This simple pie for one makes a great veggie option for Christmas Day - make as many as you need and freeze ahead

¼ a pack puff pastry
flour , for dusting
1 tsp wholegrain mustard
4 tbsp mascarpone
1 tbsp breadcrumbs , fresh or dried
6 sage leaves, chopped, plus a few extra to decorate
1 garlic clove , finely grated to a paste
½ the top end of a butternut squash (about 250g), thinly sliced into rounds
1 egg , beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roughly halve the pastry, but make one half a tiny bit bigger. Roll the slightly smaller half out on a floured surface to a circle about 15cm in diameter. Spread over the mustard, leaving about a 2cm gap around the edge. Mix the mascarpone, breadcrumbs, chopped sage and garlic together and season generously.
  • Arrange a few squash slices, overlapping, to cover the mustard. Spread with some of the mascarpone mixture. Repeat, making slightly smaller circles with the squash each time, and spreading mascarpone between each layer until the top is just one slice of squash and you have made a rough dome shape on the pastry.
  • Thinly roll out remaining pastry. Use to cover the squash dome, gently pressing down on the veg to push out as much air as you can. Press the pastry edges to seal. At this stage, you can cover and chill the pie overnight, or freeze for 1 month. Defrost before continuing. Brush with beaten egg, then poke a tiny steam hole in the top and gently score patterns over the surface. Dip a few sage leaves in the remaining egg and stick on top. Transfer to a baking sheet and bake for 35-40 mins until a skewer poked through the steam hole goes through the veg easily.

Butternut Squash, Caramelized Onion and Spinach Lasagna image

This rich fall lasagna from Kim Quay, the owner of Comfort Food, a catering and prepared food business in Morrisville, Pa., makes an excellent main course for vegetarians and meat-lovers alike.

1 large butternut squash
6 tablespoons olive oil, divided
3 red onions, medium, julienned
1 pound part-skim ricotta cheese
2 tablespoons rosemary, chopped
2 eggs
1 1/2 cups grated Parmesan cheese, divided
3 tablespoons unsalted butter
Scant 1/2 cup all-purpose flour
3 1/2 cups whole milk
Pinch nutmeg
1 bag chopped frozen spinach (1-pound), defrosted and drained
6 sheets fresh pasta, or no-boil lasagna noodles
Salt
Pepper

Steps:

  • Roast the butternut squash. Preheat oven to 375 degrees. Cut squash in half lengthwise; remove seeds. Place in roasting pan and drizzle with 3 tablespoons of olive oil. Place in oven and cook until soft all the way through, about 1 hour. Set aside until cool. When cooled, remove skin and place in food processor. Purée until smooth, season with salt and pepper to taste, and set aside.
  • To caramelize the onions: Place 3 tablespoons of olive oil in sauté pan. Heat until hot but not smoking; add onions. Toss to coat with oil. Turn heat down to medium and cook until onions are soft and browned, about 25 minutes. Season with salt and pepper to taste. Set aside.
  • Prepare a ricotta cheese mixture. Mix ricotta cheese, chopped rosemary, eggs, half the grated Parmesan and salt and pepper to taste. Set aside.
  • Make a spinach Mornay sauce. Melt butter in a saucepan, add flour and stir. Cook 2 minutes. Add milk and stir until it comes to a boil. Add the rest of the grated Parmesan, the nutmeg and the defrosted spinach. Season with salt and pepper. Set aside.
  • Assemble the dish. Spray a 9" x 13" pan with cooking spray. Spread 1 cup of the spinach sauce on the bottom of the pan. Cover with a layer of fresh pasta sheets. Spread half of the roasted butternut squash on top of the pasta sheets. Top with another layer of pasta sheets. Spread ricotta cheese mixture on top of pasta sheets, and spread caramelized onion on top of ricotta mixture. Cover with an additional layer of pasta sheets. Top with the other half of the butternut purée and then another layer of pasta. Finish by using the rest of the spinach Mornay sauce for the top layer. Cover with aluminum foil and bake at 350 degrees for 1 hour. Uncover and cook for 15 minutes more.

This was a delicious creation one night of what happened to be in the fridge. It was so good I made it again the next day and my husband came in and took a huge helping and loved it so much he then came and stole more right out of my bowl!

1 -2 tablespoon butter or 1 -2 tablespoon olive oil
1 large onion
1 yellow squash
1 zucchini
2 cups snap peas (optional)
seasoning (I use celtic sea salt, red and black pepper, and Lawry's)

Steps:

  • Slice onion into medium-sized pieces.
  • Slice squash into rounds.
  • Cut ends off snap peas (if necessary).
  • Melt butter in pan and add vegetables and seasoning.
  • Cook over med-low heat stirring periodically and covering pan in between to soften veggies.
  • Cook until very tender and light to medium brown (squash pieces will begin to fall apart).
  • Serve warm and enjoy!

3 tablespoons olive oil
2 sprigs fresh rosemary
2 medium yellow onions, thinly sliced
1 clove garlic, minced
10 oz frozen spinach, 1 box, thawed and squeezed dry
4 oz cream cheese, room temperature
1 cup sour cream
½ cup mayonnaise
2 teaspoons lemon zest
kosher salt, to taste
freshly ground black pepper, to taste
2 tablespoons lemon juice
pita chip, or toast, or crudités, for serving

Steps:

  • Heat the olive oil in the 2.5-quart saucepan over medium-high heat. Add the rosemary sprigs and fry until fragrant and the leaves are crisp, 1 minute. Using tongs, remove the rosemary and transfer to paper towels to drain. If any leaves are left behind in the oil, remove with a slotted spoon and transfer to the paper towels as well.
  • Return the pan with the oil to medium heat. Add the onions and cook, stirring occasionally, until soft and caramelized, 20-25 minutes.
  • Add the garlic and cook for 1 minute, until fragrant.
  • Stir in the spinach and cook for 2 minutes to evaporate any excess moisture. Add the cream cheese and cook, stirring, until completely melted and incorporated into the onions and spinach.
  • Remove the pan from the heat and stir in the sour cream, mayonnaise, lemon zest, salt, pepper, and lemon juice. Let cool to room temperature or cover with plastic wrap and refrigerate for up to 2 days.
  • Remove the rosemary leaves from the stems over a cutting board. Crush with your fingers or finely chop with a knife.
  • Transfer the dip to a serving dish and smooth the top. Sprinkle with the fried rosemary and serve with pita chips, toasted bread, or crudités.
  • Enjoy!
