Curried Lentils and Rice image

This recipe is designed for use with a rice cooker but should be easily converted if you don't have one. I don't remember where I originally got this.

Time 40m

Yield 6 serving(s)

Number Of Ingredients 15

1/2 cup plain yogurt
1/4 cup chopped of fresh mint or 1/4 cup fresh parsley
3/4 cup basmati rice
1/4 cup olive oil
1 cup chopped onion
1 tablespoon curry powder
1 tablespoon minced ginger
1/2 teaspoon ground cumin
1/2 cup brown lentils
2 1/2 cups vegetable stock or 2 1/2 cups reduced-sodium chicken broth
1/2 teaspoon kosher salt
1 cup diced seeded tomatoes
1/4 teaspoon red chili pepper flakes
3 tablespoons lemon juice
2 cups packed chopped fresh spinach

Steps:

  • Mix mint and yogurt and refrigerate.
  • Wash rice in warm water until the water runs clear.
  • Add olive oil, onion, curry, ginger and cumin to the rice cooker. Cook 4-5 minutes, stirring, to soften the onions.
  • Add lentils and stir to coat. Add the broth, cover and cook for 15 minutes.
  • Add remaining ingredients, except spinach, and continue to cook until rice cooker swithches to "warm" function.
  • Carefully lift cover, then quickly stir in the spinach and re-cover. Allow to stand for 10 minutes. The rice should have an attractive, light brown crusting on the bottom.
  • Serve with a dollop of the chilled, minted yogurt.

CURRIED RED LENTIL DAHL

Curried Red Lentil Dahl image

When I first posted this recipe, I hadn't made it, I had posted it for a tag game, but encouraged by the positive reviews it has received, I made it this weekend, and took it as a gift for my friend, who loves hot curries and dahls. Its a little hot for my personal taste, but she loved it! Easy and quick to make, it comes from the Very Easy Vegetarian Cookbook, by Simon & Alison Holst

Number Of Ingredients 14

1 tablespoon olive oil
1 large onion, diced
1 teaspoon garlic, minced
1 large bay leaf
1 teaspoon chili powder
2 teaspoons curry powder
2 teaspoons turmeric
2 teaspoons mustard seeds
2 teaspoons cumin seeds
1 cup split red lentils
2 cups water
2 teaspoons vegetable stock powder
salt
1 -2 tablespoon chopped coriander, leaf

Steps:

  • Heat the oil in a large pan.
  • Cook onion and garlic, stirring frequently, until the onion has softened and is turning clear.
  • Add bay leaf and spices and cook, stirring continuously, for 1 to 2 minutes longer.
  • Tip in the lentils and the stock (made with the water and the stock powder), bring the mixture to the boil, then reduce the heat to a gentle simmer. Cover the pan with a lid whilst simmering, so that the liquid does not evaporate too quickly.

  • Stir in the coriander and serve.
  • Suggested accompaniments, steamed rice, naan bread, poppadoms.
