Cardamom Apple Crisp with Caramel Cream image

Here's great tasting apple and oats crisp flavored with cardamom and cinnamon. Serve this delicious baked dessert with caramel cream.

4 medium tart baking apples, peeled, sliced (4 cups)
1/3 cup plus 2/3 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 to 3/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/3 cup cold butter or margarine
1/4 cup chopped pecans, if desired
1 cup heavy whipping cream
1/4 cup caramel topping

Steps:

  • Heat oven to 375°F. Grease bottom and sides of 8-inch square baking dish with shortening or cooking spray.
  • In medium bowl, toss apples with 1/3 cup of the brown sugar. Spread apples in dish. In another bowl, stir remaining 2/3 cup brown sugar, the flour, oats, cardamom and cinnamon until well mixed. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in pecans. Sprinkle over apples.
  • Bake 30 to 40 minutes or until topping is golden brown and apples are tender when pierced with fork. Cool 45 minutes before serving.
  • In chilled large deep bowl, beat whipping cream and caramel topping with electric mixer on high speed until stiff peaks form. Serve caramel cream with warm crisp. Drizzle with additional caramel topping, if desired.

1 cup heavy whipping cream
2 tablespoons unsalted pistachios, finely chopped
1/4 lb unsalted butter
4 medium tart apples
1/4 teaspoon ground cardamom
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
2/3 cup sugar
3 tablespoons blanched slivered almonds
2 tablespoons chopped walnuts

Steps:

  • Whip the cream lightly in a bowl till it just holds its shape, but is not stiff at all.
  • Fold half of the pistachio nuts into the cream, cover and refrigerate.
  • Melt the butter over low heat in a large nonstick skillet. Take the pan off the heat.
  • Peel, core and slice the apples thinly, dropping the slices into the butter as you cut them.
  • Fold them into the butter as you go so that they do not discolor. (If you like, you could keep the pan over very low heat as you do this.).
  • Add the cardamom, cinnamon, cloves, sugar, almonds and walnuts.
  • Cook on medium heat for 2-3 minutes, stirring gently as you do so.
  • Turn the heat to high; cook for 8-10 minutes, stirring very gently now and then, till apples have caramelized lightly.
  • Serve on individual plates with a dollop of cream partially on, partially off the apples.
  • Sprinkle remaining pistachios over the cream.

1 1/2 cups apple cider
3 sprigs fresh rosemary
1/4 cup granulated sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon coarse salt
3 Granny Smith apples, peeled, cored, and cut into 12 wedges each
Vegetable-oil cooking spray
1 cup plain nonfat yogurt, preferably Greek (optional)

Steps:

  • Preheat oven to 450, with rack in top position. Bring cider and rosemary to a boil. Remove from heat, and let stand for 5 minutes. Discard rosemary.
  • Combine sugar, cinnamon, and salt in a large bowl. Add apples, and toss. Coat a nonstick rimmed baking sheet with cooking spray. Arrange apples in a single layer on sheet. Bake for 9 minutes, then flip each slice, and bake for 5 minutes more. Pull out baking sheet on oven rack, and carefully pour infused cider over apples. Return sheet and rack to oven, and bake until apples are soft and glossy, about 5 minutes.
  • Broil apples with oven door slightly ajar, rotating sheet halfway through, until edges are golden, about 2 minutes. Divide apples and juices among bowls. Serve with yogurt, if desired.

5 spicy-sweet crisp apples (Jonagold, Crispin, Honeycrisp)

Steps:

  • Melt the butter in a large skillet over medium heat.

This is a rich and delightful caramel, but just a little different thanks to the pistachios. The combination sounds a little different, but believe me, it is a marriage made in heaven. My grandmother used to make these and they never lasted very long......so good!

2 cups firmly packed light brown sugar
1 cup light corn syrup
2 cups warm whipping cream, divided
1/4 teaspoon salt
1 cup shelled pistachios
2 teaspoons vanilla

Steps:

  • Line an 8" square pan with foil, extending foil over side of pan; heavily butter foil.
  • In a 4 quart heavy saucepan, combine brown sugar, corn syrup, 1 cup warm whipping cream and salt.
  • Stirring constantly, cook over medium heat until sugar dissolves.
  • Using a pastry brush dipped in hot water, wash down any sugar crystals on sides of saucepan.
  • Attach a candy thermometer to pan, making sure thermometer does not touch bottom of pan.
  • Cook, without stirring, 12- 15 minutes or until mixture reaches 232 degrees.
  • Stirring gently, slowly add the other 1 cup warm whipping cream.
  • Bring mixture to a boil.
  • Cook 15 minutes longer, or until mixture reaches 248 degrees.
  • Remove from heat, add pistachios and vanilla.
  • Immediately pour into pan.
  • Cool at room temperature for several hours.
  • Lift caramel from pan, using ends of foil; discard foil.
  • Cut into 1 inch squares.
  • Store in a cool place.
