CARROT SALAD WITH CUMIN AND CORIANDER
These lemony carrots taste lovely just as the recipe is written, perfumed with toasted cumin and coriander, a hint of garlic, and a touch of cayenne. This recipe draws its inspiration from Moroccan carrot salads, many of which use cooked vegetables, but this version uses slivered raw carrots instead. But if you want to splash out, try a pinch of cinnamon, and top with lots of fluffy chopped cilantro and thinly sliced jalapeño. Or add crumbled feta and olives. For the best-looking salad, use the julienne blade of a food processor, or cut the carrots into thin matchstick shapes with a sharp knife. The large holes of a box grater will work, too, but the result won't be quite as attractive. (But avoid those supermarket bags of pre-grated carrots. They're not suitable here.)

- Put carrots in a medium bowl. Add olive oil, lemon juice, garlic, cumin, coriander and cayenne. Add salt and pepper to taste. Toss to coat. Taste, and adjust seasoning. Leave to marinate for 10 to 15 minutes. Transfer to a serving dish.
- To serve, sprinkle with preserved lemon, if you like, and garnish with mint leaves.

- Bring a pot of water to a boil, and add carrots and 1 teaspoon salt. Boil until almost tender, about 15 minutes. Meanwhile, set aside a bowl of ice water. Transfer cooked carrots to the ice bath and chill.
- Drain carrots, and cut into disks about 1/4-inch thick. Transfer to a bowl and add olive oil. Sprinkle with cumin, caraway, and coriander. Add harissa or hot sauce, and mix gently. Season with lemon juice and salt to taste. Serve at room temperature.

- Combine carrots, 1/2 cup water, garlic, coriander seeds and crushed red pepper in heavy medium saucepan. Bring to boil. Reduce heat to medium; cover and cook until carrots are crisp-tender, about 7 minutes. Uncover; cook until water evaporates, about 1 minute. Transfer carrot mixture to medium bowl; cool slightly.
- Meanwhile, stir cumin in heavy small skillet over low heat until fragrant, about 1 minute. Remove from heat. Stir in lemon juice and oil. Pour over carrot mixture; toss to blend. Cool completely.
- Mix onion and cilantro into carrot mixture. Season to taste with salt and pepper. Sprinkle olives over salad and serve. (Can be made 2 hours ahead. Let stand at room temperature.)
WARM CARROT SALAD WITH TOASTED CUMIN DRESSING

- Put the cumin seeds in a dry frying pan set over a lowish heat. Cook for a few minutes, tossing in the pan, until they smell fragrant and have darkened slightly. Grind them in a spice or coffee grinder.
- Put the carrots in a saucepan and cover with cold water. Add a few pinches of salt, then bring to the boil. Turn the heat to low and cook very gently for 3-4 minutes. Drain.
- Whisk the oil, lemon juice and sugar, then stir in the garlic and 1⁄4 tsp salt. Stir in the cumin and paprika. Mix well with the carrots, then leave to cool, stirring occasionally. Toss in the coriander and lemon zest. Serve at room temperature.

ROASTED CARROT AND BEET SALAD WITH FETA, PULLED PARSLEY, AND CUMIN VINAIGRETTE

- Preheat the oven to 450°F. Bring a large pot of water to a vigorous boil, add 1/2 teaspoon of the salt, then add the carrots. Blanch for 1 minute and remove to a bowl of ice water to stop the cooking. Once cool, remove and set aside. Place the beets in a large pot of cold water. Bring to a boil, add the remaining 1/2 teaspoon of salt, and simmer until the beets are tender. Strain the beets and peel them using paper towels to rub off the skin. This is easier when they are still warm. Crumble the feta and set aside. Toss the carrots with 1/2 tablespoon of the olive oil and place them on half of a rimmed baking sheet. Toss the beets with the remaining olive oil and place on the other half of the baking sheet. Roast for 15 minutes. Remove the beets and carrots from the oven and place in separate bowls. Add 1 tablespoon of the vinaigrette and 1/2 cup of the parsley to the beets and toss. Add 1 tablespoon of the vinaigrette, the remaining parsley, and the feta to the carrots and toss. Divide the carrots evenly among 6 plates. Then divide the beets evenly among the plates and gently mix with the carrots. Drizzle with a touch more of the vinaigrette. Cumin vinaigrette: 1 teaspoon Dijon mustard $ 1/2 cup extra-virgin olive oil $ 1 teaspoon freshly squeezed lemon juice $ 2 teaspoons sherry vinegar 1 teaspoon cumin seeds, toasted in a dry pan and then pulverized 1 tablespoon finely chopped fresh mint Salt and freshly ground black pepper to taste $ Preparation Place the Dijon mustard in a bowl and whisk in the olive oil, then the lemon juice and the sherry vinegar. Add the cumin and the mint. Season with salt and pepper to taste. The vinaigrette will last for 10 days in the fridge.

- Soak skewers in cold water for half and hour.
- Add lamb, onion, garlic, chilli and parsley to a bowl. Season with salt and pepper. Mix with hands until all is combined.
- Divide into 8 portions and mould into sausage shapes around skewers. Chill for minimum of 30 minutes or overnight.
- For the minted yogurt, mix yogurt with mint. Season to taste with salt and pepper, and set aside.
- For carrot and cumin salad, peel and shred the carrot and turnip in a food processor. Toss into a bowl with oil, cumin and lemon juice.
- Brush koftas well with oil and lightly oil a griddle or frying pan. Fry koftas in batches over medium heat in a preheated pan about 5 minutes until browned all over and cooked through.
- Layer tomato slices, then salad then koftas onto 4 plates. Serve yogurt along side.

- Preheat the oven to 375°F.
- Have an ice bath (a bowl of ice water) ready. Using a vegetable peeler, peel ribbons of carrots from half of the carrots. Place in the ice water to chill (the ribbons will curl after a while in the water).
- Place the remaining whole carrots on a baking sheet; drizzle with some olive oil and season with salt and pepper. Roast until the edges start to caramelize, 15 to 20 minutes. Remove from the oven and set aside at room temperature. Lower the oven temperature to 350°F.
- Toast the pine nuts in the oven for about 10 minutes or in a small pan on the stove top over medium-low heat, shaking constantly, until brown and fragrant; pour into a bowl to cool and set aside. Toast the cumin seeds in a small sauté pan over medium heat, tossing or stirring constantly until fragrant, and then pour quickly into a mortar and pestle or spice grinder and grind into a powder. Alternatively, use ground cumin.
- For the dressing, in a medium bowl, whisk the cumin with the lemon and lime juices, salt, and pepper; slowly whisk in the 1/4 cup olive oil.
- Remove the carrot ribbons from the ice water and pat dry with paper towels. Peel, pit, and slice the avocado.
- Divide the avocado slices and roasted carrots among 4 salad plates. In a bowl, toss the carrot ribbons and greens in the dressing, and divide among the plates.
- Sprinkle a few pine nuts on each salad and serve.
GRILLED CHICKEN AND CHICK-PEA SALAD WITH CARROT-CUMIN DRESSING

- Prepare grill
- In a saucepan boil carrot juice until reduced to about 3/4 cup, about 10 minutes, and cool. In a bowl, whisk together carrot juice, lemon juice, oil, and cumin and season dressing with salt and pepper. Dressing may be made 1 day ahead and chilled, covered.
- Cut romaine and spinach crosswise into 1/4-inch-wide strips and, using side of a grater with largest holes, grate carrots. Cut tomatoes into 1/4-inch dice. Rinse chick-peas and slip off skins. Vegetables may be prepared up to this point 4 hours ahead and chilled separately, covered.
- Pat chicken dry and season with salt and pepper. Grill chicken on a lightly oiled rack set 5 to 6 inches over glowing coals 7 minutes on each side, or until cooked through. (Alternatively, grill chicken in a hot lightly oiled well-seasoned ridged grill pan over moderately high heat.) Let chicken stand 2 minutes and slice. In a large bowl toss chicken with vegetables.
- Just before serving, toss salad with dressing.

- Put carrots and garlic cloves in saucepan and cover with water. Bring to a boil and leave to boil, uncovered, 10 mins or until carrots are tender. Drain and rinse under cold water. Cool. Discard garlic. In a serving bowl, combine remaining ingredients and mix well. Add carrots. Toss. Taste and adjust seasoning as necessary. Serve at room temp.
SUZANNE GOIN'S ROASTED CARROT SALAD WITH CUMIN

- What to do: 1. Preheat oven to 450 degrees. 2. Cut carrots in half length-wise and toss with 4 tablespoons of olive oil, thyme, ½ teaspoon of salt and freshly ground pepper. 3. Warm a heavy-duty baking sheet in the oven for 3-4 minutes. Arrange the oiled carrots on baking sheet and roast about 15 minutes, or until carrots are crisp-tender and slightly caramelized. 4. While carrots roast, toast the cumin seeds in a small pan over medium heat for 2 to 3 minutes, or until fragrant. Using a mortar and pestle or coffee grinder, pulverize half the seeds to a fine powder. 5. In a small bowl, mix cumin powder with cumin seeds, ¼ teaspoon of salt and red wine vinegar. Whisk in ¼ cup of olive oil. 6. Place cooked carrots in a large bowl with 2-3 tablespoons of cumin vinaigrette. Let the carrots marinate for 5 minutes. 7. Add the shallots and the olives to the bowl with the carrots and toss well. 8. Add arugula and season with a squeeze of lemon, salt and pepper. Gently toss to coat the greens. Taste for balance and seasoning. 9. Arrange salad on plates or a platter. Tuck the cheese in and around the leaves and carrots. Spoon extra dressing over top.
ROASTED CARROT SALAD WITH CUMIN RAISIN VINAIGRETTE RECIPE - (4.7/5)

- Make the vinaigrette and soak the raisins and shallot in the mixture while your carrots are roasting. This will plump up the raisins, and mellow out the shallots. Slice your carrots into 1/4 to 1/2-inch planks, horizontally. Lay them on a baking sheet and drizzle with olive oil and kosher salt. Roast at 425°F for about 15 minutes, turning over the carrots to caramelize both sides. They burn easily, so keep an eye on them. Plate the arugula and add the roasted carrots to the top of the greens. Spoon the dressing over the salad and season with some black pepper. Serve immediately and enjoy!
