2 quarts stale bread, cubes
1 quart cornbread, crumbs
1 1/4 cups chicken stock
3 beaten eggs
1 cup butter or 1 cup margarine
1 cup chopped onion
1 cup chopped parsley
1 tablespoon salt
1/2 teaspoon sage (optional)
1/2 teaspoon pepper
2 cups chopped celery
1 1/2 cups chopped walnuts
1/2 cup chopped pimiento

Steps:

  • Moisten bread cubes and cornbread crumbs with chicken bouillon or stock.
  • Add beaten eggs to bread.
  • Melt butter or margarine and simmer chopped onion in it for 1 minute.
  • Add to bread mixture with parsley, salt, sage pepper, celery, walnuts and pimiento.
  • Makes: enough for a 12 pound turkey.

2 (8 ounce) packages cream cheese
1/2 cup walnuts, finely chopped
3 tablespoons milk
1 bunch celery, cut into 3-inch pieces

Steps:

  • Put cream cheese in a bowl in the microwave for 45 secs. to soften.
  • Add milk, and mix well.
  • Add walnuts, and mix well.
  • Cut stalks of celery into thirds, and wash and dry well, (very important).
  • Stuff celery with cream cheese mixture, and refrigerate.

These edible ribbons of candied carrots add a touch of whimsy to this stunning carrot layer cake. The secret to the 'spring' in their step is an everyday kitchen utensil: a wooden spoon! While the carrot strips are still warm from being candied in the oven, wrap them around the spoon handle to create perky spiralized toppers for cakes and cupcakes.

3 large orange or yellow carrots (or a combination), peeled
3/4 cup granulated sugar

Steps:

  • Peel carrots into thin strips. In a saucepan, bring sugar and 3/4 cup water to a boil, stirring until sugar dissolves. Stir in carrots; reduce heat to medium-low and simmer until very soft, about 20 minutes. Let cool in syrup 10 minutes. Drain.
  • Preheat oven to 225°F. Arrange strips in a single layer on a wire rack set inside a rimmed baking sheet. Bake until tacky but no longer wet, 30 to 40 minutes.
  • Working quickly, spiral carrots around the handle of a wooden spoon (or your finger), and sprinkle with sugar to coat. (If strips harden before you curl them, bake for a few minutes to re-soften.) Let stand on a wire rack until crisp and dry, about 1 hour.

Carrot Curls Stuffed with Saga Blue, Celery, and Walnuts image

Yield Makes about 18 hors d'oeuvres

Number Of Ingredients 4

two 8- to 9-inch carrots
1/4 cup softened Saga Blue cheese
1/2 cup finely chopped celery
1/4 cup walnuts, toasted until pale golden, cooled completely, and chopped fine

Steps:

  • Halve carrots lengthwise and, using a vegetable peeler along flat side of each half, cut about 18 long wide ribbons. Beginning with the wider end, wind each ribbon around your thumb, securing ends with wooden picks. Chill carrot curls in a bowl of ice and cold water 1 hour.
  • In a small bowl cream together Saga Blue, celery, and walnuts and drop level teaspoons onto a plate. Chill filling, covered, 45 minutes.
  • Drain carrot curls. Working with 1 carrot curl at a time, remove wooden pick and pat dry. Beginning with the wider end, wrap each carrot curl around a tablespoon of filling and resecure ends with wooden picks.
