Filled Croissant Sandwich image

This is a hot sandwich based on Carole Handslip's recipe from her book, Step-by-Step 50 Great Sandwiches. I make these for either breakfast, brunch, or lunch.

Number Of Ingredients 7

2 croissants
4 tablespoons butter (original recipe calls for a "knob of butter")
2 eggs
salt and pepper
1 tablespoon heavy cream
2 ounces smoked salmon, chopped
1 sprig fresh dill, to garnish

Steps:

  • Preheat oven to 350°F.
  • Slice the croissants in half horizontally and warm in the oven for 5-6 minutes.
  • Over low heat, melt the butter in a small pan.
  • Beat the eggs in a bowl adding salt and pepper to taste.
  • Transfer the eggs to the pan and cook for 2 minutes, stirring constantly.
  • Remove from the heat and stir in the cream and smoked salmon.
  • Spoon the smoked salmon mixture into the warmed croissants and garnish.

Carmen's Easy Cheesy Breakfast Croissant Sandwich image

Quick breakfast sandwich. Croissants are calorie ridden to begin with so I don't add any extra spread since warming it in the oven brings the butter out and the cheese keeps it moist. Croissant will toast quickly so watch closely.

Number Of Ingredients 6

1 cup of scrambled egg white
1 -2 tablespoon 2% low-fat milk
1 slice , kraft cheese 2% singles
2 slices deli turkey
1 butter croissant
1 dash salt & pepper

Steps:

  • Set the oven to broil.
  • Lightly pan fry turkey in a skillet sprayed with Pam and set aside.
  • Whisk egg whites with 2% milk, salt and pepper and scramble in same skillet as turkey.
  • Cut croissant in half with a serrated knife.
  • Break cheese slice in half and layer on one side of croissant and then place in oven.
  • Watch closely and remove when cheese is melted.
  • Layer turkey on top of cheese followed by eggs, top with other half of croissant.
