1 tablespoon garlic powder
4 teaspoons crushed dry thyme leaves
2 teaspoons salt
2 teaspoons ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 tablespoon sugar
2 teaspoons black pepper
1 teaspoon cayenne pepper

Steps:

  • In jar with tight fitting lid, shake together all spices and seasonings. Store tightly covered at room temperature.

6 green onions, chopped fine
3 scotch bonnet peppers, seeded and chopped
2 garlic cloves, chopped
2 tablespoons white wine vinegar
1 tablespoon brown sugar
3/4 tablespoon fresh ground allspice
1 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Seed the peppers, peel the garlic.
  • Add everything to a blender or processor and blend well.
  • Store in a covered container.
  • Use for basting on pork or beef.

1 1/2 teaspoons ground allspice
1 1/2 teaspoons dried thyme
1 1/2 teaspoons smoked paprika
1 teaspoon garlic powder
2 1/2 teaspoon sugar
3/4 teaspoon salt
1 teaspoon cayenne pepper
1/4 teaspoon grated nutmeg
1/4 teaspoon ground cinnamon

Steps:

  • Mix all the ingredients. Season 1 1/2 pounds of ground beef mixed with 1/2 pound ground pork. Add 1/2 lime juice. Form burger patties and grill to taste. Serve the burgers with avocados and tomotoes.

Strictly Caribbean green seasoning - a unique blend of herbs and spices that is blended together and is used in many cuisines, soup and stews.

Number Of Ingredients 10

1 bunch of cilantro (or culantro/chadon beni if you can get it)
1/2 bunch of parsley
4 scallions (chives, chopped)
1 head of garlic (peeled)
1 bunch of thyme (about 8 sprigs)
1 stalk of celery
2 pimento peppers
pinch of himalayan pink salt
1 small onion (sliced)
1/2 red bell pepper

Steps:

  • Transfer all of the ingredients into a colander and rinse thoroughly
  • Place all of the ingredients into either a blender or food processor (if using food processor blitz on high speed until the bulk of the herbs have broken down into a course texture, remembering to pulse and scrape the sides.
  • If using a blender blitz until a puree is formed, feel free to add a tbsp or two of olive oil to help things move along quickly.
  • store in container in a cool place
