GRILLED PORTOBELLO, BLUE CHEESE AND CARAMELIZED ONION HOAGIE

1/4 cup extra-virgin olive oil
1 tablespoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
Juice of 1/2 lemon
4 portobello mushrooms, sliced 1/4 inch thick
2 tablespoons olive oil
2 yellow onions, halved and thinly sliced
Kosher salt and freshly ground black pepper
Blue Cheese Spread:
4 ounces blue cheese, crumbled
1/3 cup mayonnaise
4 hoagie rolls (I like Martin's), split
1 cup arugula
Balsamic vinegar, for drizzling
Kosher salt

Steps:

  • For the mushrooms: In a large bowl or a ziptop bag, whisk the olive oil, Worcestershire sauce, salt, pepper, garlic powder and lemon juice. Add the mushrooms and toss to combine. Marinate for 30 minutes to 1 hour.
  • For the onions: While the mushrooms marinate, make the onions. In a large skillet over medium high, heat the olive oil. Add the onions and saute until beginning to get tender, about 5 minutes. Season with salt and pepper. Reduce the heat to low. Cook, stirring occasionally, until the onions become a deep brown caramelized color, about 20 minutes. If they start to look dry or stick to the pan, add a tablespoon or 2 of water.
  • For the blue cheese spread: In a small bowl, mix the blue cheese and mayonnaise.
  • Heat a grill pan over medium-high heat.
  • Remove the mushrooms from the marinade and transfer to the grill pan. Cook until slightly wilted, browned and showing grill marks, 2 to 3 minutes per side.
  • For the sandwiches: Put the hoagie rolls on the grill pan until lightly toasted. Spread one side of each roll with the blue cheese spread. Top with some mushrooms, caramelized onions and arugula. Drizzle lightly with balsamic vinegar and a sprinkle of salt.

3 tablespoons unsalted butter, at room temperature
1 small yellow onion, thinly sliced
1 teaspoon fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1 tablespoon plus 1 teaspoon Dijon mustard
1/4 cup shredded sharp Cheddar
1/4 cup shredded Gruyere cheese
1/4 cup diced Robiola cheese
1 tablespoon prosecco
2 teaspoons fresh parsley, chopped
1 clove garlic, minced
Four 1-inch-thick slices brioche

Steps:

  • Heat 1 tablespoon butter in a medium skillet over medium heat. Add the onions and sprinkle with the thyme, 1/2 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until the onions are browned and tender, about 20 minutes. Turn off the heat and stir in 1 tablespoon of the Dijon mustard and 1 tablespoon water to coat the onions. Transfer to a bowl and set aside.
  • Heat a griddle over medium heat.
  • Buzz the Cheddar, Gruyere, Robiola, prosecco, parsley, garlic and remaining 1 teaspoon Dijon mustard in a food processor until combined but still chunky and spreadable. Evenly spread the cheese mixture over one side of each slice of bread. Top 2 slices with the onion mixture and then sandwich the onions with the other 2 slices, cheese-side in. Spread the remaining butter on the outside of each sandwich and season with salt and pepper. Griddle the sandwiches over medium heat until golden brown on the first side, about 5 minutes. Flip and continue to cook until the cheese is melted and the exteriors are crispy, about 5 minutes more.

1/4 teaspoon sugar
salt, pinch
4 teaspoons spicy brown mustard
3 teaspoons horseradish
2 teaspoons honey
8 slices light whole wheat bread
12 slices light ham
4 slices gruyere cheese
4 cups mixed greens (optional)

Steps:

  • Coat a medium-size nonstick skillet with nonstick cooking spray and place over medium heat.
  • Add onion, sugar and salt to skillet; cover.
  • Cook for 10 minutes, stirring occasionally, or until lightly browned; remove from heat.
  • Stir together mustard, horseradish and honey; set aside.
  • Spread 4 slices of bread evenly with mustard mixture, then layer 3 slices ham over each piece of bread.
  • Place about 2 T onions on top of the ham, then place 1 slice cheese on top of the onions.
  • Place 4 remaining bread slices over cheese.
  • Spritz both sides of sandwich with nonstick cooking spray and cook in nonstick skillet over medium heat for 5-8 minutes or until cheese has melted, turning halfway through.

1 tablespoon unsalted butter
1 tablespoon olive oil
1 large onion, halved and thinly sliced (sweet)
salt & freshly ground black pepper, to taste
1 plum tomatoes, halved and seeded or 2 sun-dried tomatoes packed in oil, drained and patted dry
1 tablespoon canola oil (if roasting tomato)
salt & freshly ground black pepper, to taste
1/2 cup mayonnaise
2 garlic cloves, chopped
1 1/2 tablespoons white wine vinegar
2 teaspoons fresh thyme leaves or 1/2 teaspoon dried thyme
6 slices good quality white bread, cut into 1/4-inch thick slices (Pullman loaf)
1 1/2 cups grated gouda cheese
8 slices prosciutto, sliced about 1/8-inch thick
8 tablespoons unsalted butter, at room temperature or 8 tablespoons olive oil

Steps:

  • For Caramelized Onions:.
  • Heat the butter and oil in a medium sauté pan over medium heat. Add the onions and cook, stirring occasionally, until golden brown and caramelized. Season with salt and pepper.
  • For Roasted Tomato Mayonnaise:.
  • Easiest to use sun dried tomatoes, but if you don't have it, preheat the oven to 375 degrees F. Place the fresh tomato in a small dish or baking sheet, drizzle with oil and season with salt and pepper. Roast until the tomato is very soft and golden brown, about 20 minutes. Remove from the oven and let cool slightly.
  • Put the mayonnaise, vinegar, sun dried tomato or roasted tomato, garlic and thyme in a food processor and process until smooth, season with salt and pepper. Scrape into a bowl.
  • For Sandwich:.
  • Place 4 slices of the bread on a flat surface, divide half of the cheese among the slices. Top the cheese with 2 slices of prosciutto then top the prosciutto with some of the caramelized onions and the remaining cheese.
  • Place the 4 remaining slices of bread on top to make four sandwiches. Butter the top of the bread using half of the butter.
  • Preheat a cast iron pan or cast iron griddle over medium heat. Place the sandwiches in the pan, butter-side down (may need to do in batches) and cook until lightly golden brown.
  • Spread the remaining butter on the bread facing up, then flip and continue cooking until the bottom is golden brown and the cheese has melted.
  • Serve with dollop of roasted tomato mayonnaise on the top and on the side if you prefer.

8 slice light whole-wheat bread
12 slice (about 6 ounces) light ham
4 slice (about 4 ounces) low-fat swiss cheese

2 slices country bread
1/2 cup caramelized onions or shallots
3 KRAFT Extra Thin Swiss Cheese Slices
1 Tbsp. unsalted butter

Steps:

  • MELT ½ of the butter over medium heat in a skillet that is large enough to fit the bread. Assemble the sandwich by layering the caramelized onions, followed by the cheese (slightly overlapping), and topping it with the second slice of bread.
  • PLACE the sandwich in the melted butter and place a clean, heavy object on top of it to press the bread down. Allow the sandwich to toast on one side on medium-low heat for about five minutes, or until the bread is golden brown.
  • FLIP the sandwich and add the rest of the butter to the pan. At this point you probably won't need to put the heavy object on top. But, if the sandwich is not compact enough go ahead and do so. Toast until the bread is golden brown, about five more minutes, serve.

8 slices ciabatta, italian or 8 slices challah
4 slices cheddar cheese
4 slices monterey jack pepper cheese or 4 slices other spicy cheese
1 large red onion, thinly sliced
3 tablespoons softened butter, divided
2 -4 tablespoons barbecue sauce

Steps:

  • Melt 1 tbsp of butter in a skillet over medium heat. Add the sliced red onion and stir occasionally until color changes to slightly brown and taste is sweet, about 10-15 minutes. Remove onions from skillet and set aside.
  • Spread 1 tablespoon of the remaining butter onto one side of each slice of bread.
  • Divide barbecue sauce evenly among 4 of the slices and spread evenly opposite the butter side. Lay cheddar cheese on top of sauce. Divide caramelized onion among the sandwiches, then top with pepper jack. Finish assembly by placing remaining bread slices on top. 2 large sweet onions, thinly sliced

1/4 cup butter, softened
1 cup caramelized onions
8 slices sourdough bread
1 cup A.1. Original Sauce
1 lb. good quality roast beef
1 pkg. (8 oz.) CRACKER BARREL Extra Sharp Cheddar Cheese (shredded to make 2 cups)

Steps:

  • Butter outside of bread slices, spread inside of each slice of bread with 2 tbsp A1 Sauce. Top one slice with ¼ lb of the roast beef, followed by 4 tbsp caramelized onions, and then finally ½ cup of shredded cheddar cheese. Top with other slice of bread, and repeat to make four sandwiches.
  • Spray a large skillet with cooking spray and heat over medium heat. Carefully place one sandwich (or two if you can fit them) in the hot skillet, brown on one side (about 60 seconds), flip, press slightly, and brown on other side (another 30-60 seconds). Repeat with rest of sandwiches. Cut on diagonal. Dig in!
