1/2 head green cabbage, chopped
2 tablespoons chopped dried onion or 3/4 cup chopped white onion
10 -15 baby carrots, sliced 1/2 inch wide
4 stalks celery, chopped with leaves
2 teaspoons lemon pepper
2 teaspoons sysco chicken base
1 1/2 cups water
2 tablespoons olive oil
1/2 teaspoon salt (optional)
4 ounces mushrooms, with liquid (optional)

Steps:

  • Note: You may use chicken bouillon cubes or vegetable broth or liquid chicken broth in place of chicken base and water.
  • In large deep frying pan, pile the vegetables, dried onion and lemon pepper.
  • Put the chicken base in water and microwave to dissolve or but all on top of veggies.
  • Add olive oil on top and salt if desired. Put a lid on the pan and simmer on low heat. Mix with a spatula a few times. Cook for 15 minutes.
  • Serve as a side dish.

  • •Add 3 cups cooked rice or noodles and mix. Add margarine before adding.
  • •Add 2 cups couscous and mix.
  • •Add more chicken broth and add 2 tbsps cornstarch in 1/2 cup cold water and thicken and serve over hard Chinese noodles or mashed potatoes.
  • •Add 3-4 cups cooked ham chunks or leftover ham.
  • •Add canned corned beef cubes or leftover corned beef.
  • •Add cooked turkey or chicken.
  • •Add cooked shrimp or crab meat with the addition of 1/2 tsp dry mustard mixed.
  • •Add cashew nuts and sliced pimentos before serving.
  • •Dissolve 2 tbsps flour in 1 cup milk with 1 teaspoons margarine by whisking. Add and heat. Serve white sauce vegetable mixture over toast points.

12 ounces campanelle
2 tablespoons unsalted butter
10 ounces small carrots, scrubbed and chopped
1/2 leek (white and light green parts only), trimmed, washed and sliced
1 clove garlic, sliced
Freshly ground pepper
2 cups vegetable broth
3 tablespoons heavy cream
2 ounces ricotta salata cheese, coarsely grated
Red pepper flakes, for topping (optional)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat the butter in a medium saucepan over medium-high heat. Add the carrots, leek and garlic and season with salt and pepper. Cook, stirring occasionally, until the carrots begin to soften, about 8 minutes. Add the vegetable broth and bring to a boil, then reduce the heat and simmer until the vegetables are very tender, about 8 minutes.

Steps:

  • Run vegetable peeler down length of each carrot, shaving into ribbons. Melt butter in heavy large skillet over medium heat. Add lemon peel and ginger; stir 1 minute. Add carrots and bell peppers. Sauté until just tender, about 5 minutes.
  • Meanwhile, cook pasta in medium pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup cooking liquid.
  • Add pasta, 1/4 cup reserved cooking liquid, cheese, and lemon juice to skillet. Toss until sauce coats pasta, adding more cooking liquid if dry. Season to taste with salt and pepper. Serve.

1 cup basmati rice
1 cinnamon stick
Kosher salt and freshly ground pepper
1 2 1/2-inch piece ginger, peeled and roughly chopped
1 1/2 teaspoons ground coriander
3 tablespoons vegetable oil
1 small red onion, sliced
2 medium carrots, thinly sliced into rounds
3 cups shredded rotisserie chicken
1/2 cup roughly chopped fresh mint and/or cilantro
1 cup whole-milk plain yogurt
1/4 cup sliced almonds

Steps:

  • Preheat the oven to 450 degrees F. Put the rice, cinnamon, 1/2 teaspoon salt, and pepper to taste in a saucepan and cover with water by 1 inch. Cover and bring to a boil over high heat, then uncover and cook until the rice is just tender, about 8 minutes. Drain; reserve the cinnamon stick.
  • Pulse the ginger, coriander, 1 teaspoon salt, 1/2 teaspoon pepper and 1 tablespoon water in a mini food processor. Heat the vegetable oil in a large ovenproof skillet over medium-high heat. Add the onion and cook until golden, about 8 minutes. Add the ginger mixture and carrots and cook 2 minutes, adding a splash of water if the mixture sticks. Stir in 1/3 cup water, the chicken, herbs and yogurt and heat through. Season with salt.
  • Top the chicken mixture with the rice and the reserved cinnamon stick; sprinkle with the almonds. Bake until the rice is cooked through and the almonds are lightly toasted, 8 to 12 minutes.

4 skinless, boneless chicken breast halves, about 1 1/4 pounds
Salt to taste if desired
Freshly ground pepper to taste
12 small carrots, about 1/2 pound
24 small pearl onions
2 tablespoons butter
1 tablespoon finely chopped shallots
1 tablespoon grated fresh ginger
1/4 cup dry white wine
1/2 cup fresh or canned chicken broth
3/4 cup heavy cream
2 tablespoons finely chopped fresh coriander (optional)

Steps:

  • Sprinkle the chicken pieces on both sides with salt and pepper.
  • Trim and peel the carrots and put in a saucepan. Add cold water to cover, and salt to taste. Bring to a boil and let cook 1 minute. Drain.
  • Peel the onions and set aside.
  • Heat the butter in a skillet large enough to hold the chicken pieces in one layer. Add the chicken breasts and sprinkle with the onions. Cook the chicken briefly, about 1 minute, until lightly browned on one side; do not brown well. Turn the breasts and cook about 2 minutes without browning. Sprinkle with shallots and scatter the carrots over all. Sprinkle with ginger and add white wine and broth.
  • Cover closely and bring to a boil. Cook 10 minutes and remove cover. Transfer chicken pieces to a warm platter. Cover with foil to keep warm.
  • Cook down the pan juices until reduced to about three tablespoons.
  • Add the cream. Bring to a boil and cook over high heat about 2 minutes.
  • Serve the chicken with the sauce spooned over. Sprinkle, if desired, with fresh coriander.

2 tablespoons olive oil
2 tablespoons fresh garlic, minced
2 tablespoons fresh ginger, minced
1 tablespoon ginger paste (optional)
1 teaspoon cayenne pepper
salt, to taste
pepper, to taste
1 large sweet onion, Finely diced
2 lbs boneless skinless chicken breasts, cut into pieces
1/2 cup fresh carrot, sliced
32 ounces chicken broth, organic
6 -8 cups water, depending on preference
1 cup fresh spinach

Steps:

  • Heat olive oil in a large pan.
  • Add fresh garlic, fresh ginger, and onion.
  • Cook for 3-4 minutes. Add Ginger paste, cayenne pepper, and salt & pepper. Cook for an additional 3-4 minutes, stirring often.
  • Add the chicken broth, water, chicken, and carrots.
  • Bring to a boil. Reduce heat and simmer for 30 minutes (feel free to cook on low for up to an hour).
  • Add spinach and let cook for 5 minutes just before serving.
  • Note: you can also add mushrooms, to add in more antioxidants. Simply add to the soup at the same time you add the carrots.

CARROT AND GINGER TERRINE



Carrot and Ginger Terrine image

1 pound carrots, trimmed, peeled and cut in 1/4-inch rounds
1/2 teaspoon turmeric
1/4 cup water
1 1/2 envelopes unflavored gelatin
1/4 cup plus 2 tablespoons chicken broth
1/4 cup fromage blanc
2 1/4 teaspoons grated, peeled fresh ginger
Kosher salt to taste
Freshly ground black pepper
1 scallion, sliced thin
Spinach and coriander sauce (see recipe)

Steps:

  • Toss carrots with turmeric in a 13-by-9-by-2-inch oval dish. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a high-power oven for 8 minutes. Prick plastic to release steam.
  • Remove from oven and uncover. Transfer to a food processor and process until smooth.
  • Place water in a glass 1-cup measure. Sprinkle gelatin over water. Let stand for 2 minutes. Stir. Cover with plastic wrap. Cook for 30 seconds. Prick plastic to release steam.
  • Remove from oven and uncover. Pour into food processor with carrots. Add broth, fromage blanc, ginger, salt and pepper. Process until completely smooth. Taste and adjust seasonings, if needed.
  • Transfer mixture to a bowl and stir in scallion. Rinse a 2- to 3-cup mold with ice water. Do not dry. Scrape mixture into mold. Cover with plastic wrap and refrigerate for at least 4 hours.
  • Unmold terrine and cut into slices. Spoon spinach and coriander sauce onto four plates. Place terrine slices over sauce and serve.
