2 rutabagas (2 1/2 pounds total), peeled and cut into 1-inch pieces
5 carrots, cut into 1-inch pieces
3 tablespoons unsalted butter
3 tablespoons packed light brown sugar
1 teaspoon kosher salt

Steps:

  • Cook rutabagas and carrots in boiling salted water to cover by 1 inch in a large pot until tender, about 30 minutes. Transfer vegetables with a slotted spoon to a food processor and purée with butter, brown sugar, and salt until very smooth. If necessary, transfer purée back to pot and reheat.

1 small rutabaga
4 carrots
2 tablespoons brown sugar
2 tablespoons frozen orange juice concentrate, undiluted
1 tablespoon butter
1 pinch nutmeg
salt
fresh ground pepper
chopped parsley

Steps:

  • Peel rutabaga and carrots.
  • Cut int 3/4 inch chunks.
  • Cook separately in boiling water until tender, drain.
  • Mash each, either with potato masher or in a food processor.
  • Combine rutabaga carrots, sugar, orange juice, butter, nutmeg and salt and pepper to taste.
  • Sprinkle with parsley, if using.
  • Serve immediately or cover and reheat before serving.

10 oz (300g) carrots, cut into small pieces
7 oz (200g) rutabaga, cut into small pieces
salt
2 tbsp butter
1 tsp light brown sugar (optional)
pinch of grated nutmeg

Steps:

  • Boil the vegetables together in a large pan of boiling salted water for about 20 minutes, or until soft. Drain well and return them to the pan. Add the remaining ingredients and mash the vegetables well before serving.
