For babies and toddlers. I tried them and they are pretty bland for my tastes but my little kids ate them up so good for them! If making them for older kids definitely add some salt and pepper and seasonings.

Number Of Ingredients 7

1 lb ground chicken
1/4 cup grated sweet apple
1/4 cup grated carrot
2 tablespoons quick oats
2 eggs
1 cup fine breadcrumbs
1/2 teaspoon kosher salt, for sprinkling

Steps:

  • Blend all ingredients except eggs and bread crumbs. The result should be a wet meat mixture that holds its shape if formed into tablespoon sized balls. Add more oats if mixture is too wet to hold. If for some reason mixture is too dry add some water or apple sauce.
  • Working with a tbsp at a time, form small balls.
  • Dip into egg then coat in bread crumbs. Pat ball into small patty about 1/2 inch thick. Coat all sides in fine bread crumbs, then place on a greased cookie sheet. Continue with all of the meat mixture. Sprinkle nuggets with kosher salt.
  • Bake nuggets for 30 minutes at 400ºF or until done (nuggets do not brown very much).
  • Put leftover nuggets into a freezer bag and freeze, when needed remove from bag and heat in a 425ºF oven for about 10 minutes or until heated through.

1/2 cup plain breadcrumbs
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon thyme leaves
1/8 teaspoon crushed red pepper flakes, or more to taste
2 lbs boneless chicken breasts (cut into 1-inch pieces)

Steps:

  • In a large bowl, combine the onion recipe soup mix, bread crumbs, chili powder, cumin, thyme, and pepper.
  • Dip the cubed chicken in bread crumb mixture, coating well.
  • In a large skillet, heat 1/2-inch oil over medium temperature and saute chicken, turning once, until done; drain on paper towels.
  • Serve warm and, if desired, with assorted mustards and other condiments (blue cheese dip or buttermilk dressing are good).

1 lb boneless chicken, cut up into bite-sized pieces (breast, strips, etc.)
2 tablespoons olive oil
4 cloves minced garlic
1 cup seasoned bread crumbs
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper (optional)

Steps:

  • Marinate chicken, garlic, oil and black pepper for 30 minutes.
  • Combine bread crumbs and cayenne pepper.
  • Coat chicken pieces.
  • Place on jelly roll pan sprayed with non-stick spray.
  • Bake in 475º oven for 15 minutes or until chicken is thoroughly cooked.
  • Serve with BBQ sauce or your favorite dipping sauce.

1 pound ground chicken, preferably organic
1.25 cups onion, peeled and diced
1 cups apple, preferably organic, peeled and grated
1 teaspoon dried sage
1 teaspoon dried rosemary
1 teaspoon dried parsley
2 cups frozen spinach, preferably organic
1 cup dried bread crumbs, homemade or store-bought, or panko crumbs work as well
2 cups canola or grapeseed oil for frying

Steps:

  • 1) Combine first seven ingredients in a bowl. Mix together with your hands or spoon. Shape into small patties. 2) Put bread crumbs in a shallow dish and press the pieces into the coating 3) Heat enough oil for shallow frying in a large frying pan. Add nuggets and cook about six minutes, three minutes per side, turning occasionally, until light golden and cooked through. Dry on a paper towel or rag and cool. Serve with a side of vegetables and fruit, and your favorite dipping sauce! TO BAKE (instead of pan fry): Bake at 425 for about 15-20 minutes until firm to the touch. Freezing Directions: Put 4-5 nuggets into pint size freezer bags for individual servings and freeze. To Serve: Microwave for about 1-2 minutes, may be a little mushy. You can defrost in the fridge, and heat them up in the oven, stove top or toaster oven until crispy again.
