basting mixture every 30 minutes, until an instant-read thermometer inserted in the center reads 165 degrees F (74 degrees C), about 2 hours total.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place ham in a roasting pan, and press whole cloves into the top at 1 to 2 inch intervals. Pack the top with a layer of brown sugar. Pour enough water into the bottom of the roasting pan to come to a 1 inch depth. Cover the pan tightly with aluminum foil or a lid.
- Bake for 4 1/2 to 5 hours in the preheated oven (about 22 minutes per pound), or until the internal temperature of the ham has reached 160 degrees F (72 degrees C). Make sure the meat thermometer is not touching the bone. Let stand for about 20 minutes before carving.

BAKED HAM WITH GOLDEN BREADCRUMBS
A beloved American centerpiece dish, this is a true company ham for a special occasion. Everyone loves it because a big ham doesn't come around too often. It's great to see the ham being carved, and the salty, smoky flavor of the meat, combined with the sweetness and crunchy texture of the brown sugar and breadcrumbs, is so satisfying.

- Preheat the oven to 325 F. Using a sharp knife, remove the rind from most of the ham, leaving a band around the end of the shank bone and a thin layer of fat all over. Score the fat on top of the ham in a crisscross pattern. Place the ham in a large roasting pan. Pour 3 cups of water into the pan. Bake the ham, uncovered, for 1½-2 hours.
- Stir the dark brown sugar and mustard in a medium bowl to make a thick paste. Set aside.
- Make breadcrumbs: remove crust from day-old bread and reserve for another use. Cut the bread into large chunks and place into food processor; pulse until crumbly. Heat the olive oil in a large skillet over medium heat. Add the bread crumbs and toast, stirring frequently, until crisp and golden, 5-10 minutes. Season lightly with salt and pepper. Set aside.
- Remove the ham from the oven and increase the oven temperature to 350 F. Spread half of the sugar-mustard paste over the scored top of the ham. Bake the ham for 1 more hour.
- Remove the ham. Spread the remaining half of the sugar-mustard paste over the ham and pack the breadcrumbs all over the top. Add 1 cup water to the roasting pan if the pan juices have dried out. Return the ham to the oven until the breadcrumbs are deep golden brown, about 15 minutes.
- Transfer the ham to a serving platter or a carving board and let it rest, about 10 minutes. To carve, use a large chef's knife and serving fork to cut against the grain, creating long diagonal slices of meat.
BAKED HAM WITH ORANGE-PEPPER GLAZE

- Remove the ham from the refrigerator 1 hour before baking. Trim off any skin, leaving an even layer of fat (about 1/2 inch thick). Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Place the ham, flat-side down, on a roasting rack set in a large roasting pan.
- Position a rack in the lower third of the oven; preheat to 350 degrees F. Combine the orange juice, 1 cup chicken broth and the melted butter in a measuring cup. Pour over the ham and tent with foil. Bake, basting with the pan juices every 30 minutes, until a thermometer inserted into the thickest part of the ham registers 130 degrees F, 2 to 2 1/2 hours.
- Make the glaze: Remove the ham from the oven, spoon out about 1/4 cup of the pan juices and transfer to a medium bowl. Whisk the pepper jelly, mustard, brown sugar, marmalade, vinegar, thyme, chile powder, coriander, cayenne and orange zest into the bowl.
- Brush the ham with about one-quarter of the glaze. Add the remaining 1 cup broth to the pan. Return to the oven and bake, brushing the ham with more glaze twice (reserve some for finishing), until the surface is caramelized and a thermometer inserted into the thickest part registers 140 degrees F, 1 1/2 to 2 more hours. Transfer the ham to a cutting board. Brush with the reserved glaze; let rest 15 minutes before carving.
