PULLED BEEF: PABELLON CRIOLLO

7 tablespoons extra-virgin olive oil
2 carrots, chopped
2 stalks celery, chopped
2 onions, chopped
1 (1 1/2 pound) flank steak
1 bay leaf
2 red bell peppers, chopped
4 cloves garlic, chopped
1 (28-ounce can) whole tomatoes, drained and hand-crushed
Kosher salt and freshly ground black pepper
Black Beans, recipe follows
Cooked white rice, as an accompaniment
Cilantro leaves, for garnish
4 tablespoons extra-virgin olive oil
1 ham hock, about 1 pound
1 medium onion, diced
2 cloves garlic, minced
1 bay leaf
2 cups (about 1 pound) dried black beans, picked over and rinsed
6 cups water
Kosher salt and freshly ground black pepper

Steps:

  • In a large casserole (that has a tight fitting lid) heat 3 tablespoons oil over medium-high heat. Add the carrots, celery, and 1 onion and fry for a few minutes until softened; remove the vegetables to a plate. Season the meat with salt and pepper; add 2 tablespoons more oil to the pan, if needed, and brown the meat on both sides, about 5 minutes. Return the softened vegetables to the pan along with the bay leaf. Add enough water to just about cover the meat and bring to a boil. Lower heat, cover, and simmer gently until meat is very tender, 1 1/2 to 2 hours. Remove meat from the pot and set aside; strain the liquid and reserve.
  • Add another 2 tablespoons oil to the pan and put in the peppers, garlic, tomatoes, and the remaining onion; fry on medium-low heat until everything is soft and broken down, about 15 minutes. Shred the meat and add to the pan to heat through. Add some of the reserved braising liquid if the mixture becomes too dry. Serve with Black Beans and cooked white rice, garnish with cilantro leaves.
  • In a 6-quart pressure cooker over medium-high heat, pour in 3 tablespoons oil. Add the ham hock and onions and cook until the onions are wilted and the ham hock is lightly browned, about 5 minutes. Throw in the garlic and bay leaf and cook for 1 minute more. Add the beans and give a good stir. Pour in the water; add the remaining tablespoon of oil, 1 tablespoon of salt, and a couple of grindings of pepper. Following the manufacturer's instructions, cover, lock the lid, and bring to high pressure. Lower heat to maintain pressure and start timing. Cook at high pressure for 25 minutes. Remove from heat and let rest for 5 minutes. Release the steam, again following the manufacturer's directions. If the beans are underdone, simmer them with the lid off until tender. Remove bay leaf and discard. Pick meat from ham hock and add to beans; discard the bone. Taste and adjust seasoning.

5 pounds boneless goat meat, cut into 1-inch cubes
1/2 cup lime juice
1/2 cup white vinegar
1/2 cup chicken bouillon powder
Sofrito (see recipe below)
1/2 cup vegetable oil
1 cup tomato paste
Two 1.4-ounces packets sazon
1/2 cup Djon Djon Haitian black mushroom (see Cook's Note)
1/2 cup vegetable oil
Epis (see recipe below)
2 cups peas
3 cups jasmine rice
1/2 cup vegetable bouillon powder
Half scotch bonnet pepper
3 cups water
10 sprigs of culantro or 1 bunch of cilantro
6 garlic cloves
1 bell pepper, seeded and stemmed
1 yellow onion, roughly chopped
3 cups water
10 sprigs of culantro or 1 bunch of cilantro

1 yellow onion, roughly chopped

Steps:

  • For the goat: Toss the goat in a large mixing bowl with the lime juice and white vinegar then rinse the meat to remove the juice and vinegar. Toss the goat with the chicken bouillon powder and half the Sofrito (see recipe below), cover and refrigerate overnight.
  • The next day, heat the oil in a slow cooker insert over medium-high (see Cook's Note), add the goat and sear, turning as needed, until browned, about 10 minutes. Add 6 cups of water, the tomato paste, sazon, and the remaining sofrito. Set the slow cooker to low and cook until the goat is fork tender, about 1 hour.
  • For the Haitian Djon Djon: Soak the Djon Djon mushroom in 6 cups of water for 20 minutes. Strain, reserving the water and set aside.
  • Heat the oil in a large saucepan over medium-high heat, add all the Epis (about 3 cups; see recipe below) and fry, stirring for 5 minutes. Add the reserved Djon Djon water and green peas and bring to a rolling boil. Lower to medium heat, add the rice, vegetable bouillon and scotch bonnet and cook for 20 minutes. Cover the pot, turn the heat down to low. Cook until the rice is tender and the liquid has been absorbed, about 10 minutes more.
  • Serve the goat with the rice.
  • Blend the water, culantro, garlic, bell pepper and onion until smooth. Refrigerate for up to 3 days.
