These brownies feature neither sugar nor chocolate, rather they are sweetened with honey and use carob powder and brewed tea to give flavor.

- Preheat an oven to 350 degrees F (175 degrees C). Mix the spelt flour, carob powder, salt, and baking powder together in a large bowl.
- Stir the honey, brewed tea, cream, vegetable oil, and eggs together in a separate bowl. Add the honey mixture into the flour mixture, and stir to thoroughly combine; pour into an 8x11-inch baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out gummy rather than wet, about 45 minutes. Allow to cool before refrigerating overnight for best results.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
- Place chia seeds in a blender; grind into a meal. Mix in 1/2 cup plus 1 tablespoon water; let stand until thickened, about 5 minutes. Add agave nectar, sucanat, olive oil, and vanilla extract; blend until combined.
- Mix walnuts, carob powder, brown rice flour, almond flour, baking powder, and salt together in a bowl. Pour in chia seed mixture; mix until batter is smooth.
- Spread batter in the greased baking dish. Wet hands and pat down evenly.
- Bake in the preheated oven until a toothpick inserted the center comes out clean, 40 to 45 minutes.

HONEY AND CAROB BROWNIES
This recipe is delicious. I love it because it uses carob instead of chocolate. Carob is similiar to cocoa, except it requires about half the sugar to get it to be sweet like chocolate. - Preheat oven to 350 degrees. In a large bowl combine dry ingredients. IN a blender combine remaining ingredients or mix well by hand. When blended, the yield will be approximately 2 ½ cups. Add blended ingredients to dry ingredients and mix well.

- Preheat the oven to 190degrees (fan) Mix together the carob powder, flour, sugar and baking powder in a large bowl. In a separate bowl, mix the water, milk, eggs, oil and mashed bananas. Pour the wet into the dry ingredients with the vanilla extract and mix thoroughly.
- Now add the chopped walnuts if using them. You could also add dark chocolate chips if you wish. At this point, if the mixture is too thick, add a little extra milk until it is looks thick but stir-able.
- Transfer the mix to a greased, non-stick brownies tray (could use baking parchment but I didn't seem to need it).
- Cook in the preheated oven for around 20-30 minutes - the brownies will feel firm to the touch, not wobbly like normal brownies.
CAROB BROWNIES

- 1. Preheat the oven to 350°F. Prepare the cashew milk as directed below and set aside. In a medium bowl whisk the next 7 ingredients together until well combined. Add the cashew milk and stir. Mix in the flour and baking powder. Scrape the batter into an oiled 8x8-inch baking pan. 2. In a small bowl mix together the brown sugar, flour, baking powder, and egg replacer. Rub in the safflower oil and maple syrup with your fingertips. Crumble this topping evenly over the batter. Bake for 25-30 minutes, or until the edges begin to pull away from the pan. Cool before slicing into 16 squares. Makes 16 pieces *Cashew milk: Blend 2 Tbsp. raw cashew pieces with 3/4 cup hot water until smooth. Strain through a fine strainer.
