1 package (8oz) uncooked campanelle or rotini pasta
3 boneless skinless chicken breasts (1 lb)
1 tablespoon olive oil
1 medium onion, finely chopped (3/4 cup)
3 cups fresh broccoli florets
2 ripe mangoes, seed removed, peeled, and cut up
1 red bell pepper, chopped
1 medium zucchini, quartered lengthwise, then cut crosswise into slices (1 cup)
1 bottle (8 oz) Italian dressing
1/2 teaspoon salt

Steps:

  • Heat gas or charcoal grill. Cook pasta as directed on package; drain. Rinse with cold water to cool; drain well.
  • Meanwhile, place chicken on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning once or twice until juice of chicken is clear when center of thickest part is cut (170°F). Cool slightly. Cut into 3/4-inch cubes.
  • In 8-inch nonstick skillet, heat oil over medium-high heat. Stir in onion; cook uncovered 5 minutes, stirring occasionally.
  • Reduce heat to medium-low. Cook 10 to 15 minutes longer, stirring every 5 minutes, until onion is deep golden brown (onion will shrink during cooking). Cool slightly.
  • In large bowl, combine pasta, chicken, caramelized onion and remaining ingredients; toss gently to coat. Cover; refrigerate 30 minutes to blend flavors.

1 large red onion, halved lengthwise, cut into thin wedges
2 cups 1/2-inch pieces peeled seeded butternut squash
3/4 cup canned low-salt chicken broth
1 pound roast chicken breast halves, torn into bite-size pieces
8 ounces penne pasta
1 bunch broccoli rabe, thick stems discarded, cut into 1-inch pieces

Steps:

  • Heat oil in large nonstick skillet over medium-low heat. Add onion and squash; cook until onion is golden and squash is tender, stirring occasionally, about 25 minutes. Add broth; bring to boil. Add chicken and cook until heated through, about 5 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until pasta is almost tender, about 6 minutes. Add broccoli rabe; boil until broccoli rabe and pasta are just tender, stirring occasionally, about 2 minutes longer. Drain. Return pasta mixture to same pot. Stir in chicken mixture. Season to taste with salt and pepper.

1 bunch broccoli rabe, trimmed
2 tablespoons olive oil, plus more for drizzling
1 medium onion, chopped
1 teaspoon sugar
2 tablespoons red-wine vinegar
1/2 pound spicy sausage, casings removed

6 tablespoons unsalted butter
1/2 cup loosely packed flat-leaf parsley leaves
1/4 cup grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil to a boil; add broccoli rabe and cook until stems are tender, about 2 minutes. Meanwhile, prepare an ice-water bath. Drain broccoli rabe and transfer to ice-water bath. Drain and set aside.
  • Bring another large pot of salted water to a boil. Meanwhile, in a large skillet, heat olive oil over medium-low heat. Add onions and cook, stirring occasionally until caramelized, about 10 minutes. Add sugar and red wine vinegar; cook until vinegar is completely evaporated, 1 to 2 minutes more.
  • Add sausage to skillet, along with onions, using a wooden spoon to help break sausage up into small pieces. Cook, stirring, until sausage is no longer pink, about 10 minutes. Stir in reserved broccoli rabe and 1/2 cup water; keep warm until ready to serve.
  • Heat a large skillet over medium heat. Add butter and cook until melted; continue cooking until butter becomes lightly browned and fragrant, taking care not to let it burn, 2 to 3 minutes. Reduce heat to low and stir in parsley.
  • Meanwhile, add gnocchi to boiling water. When gnocchi begins to float to the top, let cook 2 minutes more. Using a slotted spoon, transfer gnocchi to skillet with brown butter; toss to coat and season with salt and pepper.
  • Divide gnocchi evenly among four serving bowls; top with sausage mixture and sprinkle with Parmesan cheese. Drizzle with olive oil and serve.

The broccoli is slowly caramelized to bring out its sweetness, then enlivened with a squeeze of lemon, a pinch of crushed red pepper and some toasted cashews :) .Update: 11/07/2008 it has been suggested by a few who have reviewed the recipe that they would increase the amount of garlic, so maybe it would make for a nice change!! ;)

  • Heat a large skillet over medium high heat and add the oil.

1 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons grapeseed oil
3/4 cup grapeseed oil, divided
1/2 cup pine nuts
1 teaspoon Sichuan peppercorns
2 shallots, diced
1 3-inch piece of ginger, peeled and diced
Zest of one orange
1/2 cup Champagne vinegar
kosher salt
Freshly ground black pepper
1/4 cup black sesame seeds
1/2 bunch scallions, chopped

Steps:

  • For the broccoli: Preheat oven to 375 F. Prepare the broccoli by cutting away and discarding the bottom of the stalk, then slicing lengthwise into "steak" pieces. Cut the pieces in half, then lengthwise again. Place in a large bowl and toss with salt, pepper, and grapeseed oil. Place on a rimmed baking sheet and roast in the oven, 15 minutes.
  • For the vinaigrette: In a small skillet, heat 1/2 tsp grapeseed oil and toast the pine nuts until lightly brown and aromatic, about 4 minutes. Remove from heat and add the peppercorns. Toss and set aside. In a food processor, blend the remaining grapeseed oil, shallots, ginger, and orange zest. While the motor is running, add the vinegar in a steady stream to combine; then taste to adjust the seasonings with salt and pepper. Scrape mixture into a bowl, and stir in sesame seeds, pine nuts, peppercorns, and scallions. Vinaigrette will be chunky.
  • Remove the caramelized broccoli from the oven to a mixing bowl and add the vinaigrette. Toss to coat and serve.

Of all the dishes in this book, this was probably the favorite when we were testing recipes. Everyone we tried it on loved it. Although it takes a little time to caramelize the onions, it's easy (they pretty much just sit in the pan and cook themselves), and you will not believe how sweet and delicious they end up.

2 onions
2 tablespoons vegetable oil
1 bunch broccoli
1 pound uncooked salad macaroni or other small pasta
1/4 cup sliced almonds
1 tablespoon balsamic vinegar
Salt and pepper

Steps:

  • Peel the onions and cut into thin slices. Place the oil and onion in a large skillet and cook over medium heat for 20 to 25 minutes, or until the onions are golden brown. Remove from the heat and set aside.
  • While the onions are cooking, cut the florets from the broccoli and discard the stems. Bring a large pot of salted water to a boil and add the pasta. Cook over medium-high heat, stirring occasionally, for 8 minutes, or until al dente. After the pasta has been cooking for 4 minutes, add the broccoli florets to the pasta water for the remainder of the cooking time. Drain the pasta and broccoli in the colander.
  • Add the drained pasta and broccoli, almonds, and balsamic vinegar to the pan of onions and mix well. Season with salt and pepper and serve immediately.
  • Balsamic vinegar is made from grapes that have been cooked down to a syrup and then aged. The aging time-anywhere between three and 150 years-is what determines the price. The three-year-old stuff works fine for a college budget (and frankly, we may never in our lives be able to afford the oldest balsamic-it goes for hundreds of dollars an ounce). Cheap but decent balsamic vinegar is nice to have in your pantry-it makes very nice salad dressing when mixed with oil and salt and pepper. Just check the ingredients list to make sure they haven't added caramel or brown sugar to sweeten up an inferior product.

2 3/4 cups water
4 tablespoons peanut oil or melted ghee
6 to 8 green cardamom pods, crushed lightly to break the skin
1 stick cinnamon (1-inch)
6 to 8 whole cloves
3 to 4 small onions, cut in half lenghwise and thinly sliced
2 teaspoons sugar
1 teaspoon salt, or to taste
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
1 small head broccoli, cut into 1/2-inch florets, stems cut into 1/4-inch pieces

Steps:

  • 1. In a medium bowl, soak the rice in the water, about 30 minutes.2. Heat 3 tablespoons oil (or ghee) in a medium nonstick saucepan over medium-high heat and cook the cardamom pods, cinnamon, and cloves, stirring, about 30 seconds. Add the onions and cook, stirring, as needed, until golden, about 5 minutes. Sprinkle the sugar over the onions, reduce the heat to medium-low, and continue to cook until they are dark brown. * Few tablespoons honey
3 * 3 tablespoons apple cider vinegar
2 * 2 cups procuitto
1/2 * 1/2 cup onion
1/2 * 1/2 cup celery
1/4 * 1/4 cup fennel
4 * 4 roma tomatoes
1/2 * 1/2 cup sherry
2 * 2 cups chicken stock
1 * 1 cup veal stock
1 * 1 bunch basil
1 * 1 pound broccoli
1 * 1 pound brussel sprouts
* Grapeseed oil

Steps:

  • For Pork Belly: Season pork belly with salt and pepper. Brush with honey and add apple cider vinegar and wrap tightly in 2 layers of foil to create a bundle. Cook in oven at 215 degrees for 2 hours remove and place in fridge over night- do not unwrap. The next day, open and remove the solid fat- reserve congealed pork liquid. Wrap pork back up and slowly heat in a 215 degree oven. Once hot, open the package and glaze again with honey- then broil until all sides are brown. Rest for 30 mins then slice. For Ham Jus: Slice procuittio into lardons and with butter sauté until deep brown. Add diced onion, celery, fennel and roma tomatoes and cook until all liquid is gone from pot. Add sherry and reduce by half. Add chicken stock and veal stock and bring to a boil- skim off fat. Then simmer and reduce by half. Add basil and cool to room temperature then strain. For Vegetables: Pick broccoli into small florets and pick leaves off brussel spouts. Heat empty pan until very hot then add grapeseed oil and broccoli florets- do not move the pan and cook for 25 seconds then add the brussel sprout leaves, shake the pan and cook for another 1 min. deglaze with ham jus and pull off heat. To plate: Put the vegetables on bottom of plate and top with pork belly slices- spoon ham jus around.
