½ green bell pepper, seeded and chopped
½ small white onion, chopped
3 cloves garlic, crushed
¼ teaspoon ground cumin
¼ teaspoon salt, divided
⅛ cup olive oil
1 tablespoon olive oil
2 tablespoons achiote powder
1 teaspoon ground cumin
2 (8 ounce) cans tomato sauce
2 pounds beef stew meat, cut into 1 inch cubes
2 white potatoes
1 cup white wine
4 cups water
6 cubes beef bouillon

Steps:

  • In a blender, combine green pepper, onion, garlic, 1/4 teaspoon cumin and salt. Pulse, while pouring 1/8 cup olive oil through top of blender. Blend until smooth; set aside.
  • Heat 1 tablespoon olive oil in pressure cooker on medium heat. Saute green pepper mixture for 1 minute, then stir in achiote powder and 1 teaspoon cumin. Cook for 1 minute, then stir in tomato sauce. Return to a simmer, then add beef; let simmer for 5 minutes. Stir in potatoes, then pour in wine and water. Drop in the bouillon cubes. Bring to a boil, and cook for 1 minute; add water, if necessary, to cover.
  • Cover with lid of pressure cooker. Following manufacturer's directions, cook under 15 pound pressure for about 30 to 45 minutes.

1/4 cup olive oil
1 large white onion, cut into 1/2-inch cubes
1 tablespoon minced garlic
1 chopped green pepper
1 cup chopped canned tomatoes
1 tablespoon paprika
1 tablespoon dry oregano
1 tablespoon dry cilantro
2 1/2 pounds beef top round, cut into 1-inch cubes
1 cup dry Sherry
4 large peeled potatoes, cut into 1-inch cubes
Salt and white pepper
White rice, as an accompaniment

Steps:

  • In a heavy skillet, heat oil and saute onions for 5 minutes. Add garlic, peppers, tomatoes, spices, and meat and saute for 5 more minutes. Add Sherry and simmer, uncovered, 5 minutes. Add potatoes and enough water to cover meat and potatoes. Let simmer until the potatoes are tender, about 25 minutes. Season with salt and pepper. Can be served with white rice.

Adapted from Adán Medrano, a Houston-based chef and writer, this steak-and-potato guisada, or stew, uses technique and time to draw out flavor from just a handful of ingredients. Beef and potatoes are centuries-old pantry essentials in South Texas, and this dish is served in homes and family-run restaurants all over the region. While many restaurants tend to cook the steak in large pieces, cutting the meat into small cubes allows the beef to soak up more flavor. The key is the Texas Mexican spice blend - black peppercorns, cumin and garlic - plus a little fresh Serrano. Serve with tortillas and an optional garnish of cilantro and chile.

2 large garlic cloves, peeled and minced
1 Serrano chile, minced, plus additional sliced Serrano for garnish (optional)
15 whole black peppercorns
1/4 teaspoon cumin seeds
2 tablespoons canola oil
1 1/2 pounds bottom round steak or beef chuck, fat trimmed and meat cut into 1/2-inch cubes
1 large white onion, halved and sliced 1/4-inch thick
1 1/2 teaspoons all-purpose flour
Kosher salt
2 medium waxy potatoes, cut into 1/2-inch cubes
Warmed corn or flour tortillas, for serving
Fresh cilantro leaves, for garnish (optional)

Steps:

  • Use a mortar and pestle to mash the garlic, minced chile, peppercorns and cumin seeds into a smooth paste. Add 1/4 cup water and mash until the paste is incorporated into the water. Transfer the mixture to a measuring cup. (Alternately, blend the garlic, minced chile, peppercorns and cumin seeds in a blender with about 1/4 cup water, occasionally scraping down the sides of the blender until very well blended, about 5 minutes.)
  • Heat 1 tablespoon oil in a Dutch oven or large pot over medium. Add half the steak and cook, stirring occasionally, until browned on all sides, about 8 minutes. Transfer the browned meat to a plate and repeat with the remaining oil and meat. Return the browned meat to the Dutch oven then add the onion and cook, stirring occasionally, until translucent, about 3 minutes.
  • Sprinkle the flour and 1 teaspoon salt over the beef and stir to incorporate, then add the blended garlicky liquid and just enough water to barely cover the meat (about 2 cups). Increase the heat to medium-high and use a wooden spoon to scrape the bottom of the Dutch oven, releasing any browned bits.
  • Bring the liquid to a boil, then immediately lower the heat so that it cooks at a low simmer. Cover the pot and cook until the meat is tender, 1 1/2 to 2 hours.
  • Remove the lid and stir in the cubed potatoes. Let the guisada cook, stirring occasionally, until the potatoes are tender and the sauce has thickened slightly, about 15 minutes. Season to taste with salt. Divide among bowls and serve with hot tortillas, plus cilantro and sliced chile, if using.

2 lb beef stew meat or veal stew meat in cut in chunks
1 medium onion diced
1 large green pepper diced
4 clove garlic mashed or put through a garlic press
1/4 c white table wine
1 small can tomato sauce
4 medium red or gold potatoes peeled and quartered
12 large stuffed green olives with pimentos
2 large bay leaves
1/2 tsp garlic powder
1/2 tsp cumin powder
1/2 tsp oregano, dried
1 1/2 tsp salt
1/2 tsp ground black pepper
1/3 c yellow or black raisins optional
1 Tbsp capers optional
2 Tbsp diced fresh parsley
1/2 c water
1 small packet goya sazon seasoning packet with culantro and achiote
3 small whole tomatos from the can mashed down real good optional
1 Tbsp balsamic vinegar
1/4 c olive oil

Steps:

  • 1. Season chunks of beef or veal meat with salt and pepper and garlic powder.
  • 2. Heat olive oil in the a heavy pot that has a tight fitting lid. Saute your meat in the oil for about 5 minutes.
  • 3. Add onions, green peppers, mashed garlic, and parsley continue to saute until onions and pepper are limp.
  • 4. Next add wine, raisins, bay leaves, olives and tomato sauce. Stir well continue to cook for about 5 more minutes over a medium flame.
  • 5. Next reduce heat or flame to low add the water, the mashed tomatos, capers, seasonings, cumin, oregano, pepper, more salt,and packet of Goya Seasoning. cover with the lid on a low flame let meat cook for 1 hour or more until meat is almost fork tender.
  • 6. When the meat is almost tender add your potatoes, balsamic vinegar, a little more water perhaps another half cup; adjust the seasonings salt and pepper. Cover again and slow cook until potatos are fork tender.
  • 7. You may have to add a little more water in a few increments until potatoes are done. Each time you check to see if potatoes are done you check to make sure sauce has not dried up. You add a little more water, mix and spoon sauce over everything almost as if basting every 20 minutes or so until potatoes are cooked through. Serve with white rice and a salad and some crusty Cuban bread if Cuban bread is not available use Italian, or French bread. Enjoy delicious Carne con Papas!

2 lbs potatoes
8 ounces tomato sauce
1 1/2 teaspoons salt

Steps:

  • Cut round steak into cubes and brown in shortening in heavy skillet or Dutch oven.
  • Peel and cube potatoes (approximately in 1/2-inch cubes).
  • Once meat is slight browned add potatoes and continue to brown. (Don't worry if it sticks to the bottom of the skillet.
  • Add tomato sauce, salt, pepper, cumin powder and garlic.
  • Add Approcimately ONE cup of water and simmer until meat and potatoes are tender.
  • Potatoes will thicken sauce.

4 Tbsp olive oil, extra virgin
2 c onion, chopped
2 c green bell pepper, chopped
6 clove garlic, mashed
2 lb lean stewing beef
small amount of white flour for dredging meat
2 tsp ground cumin
2 tsp dried oregano
1 tsp salt
1/2 tsp ground black pepper
1 c red cooking wine
15 oz tomato sauce
3 Tbsp white wine vinegar
1/4 c spanish olives (pimiento stuffed)
2 bay leaves
1 1/2 to 2 c water or beef stock
4 to 5 potatoes, peeled & cut into large chunks
salt and pepper, to taste

Steps:

  • 1. Heat oil over medium heat in a large sauté pan. Add onion and green pepper; cook and stir until transparent. Add garlic and sauté for an additional minute.
  • 2. Lightly salt and pepper the meat cubes and dredge in flour. Add the meat to the pan and brown on all sides. Add the cumin, oregano, salt and pepper and cook for 3 minutes. Add wine, tomato sauce, vinegar, olives and bay leaves. Add just enough water or beef stock to cover the meat. Bring to a boil, reduce heat to low, cover and simmer until fork-tender, about 1-2 hours. Add more water if the stew becomes too thick.
  • 3. Add potatoes and cook, covered, until potatoes are tender. Season with salt and pepper to taste. Serve hot with rice.

Add the garlic and cook 2 min. more. 3. Add the tomato sauce, water, wine, salt, sugar, paprika, and bay leaf. Reduce the heat and simmer, covered, for 45 minutes. 4. Stir in the potatoes and Spanish olives + capers (optional). Add more water if necessary to keep the stew from drying up. Cover and simmer 30 minutes more, until the meat is tender and the potatoes are cooked. *tends to come out watery. best to reduce water, increase tomato sauce. try with 1 lb. of meat, 2 potatoes, corn, 2 carrots/squash/sweet potato

  • Heat olive oil in large skillet.

2 lbs stew meat, cut into 1 inch cubes
1 large onion, chopped
1 large italian green pepper, chopped
2 -3 pepperoncini peppers, chopped

This wonderful stew has endless variations. Sometimes I add fresh or canned corn. You will notice that the recipe calls for a comparatively small amount of chili powder and cumin; however, keep in mind that this is not chili. You want the allow the flavor of your good beef to prevail and your jalapeos to sing.

2 pounds beef round steaks cut into bite-size pieces
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon adobo seasoning (optional, but nice if you have it)
1 large onion chopped
4 cloves minced or press garlic
3 large baked potatoes peeled and cubed
8 ounces tomato sauce
3 cups beef broth
1/2 cup red wine
1/2 cup water
2 fresh, seeded and finely chopped jalapeno chiles
1 teaspoon chili powder
1/2 teaspoon ground cumin

Steps:

  • Over medium-high heat, brown steak pieces in the oil in a heavy skillet or Dutch oven. (Really brown the meat -- not just let it turn gray). Add the onion and garlic and cook, stirring frequently, until onion is transparent. Add the potatoes, tomato sauce, salt, pepper, adobo, stock, wine and water, and bring to a boil. Reduce heat to low and simmer, uncovered, for one hour. Stir in the jalapeos, chili powder and cumin, and continue simmering, uncovered, for 1 hour until beef is tender. 2 jalapeno chiles
4 roma tomatoes
1 small white onion, stem end untrimmed and cut into quarters
2 cloves garlic
1/8 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
1 tablespoon freshly squeezed lime juice
1/2 teaspoon sugar
8 cloves garlic, crushed or minced to a paste
1/4 teaspoon ground cumin
1/4 teaspoon pure red chili powder
1/4 teaspoon salt
4 (10 ounce) top sirloin steaks
8 new potatoes
3 tablespoons light olive oil
1 tablespoon finely sliced fresh chives

Steps:

  • TO PREPARE SALSA: Place the chiles and tomatoes under the broiler and, turning them often, blacken the skins.
  • Stem and seed the chiles, coarsely chop them together with the tomatoes, and transfer to a mixing bowl.
  • Heat a saute pan or skillet over medium-high heat.
  • Add the onions to the pan and dry-roast for 10 minutes, turning often.
  • Add the garlic and dry-roast for 10 minutes longer.
  • Remove the onion and garlic from the pan, let cool, and then coarsely chop.
  • Add to the mixing bowl together with the cumin, cilantro, lime juice, sugar, and salt, and mix together.
  • Set aside at room temperature.
  • (If not using within 1 hour, refrigerate and bring to room temperature before using.) TO PREPARE MARINADE: Thoroughly combine all the ingredients in a mixing bowl.
  • Rub the mixture on both sides of the steaks and let sit at room temperature for 30 minutes.
  • TO PREPARE PAPAS: Place the potatoes in a saucepan and cover with water.
  • Bring to a boil and cook for 10 minutes.
  • Drain and transfer the potatoes to a bowl of ice water until they are completely cool.
  • Drain the potatoes again, dry thoroughly, and cut into quarters.
  • Place the potatoes in a mixing bowl and toss with the oil, chives, salt, and pepper.
  • Place the potatoes on the hot grill and cook for about 10 minutes, or until light brown and crisp.
  • Keep warm.
  • TO PREPARE STEAKS: Preheat the broiler.
  • Grill the steaks for about 5 minutes per side for medium-rare or about 6 minutes per side for medium; the marinade will give the exterior of the steaks a little crispness.
  • TO SERVE: Place the steaks in the center of each warm serving plate and spoon the salsa next to the steaks.

4 Tbsp vegetable oil
1 small green bell pepper, diced
1 medium onion, diced
3 clove garlic, minced
1/2 to 1 Tbsp paprika (or to taste)
1 tsp ground cumin
2 lb beef (stew meat), cubed
1 cup tomato sauce
1/2 cup white wine
1 1/2 cup beef broth (or water
2 lb potatoes, peeled and cut into bite-size chunks
2 Tbsp capers, rinsed and drained
salt, to taste
black pepper, to taste

Steps:

  • 1. Heat oil in a large skillet over medium heat. Add bell pepper and onion, and sauté for 5 minutes. Then add the garlic, paprika and cumin. Cook for another 3 minutes.

Fideo con Carne and Papas is a traditional Mexican comfort dish that is economical, filling and goes a long way.

Number Of Ingredients 14

1 Tbsp Olive oil
5 oz bag Fideo
10 oz Ground beef
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp ground cumin
1/2 tsp smoked paprika
1/3 c onion, diced
1 chicken bouillon cube
3 c water
14.5 oz can tomatoes, diced
1 large Russet potato, diced

Steps:

  • Over medium heat, add olive oil to a large sauté pan. Add fideo and cook, stirring frequently until browned. Remove noodles and set aside on a paper towel lined plate. Add beef to sauté pan. Season with spices and cook until browned. Add onions and cook for 3 minutes until onions are becoming soft. Add diced potatoes, tomatoes, water and bouillon cute. Cook over medium heat for 15 minutes. Add fideo noodles to pan, stir and add additional water if needed. Cover and cook for 10 minutes until noodles are cooked.
