1 (14 ounce) can unsweetened coconut milk
1 cup chicken stock
1 onion, grated
3 tablespoons butter
1 (10 ounce) package frozen spinach, start with 1/2 this
1/2 lb crabmeat, i used louis kemp
1 cup light cream

Steps:

  • saute onions in butter until translucent.
  • add chicken stock spinach crab meat and milks.
  • cook on simmer 10 minutes.

2 tablespoons flour
2 tablespoons butter
2 (10 ounce) cans chicken broth
1 (10 ounce) can water
1 small onion
1 (300 g) package frozen spinach
1 (7 ounce) can crabmeat
white pepper
2 ounces heavy cream

Steps:

  • Blend flour and butter in saucepan to make roux. Cook for a few minutes using a wire whisk.
  • Add chicken broth and 1 can water slowly, whisking all the time.
  • Defrost spinach and lightly saute with onion until tender.
  • Add to soup mixture.
  • Add crab, pepper, and finish with cream.
  • Refrigerate 3 days to allow flavors to ripen.

A mouthwatering puree of Taro Leaves and crab served over rice or as a soup, it will leave you wanting more. If taro leaves are not available, you may substitute 2 packages of frozen spinach.

18 taro leaves
12 pods okra, finely chopped
1 large onion, chopped
4 sprigs fresh thyme
6 cloves garlic, crushed
4 ounces salted pig's tail
½ cup peeled, cubed pumpkin
1 cup water
1 habanero pepper
3 cups coconut milk
4 blue crabs, cleaned and chopped
salt to taste
4 green onions, chopped

Steps:

  • Clean the taro leaves by removing the skin from the stalks, and removing the tip from the center rib. Rinse, and cut into bite size pieces.
  • Place the taro leaves, okra, onion, thyme, garlic, salted pig's tail, pumpkin, water, habanero pepper (whole), and coconut milk into a large pot. Cover, and simmer over low heat for 30 minutes.
  • Add the crab to the pot. Be careful not to puncture the habanero pepper. Cover, and continue to simmer for 30 minutes. Remove the habanero, and season with salt to taste. Puree the soup using an immersion blender until smooth. You could also puree in small batches using a blender. Serve over rice.

1 tablespoon margarine or 1 tablespoon butter
1 large onion, minced
1 clove garlic, minced
2 cups spinach, finely chopped
3 cups chicken broth
1/2 cup skim milk
1/8 teaspoon coconut extract
1/8 teaspoon white pepper
4 ounces imitation crabmeat
3 ounces ham, cut into thin strips
1/8 teaspoon hot pepper sauce (optional)

Steps:

  • In a large saucepan, melt the butter over medium low heat.
  • Reduce heat to low and add the onion and garlic.
  • Cook, covered, for 3-4 minutes stirring occasionally.
  • Add the spinach and cook, uncovered for 2 minutes.
  • Add the broth, milk, coconut extract, white pepper and reduce heat and simmer, uncovered, for 3-4 minutes.
  • Add the crabmeat and ham and the hot pepper sauce if using.
  • Cook for 2-3 minutes or until meat is warmed through.
  • Serve warm.
