12 to 16 plump figs
2 tablespoons unsalted butter
Tiny pinch of salt
2 tablespoons honey, such as lavender honey
Pinch of ground cinnamon

Steps:

  • Preheat the oven to 425°F. Rinse the figs and pat them dry, then cut off the stems and, without cutting through the base, halve them from top to bottom. Set the figs upright in a dish just big enough to hold them snugly.
  • Melt the butter in a small skillet with the salt, honey, and cinnamon, then spoon it over the figs.
  • Bake until the sauce is bubbling and the fruit is heated through, about 15 minutes. Serve warm.

Caramelized Figs With Honey, Thyme and Crème Fraîche image

3 tablespoons mild honey
6 plump figs, trimmed and halved
1 1/2 tablespoons unsalted butter
4 fresh thyme sprigs, plus extra leaves for garnish
4 tablespoons crème fraîche

Steps:

  • Spoon the honey over the cut sides of the figs. Heat a large, heavy skillet over a medium-high flame. Add the butter - it should sizzle briskly when it hits the pan. Throw in the thyme sprigs, followed by the figs, cut sides down. Leave undisturbed for 3 to 5 minutes to caramelize, then turn the figs over and cook for another minute.
  • Transfer the figs to a plate. Return the skillet to the heat and add about 5 tablespoons water. Simmer, scraping the caramelized honey with a spoon. Pour this sauce over the figs and serve warm with generous spoonfuls of crème fraîche and a few extra thyme leaves.

1 small shallot, finely diced
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
Salt and pepper
1 teaspoon Dijon mustard
4 ripe figs, peeled and mashed
3 tablespoons olive oil

Steps:

  • Put shallot in a small bowl. Cover with vinegars and season with salt and pepper. Macerate for 5 minutes.
  • Stir in mustard and mashed figs and mix well. Whisk in olive oil.
