4 large eggs
1/2 cup milk
2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons butter

Steps:

  • Beat eggs, milk, flour and salt in a large bowl.
  • Can allow mixture to sit until ready to cook.
  • Bring a large pot of water to a boil.
  • Add salt liberally to boiling water.
  • Force dough through large holes of a colander/drainer directly into boiling water.
  • Make in batches and do not overload the pot.
  • Bring each batch back to a boil.
  • Noodles are done when they float.
  • Remove with a strainer and keep warm while cooking remainder.
  • Toss each batch with a little of the butter.
  • Serve with gravy.

A hot German carrot side dish translated from the classic German cookbook "Koch vergnugen wie noch nie." Not very healthy, but very tasty.

1 kg fresh carrot, peeled
2 tablespoons butter
1 tablespoon sugar
1/4 liter hot vegetable broth
1/8 liter heavy cream
salt, to taste
white pepper, to taste
2 tablespoons fresh parsley, finely chopped

Steps:

  • Wash and peel carrots, then cut them into thick sticks.
  • Heat a large sauce-pot over low heat and melt the butter and sugar together until the sugar caramelizes.
  • Add the carrot sticks to the caramel mixture and stir to coat.
  • Add the hot broth,cover, and let carrots steam 25-30 minutes over medium-low heat (after 15 minutes, remove the lid so the remaining liquid will evaporate.).
  • Once the carrots are cooked enough to your liking, whisk in the cream, season to taste, and add the chopped parsley.
  • Serve warm.

1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon pepper
1/4 cup milk (or 1/4 cup water)
2 quarts beef broth or 2 quarts chicken broth
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Mix eggs, flour, 1/2 teaspoon salt and the pepper.
  • Add milk or water (your choice).
  • Batter will be thick.
  • Heat water or broth of choice till boiling.
  • Add 1 teaspoon salt.
  • Press batter through colander (preferably one with large holes), a few tablespoons at a time, into boiling water.
  • Stir once or twice while boiling to prevent sticking.
  • Cook until dumplings rise to surface and are tender, about 5 minutes; drain.
  • Pour butter over dumplings.

300 g carrots
200 ml milk
350 g flour
2 eggs
2 teaspoons salt
1 teaspoon oil
nutmeg
more salt, for boiling and frying

Steps:

  • Grind carrots in a blender or food processor until fine.
  • Add milk an blend for 30 seconds.
  • Add all other ingredients and blend well, use spatula if needed.
  • Cover and let rise in a warm place for 10 minutes.
  • In the meantime bring water to a boil, than add salt.
  • (If you add salt before boiling it will take longer.) Mix batter again for some seconds.
  • Put colander or spaetzle press over boiling water and press the batter through it.
  • Stir from time to time.
  • When Spatzle rise to the surface after some minutes they are ready to eat.
  • Drain and fry in a pan with hot butter and salt.
  • Eat them in a soup, as Kasespaetzle with melted cheese or just like other noodles- just as you like!
