2 broiler chickens, halved
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup dark brown sugar
4 tablespoons dark rum, divided
1 tablespoon lime juice
2 teaspoons lemon pepper
1 teaspoon ginger
1/2 teaspoon clove, ground
1/4 teaspoon cinnamon
1/4 teaspoon garlic powder
2 drops hot pepper sauce
10 ounces chutney, mango
1 lemon, sliced for garnish
1 lime, sliced for garnish
parsley, chopped for garnish

Steps:

  • Sprinkle salt and pepper over washed and dried chicken. Set aside.
  • In a small bowl, make Caribbean paste by mixing together sugar, 2 tablespoons of the rum, lime juice, lemon pepper, ginger, cloves, cinnamon, garlic powder, and hot pepper sauce; set aside.
  • Place the chicken, skin side up, in a large shallow baking pan. Rub Caribbean paste evenly over the chicken.
  • Bake in a 400°F oven for 45 minutes or until the chicken is fork tender.
  • In a blender, place chutney and remaining 2 tablespoons of rum,process to blend.
  • Spoon chutney mixture over chicken and bake about 3 minutes more or until chutney is warm.
  • Arrange chicken on a serving platter. Garnish with lime, lemon, and parsley.

Jamaican Jerk Chicken -

This is one of our all-time favorite recipes! I saved it from a newsgroup or forum posting years ago, but was recently told it was from the cookbook, "The Sugar Reef Carribean Cookbook," by Devra Dedeaux.

1 tablespoon ground allspice
1 tablespoon dried thyme
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons freshly ground black pepper
1 1/2 teaspoons ground sage
3/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
2 tablespoons garlic powder or fresh
1 tablespoon sugar
1/4 cup olive oil
1/4 cup soy sauce
3/4 cup white vinegar
1/2 cup orange juice
juice of 1 lime
1 scotch bonnet pepper (habanero)
3 green onions -- finely chopped
1 cup onion -- finely chopped
4 to 6 chicken breasts

Steps:

  • Seed and finely chop Scotch Bonnet pepper. Trim chicken of fat. In a large bowl, combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. With a wire whisk, slowly add the olive oil, say sauce, vinegar, orange juice, and lime juice.
  • Add the Scotch Bonnet pepper, onion, and mix well. Add the chicken breasts, cover and marinate for at least 1 hour, longer if possible.
  • Preheat an outdoor grill.
  • Remove the breasts from the marinade and grill for 6 minutes on each side or until fully cooked. While grilling, baste with the marinade. Bring the leftover marinade to a boil and serve on the side for dipping.

1 teaspoons ginger
0.5 teaspoons ground clove
0.5 teaspoons cinnamon
0.5 teaspoons garlic powder
2 drops pepper sauce
4 units chicken breasts
10 ounces mango chutney
1 units for
1 slices lemon
1 units parsley
1 units mango

Steps:

  • Mix paste by mixing sugar, half the rum, lime juice, lemon pepper, ginger, clove, cinnamon, garlic powder, and hot pepper sauce. Set aside.
  • Place chicken pieces in shallow baking pan, rub paste evenly over chicken. Bake 400°F for 20 min. or until fork tender.
  • Mix chutney with remaining rum and spoon over chicken and bake another 3 min until warm. Garnish with lime and lemon slices, parsley and fresh mango and pineapple. Serve with rice and black beans.
